My daughter won the grand champion title at the Alaska State Fair with these bars when she was 10. The topping is delicious but a bit crumbly; for neatly edged cookies, freeze before cutting. -Mary Bohanan, Sparks, Nevada

Steps:
- Preheat oven to 400°. Line an 8-in. square baking pan with foil; grease foil with butter. In a large bowl, whisk flour, sugar, baking soda and salt. Stir in oil and milk. Reserve 1 cup for topping. Press remaining crumb mixture onto bottom of prepared pan. Spread with mincemeat. Stir pecans into reserved crumb mixture; sprinkle over top. Bake 30-35 minutes or until topping is golden brown., Cool completely in pan on a wire rack. Cut into bars.

MINCEMEAT & SHORTBREAD SQUARES
An easy alternative to mince pies. For a festive presentation, pile the squares on a cake stand and top with holly and a snowy dusting of icing sugar.

- Heat oven to 180C/160C fan/gas 4 and line the base and sides of a 20cm square tin with baking parchment. Beat the butter, sugar, vanilla, 1 tsp of the cinnamon and the cloves together with an electric whisk until pale and fluffy. Stir in the flour and ground rice first with a spoon, then get your hands in and knead to a smooth dough.
- Halve the dough and press one half evenly into the base of the tin. Spread the mincemeat over the top, leaving a 1cm border around the edge. Roll out the remaining dough between 2 sheets of baking parchment to a 20cm square, then slide onto the mincemeat. Seal around the edge with your fingers gently press all over until dimpled, then prick all over the top with a fork.
- Bake for 25-30 mins until lightly golden. Mix the granulated sugar with the remaining 1/4 tsp cinnamon and sprinkle over the top. Cool in the tin before cutting into squares. Will keep for 3 days in an airtight container.

MINCEMEAT CRUMB BARS
Good at holiday time - good any time. Mincemeat filling can be replaced with any flavor canned pie filling.

- In large mixing bowl stir together: flour, oats, brown sugar and baking soda. Melt butter or margarine over low heat and stir in until well blended. Set aside 2 cups of this mixture.
- Distribute remaining oat mixture evenly into an ungreased 15 X 10 X 1 inch baking pan and pat down. Bake this in a 350 degrees F (175 degrees C) oven for 12 minutes.
- Stir lemon OR orange peel into mincemeat OR fruit-pie filling. Spread filling carefully over the HOT baked crust. Sprinkle the reserved oat mixture over the filling. Pat oat mixture very gently onto filling.
- Bake for 20 to 25 minutes or until top is golden. Cool pan on rack. Drizzle with icing.:
- To Make Icing: Mix together 1 cup confectioners' sugar, 1/4 teaspoon vanilla, and 1 to 2 tablespoon milk. Add milk a little at a time to obtain drizzling consistency.

- Tip the dried fruits and mixed peel into a large bowl. Pour over the brandy, zests and juices. Stir, then cover and leave to soak for 24 hrs.
- Tip the mixture into a large saucepan with the remaining ingredients and stir well. Set over a medium heat and, once the suet has melted, turn up the heat and bubble for a few mins. Pack while hot into sterilised jars (see tip, below). Leave in a cool, dark cupboard for at least a fortnight, or for up to 6 months.

- Combine cinnamon, cloves, ginger, nutmeg, and allspice in a bowl. Reserve 1 heaped teaspoon for the mincemeat. Store the rest in a small jar for a later use.
- Inspect two 12-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until mincemeat is ready. Wash new, unused lids and rings in warm soapy water.
- Combine apple, sultanas, sugar, currants, raisins, and butter in a saucepan. Cook over low heat and stir gently until butter has melted. Stir in chopped almonds, orange zest, 1 teaspoon of mixed spice, and cinnamon. Bring mixture to a simmer and cook, stirring occasionally, 5 to 10 minutes.
- Remove from heat and set mincemeat aside to cool down for 30 minutes. Stir in brandy. Spoon into sterilized jars.

- Preheat oven to 350 degrees F, then grease 15"x10" jelly roll pan.
- In a mixer bowl, beat flour, oats, 3/4 cup brown sugar & butter until crumbly.
- Set aside 1 1/2 cups of this mixture, then press the remaining mixture onto bottom of prepared jelly roll pan.
- Bake 15 minutes or until lightly browned, then set aside.
- In another bowl, beat cream cheese until fluffy, then gradually beat in sweetened condensed milk, until smooth.
- Beat in eggs, then spread this cream cheese mixture over baked crust.
- Spread mincemeat evenly over cream cheese mixture.
- Combine cornstarch with 1 tablespoon brown sugar, then combine that with cranberry sauce until combined ~ Spoon over mincemeat layer.
- Top the entire concoction with reserved crumb mixture, & bake 40 minutes or until golden.
- Cool in pan on wire rack.
- Chill, then cut into squares. Store in refrigerator.

- Preheat the oven to 160C/325F and spray an 8x8 inch square pan with cooking spray. Cut two strips of grease proof paper, long enough to go across the pan and have hangover on the edge to lift out the bars. Place one strip across the pan, side to side, and the other across the other way, top to bottom.
- Place the butter and sugars into a large bowl, or the bowl of your stand mixer and beat until light and fluffy. Around 2 minutes on medium-high speed.
- Scrape down the sides as necessary and add the allspice, salt, cornflour and flour. Mix on low speed until the mixture starts to come together, then turn the speed up to medium and mix until one lump of dough forms and comes away from the sides.
- Place 3/4 of the shortbread mixture into your prepared pan and press into an even layer. I use the bottom of a measuring cup sprayed with cooking spray. Once spread, place in the oven for 12-15 minutes, until it's puffed up and is just set around the edges.

- Preheat the oven to 180°C, fan 160°C, gas 4. For the topping, mix the flour, sugar and nutmeg in a bowl, then rub in the butter and mix again – it will be a crumbly mix. You can also do this in a food mixer.
- For the cake, whiz the pecans in a food mixer or blender to a fine powder, then, in a bowl, whisk together with all the ingredients, except the mincemeat, until combined. Spread the cake mix into a lightly buttered and lined 20cm x 30cm baking tin that's 4cm deep.
- To finish the topping, dice the marzipan and chop the pecans. Add these and the cranberries to the bowl with the topping mix and stir; scatter over the mincemeat.
