Who doesn't love banana bread? This one's mini-sized for simple gift giving.

1 1/4 cups sugar
1/2 cup butter or margarine, softened
2 eggs
1 1/2 cups mashed ripe bananas (3 to 4 medium)
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts, if desired

Steps:

  • Heat oven to 350°F. Grease bottoms only of 10 (4 1/2x2 1/2x1 1/2-inch) mini loaf pans with shortening or cooking spray.
  • In large bowl, mix sugar and butter with spoon. Stir in eggs until well blended. Add bananas, buttermilk and vanilla; beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Divide batter evenly among pans, filling each with about 1/2 cup batter.
  • Bake 30 to 35 minutes or until toothpick inserted in centers comes out clean. Cool 5 minutes. Loosen sides of loaves from pans; remove from pans to cooling racks. Cool completely, about 2 hours. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 2 mini muffin tins with cooking spray.
  • Combine flour, baking powder, and baking soda in a bowl.
  • Blend bananas, sugar, butter, and egg together in a separate bowl. Add to flour mixture; stir batter well to combine.
  • Scoop batter into prepared muffin tins, filling each cup 2/3 of the way full.

1/3 cup sugar
1 large egg
1/4 teaspoon vanilla extract
2/3 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup mashed ripe banana (about 1 large)
3 tablespoons chopped walnuts

Steps:

  • In a small bowl, cream shortening and sugar. Beat in egg and vanilla. Combine the flour, baking soda and salt; add to creamed mixture alternately with banana. Fold in walnuts. , Transfer to a 5-3/4x3x2-in. loaf pan coated with cooking spray. Bake at 325° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

1/2 cup quick or regular oats
1/4 cup flour
1/4 cup powdered peanut butter (I used PBFit)
1 tablespoon baking powder
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 cup Splenda
1 egg
1/4 cup unsweetened almond milk
28 grams Lily's sugar free chocolate chips

Steps:

  • Mix everything together except the chocolate chips and divide between four mini loaf pans. Divide the chocolate chips on top of the banana bread and bake at 350 for 18-20. Let cool before removing from pans.

  • Spoon batter into prepared pans. Bake 33-38 minutes or until toothpick inserted in center comes out clean. Let stand 5 minutes; remove from pans. Cool completely. Spread sliced bread with Butter with Canola Oil, as desired.

When life gives you a boatload of bananas, you make mini banana bread loaves! This recipe only takes 30 minutes to bake and leaves delicious and moist mini quick-bread.

1 3/4 cup all purpose flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup white sugar
1/2 cup brown sugar
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
2 cups mashed, over-ripe bananas (6 small bananas)

Steps:

  • Preheat oven to 350 degrees F. Grease your bread pans with butter or non-stick spray.
  • In a medium bowl, combine the flour, baking powder, baking soda and salt with a whisk and set aside.
  • In the bowl of a stand mixer, mix the butter, white sugar and brown sugar on medium until light and fluffy, about 2 minutes. Add the eggs, milk, vanilla extract, cinnamon and pumpkin pie spice to the butter/sugar mixture. Mix on medium speed until well combined.
  • Beat in the mashed bananas until evenly mixed in.
  • With your mixer at low speed, gradually add in the set-aside flour mixture, until just combined.
  • Pour batter into your loaf pans. Evenly distribute the batter between your pans, filling each pan a quarter inch from the top. Bake for approximately 30 minutes, then check with a toothpick poked in the center to see if it comes out clean. If not cooked all of the way through, cook for another 5 minutes and check again. When completely cooked, remove from oven. Allow to cool for 10 minutes before removing from pan. Allow to cool completely on a rack.

1 cup chopped walnuts

Steps:

  • Heat oven to 350ºF.
  • Beat butter and sugar in large bowl with mixer until well blended. Add bananas, sour cream and eggs; mix well. Add combined dry ingredients; mix just until moistened. Stir in nuts.
  • Pour into 5 (6x3-inch) foil pans sprayed with cooking spray.

2 Very Ripe Bananas
1/4 cup Unsalted Butter, melted
1/3 cup Brown Sugar
1 Egg
1/2 teaspoon Vanilla Extract
1/4 cup Milk
1 cup All Purpose / Plain Flour, sifted
1/2 teaspoon Baking Soda
1/2 teaspoon Baking Powder
1/2 teaspoon Cinnamon
Pinch of Salt

Steps:

  • Place bananas (unpeeled) in the air fryer and bake on 180C / 350F for 15 minutes. Remove the bananas and set aside to cool.
  • Mix the butter and sugar together in a large mixing bowl. Add egg, vanilla and milk and continue to mix.
  • Remove bananas from their skin then mash on a plate. Add mashed banana to the mixing bowl and mix until well combined.
  • In a seperate bowl mix together the flour, baking powder, baking soda, cinnamon and a pinch of salt. Pour wet ingredients on top and stir until just combined.
  • Divide mixture into two mini loaf pans and place in the air fryer on 160C / 320F for 20 minutes, or until the bread is cooked through and a skewer comes out clean.
  • Leave in the pan for 10 minutes, then move to a cooling rack to cool completely. Serve warm with lashings of butter.

½ cup whole wheat flour

¼ cup milk

  • In an electric mixer, put the flour, spices, salt and baking soda into the mixer and turn it to it’s lowest setting to combine the dry ingredients.
  • Slowly add each of the remaining ingredients, one at a time, until you have a smooth batter. It sill be slightly thick.
  • Divide the batter into 4 equal portions using 4 mini loaf pans size 5 3/4 x 3 1/4 x 2 1/4. Place the loaf pans on a baking sheet for easy transfer.
  • Bake at 350 F. for 55 to 60 minutes. Check at the 50 minute mark. If the tops are getting too brown, simply place a piece of foil loosely over the tops and finish baking. Doing this may add 5 to 10 minute to the baking time.

  • In a large bowl, combine the flour, baking soda, and salt; set aside. Place the bananas in another large bowl and mash them well with a whisk or a potato masher or a fork. Add the brown and granulated sugars and the melted butter and beat with an electric mixer or a whisk until well blended (there will be little bits of banana that don't get perfectly smooth). Beat in the eggs one at a time, and then beat in the vanilla. Add the dry ingredients, switch to a spoon, and stir just until the flour is incorporated.
  • Spoon the mixture evenly into the tins (they will be fairly full), and bake until a wooden skewer inserted into the middle of the mini loaves comes out clean, about 25 to 28 minutes. Let cool for a few minutes in the tins on a wire rack, then turn the little loaves out onto the rack to finish cooling. Serve warm or at room temperature.
