Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- Cream shortening, sugar and eggs together, then beat in vanilla. Sift the flour, salt and baking soda together, and add to shortening mixture. Mix until well blended. Stir in the nuts and mincemeat and mix well. Drop by teaspoonfuls on the cookie sheet.
- Bake 8 to 10 minutes until light brown.

- Heat the oven to 180C/160C fan/gas 4. Beat the butter with both types of sugar and the salt. Beat in the egg, vanilla extract and mincemeat. Stir in the flour and bicarbonate of soda, then chill for 20 mins.
- Scoop tablespoons of the mixture onto two lined baking sheets, leaving a bit of space between each so they can spread. Bake for 10-12 mins, or until the cookies are just firm around the edges but still soft in the middle - they will firm up as they cool. Transfer to a wire rack and leave to cool.

- Heat the oven to 180C/160C fan/gas 4 and line two baking sheets with baking parchment. Beat the butter and sugar until very light and fluffy, then beat in the egg and vanilla. Stir in the mincemeat until combined, then the flour, bicarb, cinnamon, chocolate and ¼ tsp salt.
- Scoop tablespoons of the mixture onto the sheets, leaving space between each for spreading. Bake for 10-12 mins, or until firm at the edges but soft in the middle - they will firm up a little as they cool. TRADITIONAL BRITISH MINCE PIE
Steps:
- Gather the ingredients.
- Place the flour, butter, and salt into a large clean bowl.
- Rub the butter quickly into the flour with your fingertips until the mixture resembles rough sand.
- Stir the egg into the mixture using a cold knife.
- Add the cold water, a teaspoon at a time, and stir until the mixture binds but is not sticky.
- Wrap the dough in plastic wrap and chill for a minimum of 15 minutes and up to 30 minutes.
- Gather the ingredients.
- Preheat the oven to 400 F / 200 C / Gas Mark 6. Choose a muffin or bun tin for the size of the tart you want. Choose from a standard 12-cup muffin tin down to small canapé size. The number of pies will depend on the size of the tin you use.
- Dust a work surface lightly with a little flour and roll out 2/3 of the pastry to 1/8 inch thick. Cut circles to line the cups of your tin; don't worry if the pastry doesn't come to the very top.
- Fill the pastry-lined tins 2/3 full with mincemeat.
- Roll out the remaining pastry to the same thickness and cut smaller circles to fit as lids on the tarts or, to be decorative, cut stars or other fancy shapes.
- Dampen the edges of the tart bases with a little cold water and press the lids on. Make a small hole in the surface of each pie with a small sharp knife to allow the steam to escape.
- Bake in the preheated oven for 20 minutes (15 minutes if making canapé-sized ones), or until golden brown.
- Let cool and sprinkle with the confectioners' sugar.
- Serve and enjoy.

MINI MINCE PIES
Mince Pies are a Christmas staple in the UK. These sweet and boozy mini fruit pies are the perfect recipe to add to your Holiday cookie platter! Yield: 24 mini pies

- In a medium bowl mix the flour and salt.
- Cut butter into the flour mixture with a fork or pastry blender until the flour has the consistency of sand and the butter is evenly distributed.
- Add 6-7 Tbsp of water slowly and mix with fork until the dough clumps together around the fork. It should clean the edges of the bowl and nearly come together on its own. All it should need is a gentle press together to come into a clean ball.
- Roll out the crust on a lightly floured surface to roughly 1/8 inch thick.
- Preheat your oven to 350F.
- Cut the rolled crust into small circles that fit nicely into your mini muffin tin. (We used roughly 2 ¼ - 2 ½ inch circles.) Re-roll the crust dough as necessary to fill 24 mini muffin tins.
- Spoon roughly 1 Tbsp of mincemeat into each crust shell.
- Roll out the leftover crust and use a cookie cutter to cut out a star or other shape for the top crust.
- Bake the mini mince pies for 30-35 minutes, until golden.
- Remove the pies from the oven and let them cool for 10 minutes in the pan before removing them to cool completely on a wire rack.
- Store the mini mince pies in an air-tight container for up to 2 weeks on the counter.
MINI MINCEMEAT PIE COOKIES WITH RUM
I've never had homemade mincemeat, so that may be a different taste, but really like the jarred mincemeat pie filling! It's awfully sweet, though, so I like to add one granny smith apple and a little rum! :D ;) This recipe makes cute little mini "pies" and everyone always asks what's in them? They are always surprised to know!...

- 1. In small bowl, mix together the pie filling, apple and rum. Roll pie pastry on lightly floured surface to 1/8 inch thickness. Using floured cutter, cut into 4-inch diameter rounds. Re-work scraps of pastry once. Combine egg and water; mix well. Place 1 ounce (1 tablespoon) filling in center of one round. Brush edges with egg wash. top with another round. Seal edges with a fork. Place on parchment paper-lined baking sheet. Repeat with remaining rounds. Brush top of cookies with egg mixture. Cut slit in top to allow steam to escape during baking. Sprinkle lightly with sugar. Bake in preheated 400 degree oven 10 to 12 minutes or until light golden. Remove from baking sheet and let cool completely on wire racks.
- 2. *If using store-bought pie pastry, you may need to roll each sheet thinner to have enough. They make them too thick anyways. Homemade is best, though.
