MINESTRONE SOUP (OLIVE GARDEN COPYCAT)
Minestrone soup is so hearty it can stand on its own as the main dish! I fell in love with minestrone at the Olive Garden, so this is a pretty darn close attempt at copying the classic Italian soup.

Steps:
- Preheat the pot with olive oil, add zucchini, carrots, celery and onions. Sautee for about 10 minutes, until vegetables soften.
- To the pot, add canned diced tomatoes. Season with Italian seasoning and dry basil.
- Add vegetable broth, noodles, kidney and Great Northen beans. Simmer for about 10 minutes. Depending on the thickness of the soup, you can add 2 more cups of water to the mix.
- Press garlic into the mixture and let it simmer for about 10 minutes.
- Serve while the minestrone soup is still warm.

Steps:
- Heat 2 tablespoons olive oil in large stock pot over medium-high heat. Add pancetta; cook and stir until it begins to brown, 2 to 3 minutes. Stir in onions and celery; cook and stir until onions start to turn translucent, about 3 minutes. Stir in minced garlic and cook for another minute.
- Pour chicken broth, water, and plum tomatoes into the pancetta and onion mixture. Bring to a simmer.
- Stir cranberry beans, cabbage, garbanzo beans, red pepper flakes, Italian seasoning, and 2 teaspoons salt into broth mixture. Bring to a simmer and cook until cranberry beans are tender, adding more water as needed if the soup becomes too thick, about 45 minutes.
- Stir in Swiss chard and simmer until softened, about 15 minutes. Season with salt and black pepper to taste.
- Stir in pasta and increase heat to medium-high and simmer until pasta is tender, about 15 minutes. Ladle into bowls and top with extra virgin olive oil, Parmigiano-Reggiano cheese, and Italian parsley.

MINESTRONE SOUP LIKE CARRABBA'S
My hubby and I went to Carrabba's tonight for dinner and I had a wonderful bowl of their Minestrone Soup. I begged them for the recipe but they said it's secret and are not allowed to give it out. So, as soon as I got home, I googled it and found this recipe at a copycat recipe website. I only hope that it comes close! I have no idea of the serving size that this recipe makes though.

Steps:
- Heat butter and oil and sauté celery, onion, carrots and garlic and cook until soft.
- Add green beans, cabbage, zucchini, parsley and basil and cook until soft.
- Add chicken stock, bay leaf, tomatoes, prosciutto, romano rind and potatoes.
- Allow soup to boil and immediately reduce to simmer. Simmer for 20-30 minutes or until potatoes are soft. Add canned beans with their juices and simmer 5 minutes more. Remove romano rind and prosciutto. Add grated romano cheese, stirring constantly.
