HOLIDAY MINCEMEAT CAKE
I made this cake one year for Christmas when I was short of time and wasn't able to make a pie. It was a big hit. It is a very moist cake best served with just a dusting of icing sugar for garnish.

Steps:
- Stir the flour, baking powder, baking soda and salt together; set aside.
- Cream the butter, orange rind and vanilla in a large bowl with an electric mixer until light.
- Beat in the sugar.
- Add the eggs, one at a time, beating well after each addition.
- Blend in the mincemeat.
- Add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients.
- Stir in the nuts.
- Turn the batter into either a greased 12-cup Bundt or tube pan or a greased 9" x 13" cake pan.
- Preheat the oven to 350 degrees F.
- If using a Bundt pan, bake for 55 to 60 minutes or until done.
- If using a cake pan, bake for 45 to 50 minutes.
- In either case, cool in the pan for 10 minutes.
- Remove from the pan and cool completely.
- Dust with icing sugar before serving.
MINCEMEAT COOKIES I
Add more mincemeat or a pinch of other spices to change the flavor of these cookies.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- Cream shortening, sugar and eggs together, then beat in vanilla. Sift the flour, salt and baking soda together, and add to shortening mixture. Mix until well blended. Stir in the nuts and mincemeat and mix well. Drop by teaspoonfuls on the cookie sheet.
- Bake 8 to 10 minutes until light brown.

- In a large bowl, cream butter and sugar. Beat in the eggs. Add mincemeat; mix well. Combine the flour, baking powder, baking soda, cinnamon and salt; add to the creamed mixture and mix well. Stir in pecans. Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 14-16 minutes or until edges begin to brown. Remove to wire racks to cool., For the frosting, combine the brown sugar and butter in a saucepan; bring to a boil over medium heat. Boil for 6-8 minutes, stirring twice, or until the sugar is dissolved. Remove from the heat. Add the confectioners' sugar, cream and extract; beat until smooth. Frost the cookies; top each with a pecan half.

I tried this recipe for the first time this year after finding it in DDJ. It was a big hit. The mincemeat keeps the cookies moist. The coffee icing is a wonderful combination with the mincemeat flavor!

- Heat oven to 375°F Line 2 cookie sheets with parchment paper.
- For dough, whisk together flour, baking soda and salt in a medium bowl; set aside. Beat shortening and granulated sugar in a large mixer bowl on medium-high speed 2 minutes, until light and fluffy. Beat in the eggs one at a time, beating well after each addition. Reduce speed to low and gradually add flour mixture just until combined. Stir in mincemenat until well mixed.
- Drop dough by measured tablespoons onto prepared cookie sheets, 2 inches apart. Bake 10 - 12 minutes, until golden brown. Cool cookies on cookie sheets for 1 minute. Transer cookies to wire racks and cool completely.
- Meanwhile, for coffee frosting beat together confectioners sugar, coffee and melted butter in a large mixer bowl on medium speed until smooth.
- Frost each cookie with about a teaspoon of icing. Top each cookie with 1 pecan half.

- Beat the eggs, sugar and butter together.
- Stir in the milk and mincemeat.
- Combine the next 4 ingredients together and whisk.
- Pour it all at once into the liquid ingredients and stir completely. Pour into a well greased loaf pan.
- Bake at 350 degree for 50-60 minutes, until the loaf tests done.
- Remove and cool for 10 minutes, then remove the loaf from the pan and continue cooling on a wire cooling rack.
- Combine glaze ingredients and drizzle over the loaf once it's completely cooled.

- Mix through the mincemeat then pour the batter into the prepared tin and level the surface. Bake for 60-75 minutes until a skewer inserted into the center comes out clean and the cake is starting to pull away from the sides of the tin. Cover the top loosely with tin foil partway through baking if it starts to get too dark.
