Steps:
- Cut bacon into thick chunks, pan fry until crunchy. Remove from pan and set aside.
- Drain off most of the bacon fat - leave a little if desired for taste, but too much will give an oily texture.
- Heat butter in large pan on medium-high heat until melted and foamy.
- Add diced onions to pan, cook until soft and transparent, about 4 minutes. Stir to prevent sticking or burning.
- Add garlic and cabbage to the pan, tossing evenly to coat in butter.
- Generously season with salt and pepper.
- Let cabbage reduce by half, about 8 minutes, stirring occasionally as it cooks down to prevent burning and allow it to cook evenly. Add bacon back to pan.
- When cabbage has lost much of it's volume and started to turn shiny, slightly translucent, and has lovely browned bits, it is ready to serve.
- Serve immediately.
- Leftovers can be stored in an airtight container in the refrigerator for up to four days, three months in the freezer.

SAUTéED CABBAGE AND ONIONS
Steps:
- I find that when I buy a good-sized green cabbage and use a small amount in a recipe, the remainder often languishes in the fridge. This is an ideal way to use up green cabbage while it still has some flavor. For this preparation, you can use half or even most of a cabbage. In a large skillet or stir-fry pan, sauté a quartered and thinly sliced onion in some olive oil. When it starts to turn golden, stir in thinly sliced cabbage. Cook, covered, until the cabbage wilts. If the pan dries out, add just enough water to moisten. Once the cabbage is wilted, uncover and cook until both the cabbage and onion begin to brown, stirring frequently. Add a sprinkling of poppy seeds, if you like.

- Heat a 12" skillet with olive oil over medium heat. Add the chopped onion and cook until onion is softened, about 3-4 minutes. Add the garlic and stir, cooking an additional 30 seconds.
- Turn heat up to medium-high heat and add about 1/3 of the cabbage. Stir to mix onions and garlic with the cabbage. Now leave it alone and let the cabbage start to brown, but be careful not to let it burn. Using a spatula, turn the cabbage over and let other side brown slightly. Season lightly with a dash of salt.
- Add another 1/3 of the cabbage and 1 tablespoon butter. Flip cabbage again after a couple minutes.
- Finish with remaining cabbage and last tablespoon of butter. Once cabbage is browned to your liking, add more salt to taste and pepper, if desired. Remove from heat, season with red pepper flakes, if desired. Serve.

- In a large skillet, cook the bacon until crispy. Place the cooked bacon on a paper towel to absorb the extra oil. Crumble all the bacon when it is cool enough to the touch. Drain all the bacon drippings from the skillet except 1-2 tablespoons. (Chop the onion and cabbage while the bacon is cooking.)
- Add the diced onion directly to the skillet and saute over medium heat for about 5 minutes, or until the onion starts to brown and turn translucent. Add the garlic and mix well.
- Add the sliced cabbage, sugar if using, salt, and pepper (see notes). Mix well to move the onion from the bottom of the pan. Cover with a lid and cook for 15-20 minutes, stirring frequently. Add the crumbled bacon and mix well. Continue cooking if you like your cabbage softer, otherwise remove from heat and stir in the fresh herbs. Serve hot.
