ONION BURGERS
Early in the writing of this book, I struggled to get my ruminations on paper. Although I hesitate to call my temporary impasse writer's block, I can't imagine much worse. Words wouldn't come. And the ones that did weren't smart or engaging or funny. After an eternity of fretting, I began making burgers for lunch. My intent was to cook my way through the recipes I planned for the book. This onion burger was the first thing I tried. After 2 days of oniony repasts, the dark cloud lifted and the words came.

Steps:
- Place a heavy skillet over medium-high heat. Leave it there for 5 minutes. Loosely gather a handful of ground beef and slip it into the pan. Repeat 6 times. The burgers should be freeform lumps.
- With the side of a spatula, push the burgers into a semblance of a round. After about a minute, pile on all the onions and then, with as much force as you can manage, smash the onions into the meat. Again, work the sides of the patties into a semblance of a round. Cook another minute and then flip. Season with salt. Smash the burgers again, hard.
- Place burger on bottom half of the bun and spread with mustard. Spread the cheese on top half of the bun and place on the burger.
ONION BURGERS
Steps:
- Brown ground beef and drain. Sprinkle in the flour. Add onion soup, stir and cook until meat mixture is thickened and most of the liquid is absorbed.
- Spread mustard and mayonnaise, to taste, on bread. Spoon the ground beef mixture onto bread and top with onion.
GARLIC AND ONION BURGERS
This recipe makes very flavorful burgers. The secret is refrigerating the meat after adding the other ingredients. Use ground round or sirloin for the best results.

- In a large bowl, mix together the beef, Worcestershire sauce, garlic, onion, salt, pepper and Italian seasoning. Refrigerate for 2 to 4 hours.
- Preheat grill for high heat.
- Form burgers into 1/2 inch thick patties. Lightly oil grate. Place burgers on grill. Cook for approximately 6 minutes, turning once.

MINCE AND ONION BURGERS
Steps:
- 1.Put the mince in a mixing bowl, add the onion, egg and salt & pepper. Mix well 2.Lightly flour your hands and the chopping board, divide the mixture into 4-6 equal portions and shape into burgers 3.Chill the burgers in a fridge for 10 minutes. Preheat the grill, place the burgers on the grill and brush with oil. 4.Grill the burgers for 4-6 minutes and turn them over. Grill for a further 4-6 minutes until done. 5.Cut the buns in half and toast them. Chop your salad up. 6.Place a handfull of letuce in each bun, then add the burger. Garnish with a tomato and serve with a choice of sauce.

- Tip the mince into a bowl with the spring onions, grated carrot, garlic, mustard, tarragon and egg. Mix well using a fork. Season with pepper and a pinch of salt, then divide the mixture into 4. Flatten each piece with your hands into a 10cm round (A), about 2cm thick - a similar width to the buns. Chill for about 30 mins. Or can be made a day ahead: stack the burgers between pieces of greaseproof paper to stop them sticking, wrap in cling film then chill until ready to cook.
- Meanwhile, heat oven to 200C/fan 180C/ gas 6. Lay the peppers, cut sides down, on a non-stick baking sheet. Roast for 35 mins until the skins are charred, laying the tomatoes next to them, cut-side up, for the final 3 mins just to soften slightly. Remove and immediately transfer the peppers to a small bowl and cover with cling film. Leave for 5-10 mins until cool enough to handle. Peel off the pepper skins (B), chop the peppers and tip them back into the bowl to join any juices there. Chop the tomatoes and stir into the peppers with the lime juice, chives, onion and chillies. Taste and add a grind of pepper if needed. Set aside. Can be made 1-2 days ahead and chilled.
- Heat a griddle pan, or cook the burgers on the barbecue. Lay the cut sides of the buns on the griddle and cook until marked with the griddle bars. Brush each burger on one side with some of the rapeseed oil. Place on the hot griddle, oiled side down. Cook - don't move them or they may stick - for 5 mins for medium, brush the unoiled side with the rest of the oil (C), then turn and cook for another 5 mins. (For well done, add an extra 1-2 mins to each side.)
- Remove and let the burgers rest for 2-3 mins. Drizzle a little of the pepper juices over the bottom of each bun to moisten, lay on some watercress sprigs, top with a burger, then a spoonful of the salsa (D), spooning over some more of the juices. Sandwich together with the tops of the buns.

HOME MADE BEEF BURGERS
Delicious beef burgers perfect for barbequeing

Steps:
- Heat up the oil in a frying pan and add the diced onions.
- Reduce down the heat and let the onions sweat slowly, adding in the garlic to ensure it doesn't burn and become bitter.
- Add the beef to a mixing bowl and break up with your fingers.
- Tip in the onions and garlic, once cooled slightly and mix together thoroughly.
- Add salt and pepper and the dijon mustard.
- Pour in the egg and ensure that it has been mixed right the way through the beef and onions.
- Seperate the mixture into 4 portions and start moulding using your hands into burgers. Create a depression in the centre, this will ensure the burgers cook evenly and flat. Place in the fridge to chilled and stiffen.
- Once chilled and with the barbeque lit and the coals simmered down, place the burgers on the BBQ.
- Ensure that each side has sealed, if not they'll fall apart when you lift them off. Turn them over until cooked through or to the desired pinkness in the centre.
- Serve on crusty ciabatta with fresh watercress or leafy salad and enjoy. These can be frozen and defrosted for use later on.
ONION AND CHEDDAR BURGERS
For an extra Italian twist, substitute 3/4 cup grated Parmesan cheese for the cheddar cheese. Enjoy!

KITTENCAL'S ONION AND GARLIC HAMBURGERS/BURGERS
These and of coarse any burger is at it's best made on an outdoor grill, these are delicious oven-broiled, pan fryed or on an indoor grill such as a George Foreman grill --- if you are a garlic-lover you will love these and you may adjust the garlic to taste --- plan ahead the patties need a minimum of 6 hours or 24 hours chilling time to blend flavors together --- I have left the cayenne pepper as optional my family likes spicy so I always add it in if you like some heat then include it into the mixture, you may also add in 1 slightly beaten egg if desired.

- Mix all ingredients together using clean hands adding in a small amount of breadcrumbs or crushed cracker crumbs ONLY if needed to hold the mixture together.
- Shape into six patties.
