MINCED BEEF & SWEET POTATO STEW



Minced beef & sweet potato stew image

Thrifty lean mince makes a great base for a hearty family casserole - serve this one-pot with seasonal greens

1 tbsp sunflower oil
1 large onion , chopped
1 large carrot , chopped
1 celery stick, sliced
500g lean minced beef
1 tbsp tomato purée
1 tbsp mushroom ketchup
400g can chopped tomato
450g sweet potato , peeled and cut into large chunks
few thyme sprigs
1 bay leaf
handful parsley , chopped
Savoy cabbage , to serve

Steps:

  • Heat the oil in a large pan, add the onion, carrot and celery, and sweat for 10 mins until soft. Add the beef and cook until it is browned all over.
  • Add the tomato purée and cook for a few mins, then add the mushroom ketchup, tomatoes, sweet potatoes, herbs and a can full of water. Season well and bring to the boil.
  • Simmer on a low heat for 40-45 mins until the sweet potatoes are tender, stirring a few times throughout cooking to make sure they are cooking evenly.
  • Once cooked, remove the bay leaf, stir through the chopped parsley and serve with cabbage.

1 lb. ground beef (browned and drained)
1 1/2 lbs potatoes (diced large)
3 carrots (sliced)
1 onion (diced)
1 garlic clove (minced (I had this on hand already))
6 oz. can tomato paste
2 cups water
1 tsp. salt
1/4 tsp. pepper
1 tsp. onion powder
1 tsp. dried oregano

Steps:

  • Add the cooked ground beef, potatoes, carrots, onions, and garlic to a 5-quart or larger slow cooker.
  • In a small bowl whisk together the tomato paste, water, salt, pepper, onion powder and oregano. Pour this mixture over everything in the slow cooker. Stir.
  • Cover and cook on LOW for 7 hours, without opening the lid during the cooking time.
  • Serve with buttered sandwich bread or rolls and Enjoy!

1 tablespoon vegetable oil or shortening
1 lb boneless beef chuck, tip or round roast, cut into 1-inch cubes
3 cups water
1/2 teaspoon salt
1/8 teaspoon pepper
2 medium carrots, cut into 1-inch pieces
1 large unpeeled potato, cut into 1 1/2-inch pieces
1 medium green bell pepper, cut into 1-inch pieces
1 medium stalk celery, cut into 1-inch pieces
1 small onion, chopped (1/4 cup)
1 teaspoon salt
1 dried bay leaf
1/2 cup cold water
2 tablespoons Gold Medal™ all-purpose flour

Steps:

  • In 12-inch skillet or 4-quart Dutch oven, heat oil over medium heat 1 to 2 minutes. Add beef; cook about 15 minutes, stirring occasionally, until brown on all sides.
  • Add water, 1/2 teaspoon salt and the pepper. Heat to boiling. Reduce heat to low. Cover; simmer 2 hours to 2 hours 30 minutes or until beef is almost tender.
  • Stir in remaining ingredients except cold water and flour. Cover; cook about 30 minutes or until vegetables are tender. Remove bay leaf.
  • In tightly covered jar or container, shake cold water and flour; gradually stir into beef mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute until thickened.

1 tablespoon Olive Oil
1 Brown Onion, diced
1 Carrot, peeled & diced
2 Celery Stalks, diced
2 Garlic Cloves, minced
500g / 1 lbs Beef Mince / Ground Beef
1 tablespoon All Purpose / Plain Flour
1 Potato, peeled & diced
1.5 cups Beef Stock
2 tablespoon Worcestershire Sauce
2 tablespoon Tomato Paste
1/4 cup Frozen Peas

Steps:

  • Heat oil in a large saucepan, then add onion, celery and carrot and sauté for 5 minutes, or until softened. Add garlic and cook, stirring, for 30 seconds.
  • Add beef mince / ground beef and cook, breaking up with a spatula or wooden spoon, for 8-10 minutes until browned.
  • Add flour and stir through, then add in potato, beef stock, Worcestershire sauce, tomato paste and season with salt and pepper and stir to combine. Bring to boil, then reduce to a simmer, stirring occasionally, for 15 minutes or until potato has cooked and sauce is thickened. If the liquid evaporates too quickly before the potato cooks through, add a little more stock to the saucepan.
  • Stir in peas and cook for 2-3 minutes until tender. Serve on top of toast, rice or a baked potato.

This is a recipe that my Mum used to make when we were kids. Lovely in the winter or when you're feeling under the weather. Serve it with baked potatoes or mash for a real comfort dinner.

2 kg minced beef
2 large onions
6 large carrots
2 medium swedes
2 (400 g) cans baked beans
3 tablespoons tomato puree
2 tablespoons Worcestershire sauce
4 beef bouillon cubes
2 bay leaves
water
salt & pepper

Steps:

  • With a food processor with the grater attachment, grate the carrots, swede and onions.
  • Put everything except the bay leaves and water into a large pan and heat, stirring, until the meat is browned.
  • Add a teaspoon of salt, a sprinkle of black pepper, the bay leaves and enough water to stop it sticking to the pan (depends on how much water is in the beef).
  • Simmer for 45 minutes, checking occasionally that it is not sticking, and topping up with water if necessary.
  • Taste and adjust seasoning as required.

2 tbsp sunflower oil
1 large onion, thinly sliced
2 garlic cloves, finely chopped
2 celery sticks, peeled, finely sliced
2 medium carrots, diced
500g/1lb 2oz lean beef mince
1 x 400g/14oz can chopped tomatoes
2 tbsp tomato purée
350ml/12fl beef stock
150ml/5fl oz red wine
pinch caster sugar
1 bay leaf
salt and freshly ground black pepper
250g/10oz self-raising flour, plus extra for rolling
125g/5oz shredded beef suet
½ tsp fine sea salt
2 tbsp chopped fresh parsley

Steps:

  • Heat the oil in a large saucepan or flameproof casserole and cook the onion, garlic, celery and carrots for 15 minutes, stirring occasionally until soft and pale golden-brown.
  • Add the minceand cook for a further five minutes.
  • Add the tomatoes, tomato purée, beef stock, red wine, sugar and bay leaf. Add a good pinch of salt and freshly ground black pepper. Bring to the boil, then reduce the heat and simmer gently for 20 minutes, stirring occasionally.
  • For the dumplings, put the flour in a bowl and stir in the suet, salt and parsley. Make a well in the centre and add enough cold water - you'll need around 200ml/7fl oz - to mix to a soft, spongy dough. Use lightly floured hands to roll into 12 small balls.
  • Place the dumplings carefully on top of the mince. Cover with a tight-fitting lid and cook over a medium heat for 18-20 minutes, or until the dumplings are cooked through and well risen.

  • Brown the Beef. Once you've cut up your beef into bite-size cubes (about 1 to 1½ inches), you're going to amplify the flavor two ways: Season the meat and brown it.
  • Add the Aromatics. After you remove the last batch of browned meat, you can use the fat that's left behind to sauté onions and garlic if you're using them in your recipe.
  • Deglaze the Pan. After all that searing and sautéing, the bottom of your skillet or pot will most likely be coated with a thin, crusty brown layer of cooked-on food.
  • Add Liquid and Seasonings. Add the herbs, spices, and other seasonings along with the braising liquid your recipe calls for. If you're braising the stew on your stovetop, bring to a boil, cover, and reduce the the heat to a low simmer.

  • Dice the beef into 1cm pieces, then toss in a bowl with the flour, making sure the meat chunks are totally covered. Set aside.
  • Add a splash of oil to a large casserole pan and place it over a medium heat. When it’s hot, add the beef and cook for 5 minutes, or until the meat is browned all over.
  • While the beef cooks, peel and finely chop the garlic, then peel the shallots and halve most of them, keeping a few whole. Trim and roughly chop the celery, then peel, trim and chop the carrots into 2cm rounds.
  • Splash a little more oil into the pan, then add the veg. Strip the leaves from the thyme and add to the pan, then cook for 10 to 15 minutes, or until the vegetables are softened.
  • Return the beef to the pan, then stir through the tomatoes and wine. Once the liquid has been absorbed, add the stock, bay leaves and a splash of Worcestershire sauce.
  • Season with sea salt and black pepper, then transfer the stew to the oven to cook for 3 to 4 hours, or until the meat is tender and pulls apart easily with forks.
  • Serve your beef stew with creamy mashed potato and, if you like, a glass of your favourite red wine.
