CRANBERRY BRIE BITES



Cranberry Brie Bites image

Tangy cranberry, creamy brie, and crunchy walnuts come together in a buttery shell for an appetizer that will wow your guests. Bonus: These can be made up to 3 days ahead; wrap them in plastic wrap before the baking step and store in the refrigerator. Serve warm or at room temperature.

1 (8 ounce) round Brie cheese, rind removed
cooking spray
1 sheet frozen puff pastry, thawed
½ cup cranberry sauce
⅓ cup finely chopped walnuts
sea salt to taste

Steps:

  • Place Brie cheese in the freezer for 20 minutes. Oil a mini muffin pan with cooking spray.
  • Roll 1 puff pastry sheet out into a 10x14-inch rectangle. Cut the sheet lengthwise into 4 even strips and crosswise into 6 even strips; there should be 24 squares. Separate and press them gently into the muffin cups.
  • Cut chilled Brie cheese into 24 pieces approximately 3/4-inch in size. Add 1 teaspoon cranberry sauce to each pastry-lined muffin cup; press in 1 piece of Brie and top with 1 teaspoon of chopped walnuts. Sprinkle bites with sea salt. Chill for at least 30 minutes and up to 3 days.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake bites in the preheated oven until golden brown, 18 to 20 minutes.

Mini Baked Brie en Croute is an elegant but surprisingly simple appetizer made with mini wheels of cheese and frozen puff pastry. It's the ultimate holiday finger food!

1 sheet thawed puff pastry
16 mini Brie rounds
1 egg beaten with 1 Tbsp water for brushing

Steps:

  • set oven to 400F
  • When the pastry has thawed, lay it out on a floured surface. Roll it out gently into a 12x12 square. You can use your hands at the end to get it just right. Cut the sheet into sixteen 3" squares.
  • Lay a Brie round in the center of each square, and bring up the corners to meet in the middle. You can do a little stretching--- it won't tear the dough. Twist the ends together to secure.
  • Set the pastries on a parchment or silicone lined baking sheet and lightly brush with the egg mixture.
  • Bake for about 20-25 minutes until the pastries are golden browned.
  • Serve hot with your favorite jam.

An easy, do-ahead, spectacular, and delicious way to serve filet. Easily expanded to serve however many you need. A nice twist on the standard - without the traditional pate de foie gras. This is a big hit with both my family and my guests. Choose flavorful mushrooms like criminis, portobellos or even porcinis or morels. For the wine, choose something rich you would actually drink - a good Shiraz or Pinotage. Perfect served with asparagus.

1 teaspoon olive oil
2 (6 ounce) beef tenderloin filets
1 tablespoon butter
8 ounces fresh white mushrooms, minced
⅓ cup minced shallot
2 cloves garlic, minced
2 tablespoons red wine
4 6-inch squares of frozen puff pastry, thawed but still cold
1 ½ cups red wine
salt and pepper to taste
1 egg
2 tablespoons milk

Steps:

  • Heat the olive oil in a heavy skillet over high heat until very hot. Sear the filets until well-browned on both sides, 1 to 2 minutes per side. Remove the filets from the skillet, and chill in refrigerator for at least 1 hour. Filets must be cold.
  • In the same skillet over medium heat, melt the butter, and cook and stir the mushrooms, shallot, and garlic until the shallots are tender and translucent and the mushrooms have given off their juice, 6 to 8 minutes. Stir in 2 tablespoons of red wine, scraping and dissolving any browned flavor bits from the pan. Transfer the mushroom mix into a bowl, and chill in refrigerator for about 45 minutes.
  • Place 2 pieces of puff pastry on a work surface, and top each with a chilled filet. Spread half the mushroom mixture in a neat layer on top of of each filet, and top each with a piece of puff pastry. Fold and pinch the edges of the pastry together, sealing in the contents, and trim to make a tidy package. Cut a small slit into the top of each package.
  • Pour 1 1/2 cups of red wine into a saucepan over medium heat, and simmer until the wine is reduce by half, about 15 minutes. Season wine sauce to taste with salt and pepper. Meanwhile, whisk egg into milk in a bowl, and brush the pasty packages with the egg mixture for a browner crust, if desired. Return the bundles to the refrigerator to keep cold.
  • Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
  • Place the puff pastry bundles onto the prepared baking sheet, and bake in the preheated oven until the pastry is golden brown and crisp and the filets are the desired degree of doneness (for medium-rare, about 15 minutes; an instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C)). Serve each filet in the pastry shell with spoonfuls of wine sauce on top.

I learned how to make brie en croute this year, and wanted to make a "bite sized" version for a recital reception. I adapted the Pillsbury baked brie recipe. It was a great success! Here is my recipe.

4 (8 ounce) cans pillsbury crescent roll dough (not the actual crescent rolls)
8 ounces round brie cheese
1 (14 ounce) can whole cranberry sauce
2 eggs, beaten

Steps:

  • Cut the brie into 4"x4" square and discard the rounded edges.
  • Cut the square into 1-inch cubes (there should be 16).
  • Cut each 1-inch cube in half, and put the cheese aside.
  • Open 1 can of crescent roll dough, and lay the dough flat on a greased counter space.
  • Cut the dough in half lengthwise, and then into quarters widthwise. I recommend using a pizza cutter. This should result in 8 squares of dough.
  • Place 1 piece of cheese and 1 table spoon of cranberry sauce onto a square of dough.
  • Take the edges of the dough, and pinch them together at the top of the pastry to create a purse-like sculpture.
  • Repeat this process to use all of the dough, cheese, and cranberry sauce.
  • Place the little brie en croute "purses" 2 inches appart on a greased cookie sheet.
  • Pour/brush the beaten egg over the tops of the purses. Make sure the purses are covered in egg from top to bottom.
  • Bake purses in oven for 20 minutes at 350 degrees or until golden brown.
  • Let cool for 1/2 an hour.
  • Enjoy!

1 round (8 ounces) Brie cheese
1 large egg
1 tablespoon water

Steps:

  • Preheat oven to 400°. On a lightly floured surface, unfold puff pastry. Roll out each pastry to a 10-in. square. Cut each pastry into sixteen 2-1/2-in. squares. Cut Brie into 32 pieces; place a piece of Brie in the center of each pastry square. Bring corners of pastry over Brie and pinch edges to seal., Place 2-in. apart on a parchment paper-lined baking sheets. In a small bowl, whisk egg and water; brush over puffs. , Bake until pastries are golden brown and puffed, 20-25 minutes. Serve warm.

  • To make 10, you’ll need 2 packages of mini brie bites and only 1/2 package or one sheet of puff pastry. Take the softened puff pastry that’s still cold, but not at all frozen. You want to be able to unfold it without it cracking, but still cold enough to be able to roll out. Spread a little flour and roll one sheet so that it’s a little larger. Cut edges so that you have straight lines and cut into 9 squares. Save the trimmed edges and roll out for the last mini brie. (The brie bites come in packages of 5).
  • Place one little brie round on each square and bring up each corner and give a little twist. If you are making them ahead, place in an air tight container. If you are making them to bake immediately, place on a baking sheet lined with parchment paper and brush with a little egg wash so they brown up in the oven.
  • Bake in a 400º oven for about 20 minutes. The brie is in a very soft rind so even if you see the cheese in the puff pastry, it won’t be a problem. That’s why I love using these mini brie bites over cutting up pieces from a larger piece of Brie cheese.

  • Slice the chilled brie in half horizontally and spread 1/4 cup of the raspberry jam over one of the cut side of the brie. Place the other half on top of the brie, so that the rind is on top.
