40-MINUTE HAMBURGER BUNS
Here on our ranch, I cook for three men who love burgers. These fluffy hamburger buns are just right for their big appetites. The buns are so good that I also serve them plain with a meal. -Jessie McKenney, Twodot, Montana

- In a large bowl, dissolve yeast in warm water. Add oil and sugar; let stand for 5 minutes. Add the egg, salt and enough flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 3-5 minutes. Do not let rise. Divide into 12 pieces; shape each into a ball. Place 3 in. apart on greased baking sheets. Preheat oven to 425°., Cover and let rest for 10 minutes. Bake until golden brown, 8-12 minutes. Remove from pans to wire racks to cool.

SLIDER-STYLE MINI BURGERS
These remind me of my favorite fast food restaurant's little burgers! Perfect appetizer to bring to a party!

- Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray with cooking spray.
- Mix together the ground beef and onion soup mix in a large skillet; cook and stir over medium-high heat until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Remove from heat. Stir the mayonnaise and Cheddar cheese into the ground beef mixture.
- Lay the bottoms of the dinner rolls on the prepared baking sheet. Spread the cheese and beef mixture on the bottom half of each roll. Replace the tops. Cover with another sheet of aluminum foil sprayed with cooking spray.
- Bake in the preheated oven until the burgers are heated through and cheese melts, about 30 minutes. Serve with sliced pickles.

- In a large skillet, saute onion in butter. Transfer to large bowl; add egg and seasonings. Crumble beef over mixture and mix well. Spread over bottom halves of the buns; replace tops. - Step 1:Place the flour and salt into a large bowl, stir in the sugar and the yeast, then rub in the butter.Step 2:Add enough water to form a soft, slightly sticky dough, you may not need it all.Step 3:Knead the dough on a lightly floured surface for up to 10 minutes until smooth and elastic.Step 4:Divide the dough into 20 small pieces and roll each piece into a ball, then place on a baking tray, ensuring you leave space in between.Step 5:Cover with lightly greased cling film and leave in a warm place for 20-30 minutes, until the balls have almost doubled in size. Sprinkle over some sesame seeds.Step 6:Preheat the oven to 230°C (fan 210°C, gas mark 8).Step 7:Bake the dough balls for 10 minutes then reduce the temperature to 200°C (fan 180°C, gas mark 6), for a further 10 minutes or until the dough balls are risen, golden brown and sound hollow when tapped underneath.Step 8:Serve with a mini burger, a slice of cheese and some salad leaves.
MINI BURGERS

- For Paul's burger sauce: In a medium bowl, whisk together all of the sauce ingredients.
- For the burgers: Heat a large cast-iron skillet over medium-high heat until almost smoking. Add about 1 tablespoon of oil and 1 tablespoon of the butter to the skillet. When the butter has melted, working in batches, open the buns and toast them in the skillet until they are golden brown.
- Wipe out the skillet and reheat it over medium-high heat. Season the burger patties with salt and pepper. Working in batches and using more of the oil and butter, place some of the burger patties in the skillet (do not crowd the pan). Cook until the burgers are well seared (about 3 minutes) and flip. Place a slice of cheese on each burger and continue to cook the burgers for 2 minutes longer. Cover the skillet to melt the cheese and steam the burgers. Continue until all the burgers are cooked, adding more oil and butter to the skillet between batches as necessary.
- Spread each side of the buns with about 2 teaspoons of Paul's burger sauce. Season the tomato slices with salt and pepper and place the tomatoes on the bottoms of the buns. Place the cooked burger patties on top of the tomatoes and then top the burgers with shredded lettuce. Secure the tops of the buns on the burgers with frilled toothpicks or small bamboo skewers.
MINI BURGER BUNS RECIPE BY TASTY

- Add the lukewarm water to a 2-cup liquid measuring cup or medium bowl. Add the yeast and sugar and stir to combine. Let sit for 5-10 minutes, until frothy and doubled in volume.
- In a large bowl, whisk together the flour and salt. Add the butter, egg, and the yeast mixture and stir with a rubber spatula into a shaggy dough.
- Turn the dough out onto a clean surface and knead until smooth and soft, about 4 minutes. Place the dough in a clean large bowl lightly greased with nonstick spray and cover with a towel. Let rest until in a warm place until doubled in size, about 1 hour.
- Preheat the oven to 400°F ( 200°C). Line a baking sheet with parchment paper.
- Lightly grease a clean surface and place the dough on top. Pat down with your hands to about ¼-inch thick. Use a ¾-inch (2-cm) round cutter to cut out small circles. Place on the prepared baking sheet.
- Brush the tops of the buns with melted butter, then bake for 7-10 minutes, or until the tops are golden brown.
- Remove the buns from the oven and brush with more melted butter while they are still warm. Let cool for at least 5 minutes before serving.

HOMEMADE SLIDER BUNS
Steps:
- Gather the ingredients.
- Combine the yeast and warm water in a large bowl or the bowl of a stand mixer. Let the mixture stand for about 10 minutes, until foamy.
- In a small bowl, whisk the milk, egg, and melted butter together to blend.
- Add the milk mixture to the yeast mixture along with the sugar, salt, and flour.
- Knead the dough by hand (or using a stand mixer with the dough hook) for 8 to 10 minutes, adding a little more flour if necessary to keep the dough from sticking to your hands, the countertop, or the sides of the bowl. The dough should be smooth and elastic at this point.
- Generously grease a large bowl with butter or oil. Gather the dough into a ball and place it into the greased bowl. Turn it over a few times to coat the dough thoroughly.
- Cover the bowl with plastic wrap and let the dough rise for 1 to 1 1/2 hours, or until it has doubled in bulk.
- Line 2 large baking sheets with parchment paper or lightly grease the pans.
- Punch down and pat the dough into a rectangle.
- Cut the dough into 18 pieces, about 1 1/2 to 1 3/4 ounces each (or smaller).
- Shape the dough pieces into firm balls, flatten slightly with your hand, and place on the prepared baking sheets 2 to 3 inches apart.
- Cover the buns with a lightweight kitchen towel and let them rise in a draft-free spot for about 30 minutes.
- Preheat the oven to 375 F and arrange racks in the lower and upper thirds of the oven. If using the egg wash , whisk the egg white with 1 tablespoon of water until blended.
- Before placing in the oven, brush each roll with the egg wash and sprinkle with sesame seeds or poppy seeds if using.
- Bake for 15 to 18 minutes, or until golden brown.
- If you didn't use the egg wash and seeds, brush with melted butter if desired. Let the buns cool on a rack.
- Split the buns apart and stuff them with sandwich fillings.
- Gather the ingredients.
- In a small bowl, whisk together the water, milk, melted butter, and egg.
- Place the milk mixture along with the flour, sugar, salt, and instant or bread machine yeast in the bread machine in the order suggested by the manufacturer.
- Set to the dough cycle.
- Remove the finished dough to a lightly floured surface. Flatten into a rectangle, cut into pieces, and shape the dough into balls. Place on 2 parchment-lined baking sheets, cover with a kitchen towel, and let rise for 30 minutes.
- Brush with the egg wash and seeds, if using, and bake in a 375 F oven for 15 to 18 minutes.
- If desired, brush with melted butter if the egg wash and seeds weren't used. Let the buns cool on a rack.
- Split the buns in half, add sandwich fillings, and enjoy.

SOFT BURGER BUNS

- Put the milk, butter and 100ml water in a pan and gently heat until the butter is melted. Set aside to cool until just warm.
- Tip the flour, sugar, yeast and 1 tsp salt into a large bowl and gradually work in the milk mixture, then the egg, until you have a smooth dough. Tip the dough onto a floured surface or into a stand mixer fitted with a dough hook and knead until elastic and shiny. Divide into 12 (about 80g each) pieces and roll into tight balls. Transfer to baking trays lined with baking parchment, leaving plenty of space between them, and put in a warm place to prove for 30-45 mins.
- Heat oven to 200C/180C fan/gas 6. Press the rolls down gently using your hands, then brush over some milk and scatter over the sesame seeds, if you like (or, dust with some flour). Bake for 10-12 mins until risen and lightly golden. Leave to cool completely, then serve. Make up to two days ahead and keep in an airtight container.
