Steps:

  • Preheat oven to 375 degrees.
  • Mix first 3 ingredients.
  • Pour pie filling into ungreased 9x9 pan.
  • Top with Bisquick batter mixture.
  • Bake 45 minutes or until golden brown.
  • Serve warm with whipped topping.

A hearty yet healthy dish that's perfect for a rainy evening, and it's low-fat too

500g pack extra-lean beef mince
1 onion , finely chopped
140g baby chestnut mushroom , halved
2 tbsp plain flour
500ml beef stock
few shakes Worcestershire sauce
140g self-raising flour
1 tbsp chopped thyme
4 tbsp low-fat natural yogurt
140g frozen peas

Steps:

  • Heat oven to 180C/160C fan/gas 4. Dry-fry the mince and onion in a large non-stick frying pan over a high heat. Stir frequently to break up the mince, until well browned. Add the mushrooms and plain flour, followed by the stock and Worcestershire sauce. Bring to a simmer, then gently cook for 10 mins.
  • Meanwhile, to make the cobbles, mix the self-raising flour and thyme together in a bowl. Stir in the yogurt with enough cold water to form a scone-like dough. On a lightly floured surface, roll out to the thickness of about 1.5cm and use a cutter to stamp out 12 x 5cm rounds.
  • Stir the peas into the mince mixture, then transfer to a baking dish. Randomly place the cobbles on top of the mince, then bake for 20-25 mins, until cobbles are risen and golden brown. This is good served with horseradish sauce.

1 ½ cups packed brown sugar
1 cup shortening
1 egg
2 cups prepared mincemeat pie filling
3 ¼ cups all-purpose flour
¼ teaspoon salt
1 ½ teaspoons baking soda

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Cream together brown sugar and shortening.
  • Add in egg and mincemeat and mix well. Sift together flour, salt and baking soda and stir into mincemeat mixture.
  • Drop onto cookie sheet and bake 7 - 10 minutes.

While searching for a particular recipe I came across this one for mincemeat cobbler that my Mom gave me about 20 or so years ago. I served it this past Christmas along with 2 other desserts and everyone commented on how good it tasted. So try it, and let me know what you think.

1 cup mincemeat
1 cup chopped apple
2 tablespoons white sugar
1/8 teaspoon nutmeg
1 tablespoon melted butter
1 cup flour
1 1/2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/4 cup shortening
1 egg, beaten
1/4 cup milk

Steps:

  • Preheat oven to 400 degrees.
  • Mix together the mincemeat, apples, 2 tablespoons sugar, nutmeg& melted butter.
  • Blend together and spread on the bottom of a baking dish.
  • Sift the flour, baking powder, salt& 1 tablespoon sugar.
  • Cut in the shortening.
  • Add the milk and beaten egg.
  • Mix and spread over the first mixture.
  • Bake 30 minutes.
  • Serve hot with cream.

SLOW COOKER MINCEMEAT



Slow cooker mincemeat image

This is a great way of making your own mincemeat. It works whether you are making a couple of big jars to use in your kitchen for your own Christmas baking, or making up smaller jars to give to others. As always, the slow cooker takes a bit of time, but it's totally worth it.

800g mixed dried fruit (I used one with mixed peel in it)
400g cooking apple (e.g. bramley)
100g glace cherries
100g dried apricots
50g mixed peel
50g ground almonds
250g dark brown sugar
200g vegetable suet
zest and juice of 2 lemons
zest and juice of 2 oranges
1 tsp ground ginger
3 tsp ground cinnamon
1 tsp freshly ground nutmeg
150ml brandy (alternative: apple or orange juice)

Steps:

  • Put all your ingredients (minus about half the brandy) in the slow cooker and mix together with a wooden or silicon spoon. Cook on high for 1 hour and 15 minutes (75 minutes).
  • Turn the slow cooker down (don't take the lid off, it'll affect the temperature) to low and cook for another hour and 15 minutes.
  • About half an hour before the end, sterilise your jars.
  • Take the lid off the slow cooker, mix through the remaining brandy and then decant into the sterilised jars. Seal securely and put in a cupboard and keep out of sunlight before use.

1 cup white sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup butter, melted
1 cup milk
1 (28 ounce) jar prepared mincemeat pie filling

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • In a bowl, whisk together the flour, sugar, cinnamon, and nutmeg together until thoroughly combined. Mix in the melted butter and milk, and beat to a smooth batter. Spread the mincemeat out into the prepared baking dish, and pour the batter on top.
  • Bake in the preheated oven until the cobbler is golden brown and bubbling, about 1 hour.

  • Heat 2tsp oil in a frying pan and gently fry 1 chopped onion until softened and begining to colour. Add 2 chopped garlic cloves and cook for another minute or two.
  • Preheat the oven to 200℃ (180℃ fan)/400°F/gas mark 6. Place 175g (6oz) flour in a bowl and add 50g (oz)butter. Rub the butter into the flour until the mixture resembles breadcrumbs.
