MINCEMEAT
Mincemeat is a traditional English treat that is usually used as filling for mince pies during Christmas, but it tastes great mixed with vanilla ice cream, as well. This recipe uses butter instead of the traditional suet, which makes this mincemeat suitable for vegetarians. Store in the refrigerator for up to 6 weeks.

- Combine cinnamon, cloves, ginger, nutmeg, and allspice in a bowl. Reserve 1 heaped teaspoon for the mincemeat. Store the rest in a small jar for a later use.
- Inspect two 12-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until mincemeat is ready. Wash new, unused lids and rings in warm soapy water.
- Combine apple, sultanas, sugar, currants, raisins, and butter in a saucepan. Cook over low heat and stir gently until butter has melted. Stir in chopped almonds, orange zest, 1 teaspoon of mixed spice, and cinnamon. Bring mixture to a simmer and cook, stirring occasionally, 5 to 10 minutes.
- Remove from heat and set mincemeat aside to cool down for 30 minutes. Stir in brandy. Spoon into sterilized jars.

MINCEMEAT CREAM CHEESE PASTRIES
I've been making these delectable little morsels since Thanksgiving of 1976. If you like mincemeat, these are delicious. A little more time consuming than the traditional pie but well worth the effort!I like to use the condensed mincemeat in the box and add about 1-2 tablespoons of bourbon as part of the liquid- yum......Refrigeration time is not included in prep time.

Steps:
- About 1 hour before baking, combine flour, cream cheese, and butter and mix well.
- Cover and chill at least 1 hour.
- Combine mincemeat and nuts and set aside.
- Preheat oven to 400 degrees.
- Divide dough in half, refrigerate one half.
- On well floured surface, thinly roll out dough into a large rectangle; cut into 3 inch squares.
- Place level teaspoons of filling in center of square and fold dough over filling, bringing ends together and forming a triangle.
- With a fork dipped in flour, press edges together and prick a few holes in the top.
- Brush with beaten egg and sprinkle a little sugar on top.
- Place on ungreased cookie sheet.
- Repeat with remaining dough.
- Reroll trimmings for more pastries.
- Bake 10 to 12 minutes or until golden brown.
- Let cool on wire racks.

- Preheat the oven to 200c.
- Mix the flour, cornflour, salt, icing sugar, orange rind and butter into a fine breadcrumb.
- Add a little iced water to make a dough. Chill for an hour.
- Roll out the dough and cut 12 circles then line a 12 hole ProCook Non-stick Bun Sheet. Fill each with 2-3 tsp mincemeat and 1 tsp of the cream cheese.
- Cut 12 more circles for lids and top the pie bottoms. Pierce the lid then bake for 12-15 minutes until golden brown.

- Stir in the milk and mincemeat.
- Combine the next 4 ingredients together and whisk.
- Pour it all at once into the liquid ingredients and stir completely. Pour into a well greased loaf pan.

- Remove and cool for 10 minutes, then remove the loaf from the pan and continue cooling on a wire cooling rack.

- In a large pan, melt butter.
- Add water, fruits, sugar, spices, and alcohol.
- Bring to boil over medium-high heat, stirring often. Once it boils reduce the heat to low and cook for approximately 30 mins. Continue to stir often.
- The mince is ready when the majority of the liquid has boiled out.
- Let the mince cool completely and then transfer and store in an airtight container.
- The mince should be kept in the refrigerator. The longer you store it the more the flavors will develop.
- The mince will keep for a month if you take some steps. Check on it every week or so and add a tablespoon of rum or brandy and give it a good stir. If you don't take this step the mince will only last a week.

- In a mixing bowl, beat butter and cream cheese with an electric mixer until combined, about 30 seconds; beat in the confectioners' sugar until the mixture is light and fluffy, about 2 minutes. In a bowl, whisk the flour with salt, and stir the flour mixture into the butter mixture to make an even, smooth dough. Cover the dough, and chill in refrigerator for at least 3 hours or overnight.
- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Roll the dough on a well-floured work surface to a thickness of about 1/8 inch. Cut the dough into rounds with a 3-inch round cookie or biscuit cutter. Place the cookies onto the prepared baking sheet. Mix the mincemeat and rum in a bowl, and spoon about 1 teaspoon of the filling into the middle of a cookie. Bring together 2 adjacent edges of the cookie into a triangle shape, and pinch the cookie closed to partially cover the filling and make a cornucopia or bell shape.
- Bake in the preheated oven until the cookies are light golden brown, 10 to 12 minutes. Allow to cool on the baking sheet for about 5 minutes before removing to wire racks to finish cooling.

- I make my pastry in the food mixer by pulsing together the flour, baking powder, sugar, butter and cream cheese until it forms a crumbly texture then I add in the egg and pulse again until it comes together in a ball. Scoop onto some clingfilm and chill for a minimum of an hour before using.
- If making by hand, rub the butter into the flour then stir in the baking powder and sugar. Use a dinner knife to cut in the cream cheese and then bring together using the egg. Whichever way you go, don't over handle the pastry and stop just before it comes together.
- Work with half the pastry at a time, keeping one half in the fridge. Roll out to approximately 2-3mm thick and stamp out circles of pastry big enough to line your tart tin* and press into the tin. Add a spoonful of mincemeat (don't over fill) then stamp out circles of pastry just big enough to cover each tart and cut out a star with your small cutter before placing on top of the tart and pressing lightly to seal. Brush with milk and sprinkle generously with extra caster sugar.
