Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 2 mini muffin tins with cooking spray.
  • Combine flour, baking powder, and baking soda in a bowl.
  • Blend bananas, sugar, butter, and egg together in a separate bowl. Add to flour mixture; stir batter well to combine.
  • Scoop batter into prepared muffin tins, filling each cup 2/3 of the way full.

This classic banana bread recipe is simple to put together and looks impressive when baked in our Mini Loaf Pan.

Canola oil for spritzing
3 ripe bananas, mashed
½ cup (125 mL) vegetable oil
¼ cup (50 mL) milk
2 eggs
½ tsp (2 mL) vanilla extract
1½ cups (375 mL) all-purpose flour
1 cup (250 mL), plus 1 tbsp (15 mL) granulated sugar, divided
1 tsp (5 mL) baking soda
½ tsp (2 mL) salt
¼ tsp (1 mL) ground cinnamon

Steps:

  • Preheat the oven to 350°F (180°C). Spray the Mini Loaf Pan with oil using the Kitchen Spritzer.In a large bowl, combine the bananas, oil, milk, eggs, and vanilla, and mix well. Stir together flour, 1 cup (250 mL) of the sugar, baking soda, and salt in a small bowl. Add the dry ingredients to the wet ingredients and stir just until moistened.Use the Large Scoop to divide the batter into the wells of the Mini Loaf Pan. Stir together the remaining 1 tbsp (15 mL) of sugar and cinnamon and add to the Powdered Sugar Shaker. Sprinkle the cinnamon sugar mixture evenly over the batter.Bake for 25 minutes, or until the Cake Tester & Releaser inserted in the centers comes out clean. Let the loaves cool for 10 minutes before removing.

Steps:

Steps:

  • Heat oven to 350°F. Grease bottoms only of 10 (4 1/2x2 1/2x1 1/2-inch) mini loaf pans with shortening or cooking spray.
  • In large bowl, mix sugar and butter with spoon. Stir in eggs until well blended. Add bananas, buttermilk and vanilla; beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Divide batter evenly among pans, filling each with about 1/2 cup batter.

1 small (6-7") over-ripe banana
3 tablespoons unsalted butter at room temperature/ very soft (plus extra for pan)
3 tablespoons sugar
2 tablespoons honey
1 large egg yolk
1/2 cup flour
1 tablespoon wheat germ
1/4 + 1/8 teaspoon baking soda
pinch of salt
2 tablespoons finely chopped pecans (optional)

Steps:

  • Preheat the oven to 350. Grease a 5 3/4" x 3" x 2" mini loaf pan with extra butter. Set aside.
  • In a medium bowl, mash the banana into a puree using a fork.
  • Next, add the butter, sugar, and honey to it and stir well. Stir in the egg yolk well.
  • Finally, sprinkle the flour, wheat germ, baking soda and salt. Stir in the pecans, if using.
  • Bake for 35-40 minutes, or until a toothpick inserted comes out clean. Let cool in the pan slightly before moving it to a wire rack.

1 3/4 cup all purpose flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup white sugar
1/2 cup brown sugar
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
2 cups mashed, over-ripe bananas (6 small bananas)

Steps:

  • Preheat oven to 350 degrees F. Grease your bread pans with butter or non-stick spray.
  • In a medium bowl, combine the flour, baking powder, baking soda and salt with a whisk and set aside.
  • In the bowl of a stand mixer, mix the butter, white sugar and brown sugar on medium until light and fluffy, about 2 minutes. Add the eggs, milk, vanilla extract, cinnamon and pumpkin pie spice to the butter/sugar mixture. Mix on medium speed until well combined.
  • Beat in the mashed bananas until evenly mixed in.
  • With your mixer at low speed, gradually add in the set-aside flour mixture, until just combined.
  • Pour batter into your loaf pans. Evenly distribute the batter between your pans, filling each pan a quarter inch from the top. Bake for approximately 30 minutes, then check with a toothpick poked in the center to see if it comes out clean. If not cooked all of the way through, cook for another 5 minutes and check again. When completely cooked, remove from oven. Allow to cool for 10 minutes before removing from pan. Allow to cool completely on a rack.

Steps:

  • Preheat an over to 325 degrees and spray 3 mini loaf pans with nonstick cooking spray

2 Very Ripe Bananas
1/4 cup Unsalted Butter, melted
1/3 cup Brown Sugar
1 Egg
1/2 teaspoon Vanilla Extract
1/4 cup Milk
1 cup All Purpose / Plain Flour, sifted
1/2 teaspoon Baking Soda
1/2 teaspoon Baking Powder
1/2 teaspoon Cinnamon
Pinch of Salt

Steps:

  • Place bananas (unpeeled) in the air fryer and bake on 180C / 350F for 15 minutes. Remove the bananas and set aside to cool.
  • Mix the butter and sugar together in a large mixing bowl. Add egg, vanilla and milk and continue to mix.
  • Remove bananas from their skin then mash on a plate. Add mashed banana to the mixing bowl and mix until well combined.
  • In a seperate bowl mix together the flour, baking powder, baking soda, cinnamon and a pinch of salt. Pour wet ingredients on top and stir until just combined.
  • Divide mixture into two mini loaf pans and place in the air fryer on 160C / 320F for 20 minutes, or until the bread is cooked through and a skewer comes out clean.
  • Leave in the pan for 10 minutes, then move to a cooling rack to cool completely. Serve warm with lashings of butter.
