Steps:
- Combine all ingredients except the pecans in a heavy saucepan. Over medium heat stir mixture until it comes to a boil. Turn heat down to medium-low and continue to stir. Spoon mixture up on sides of pan to melt any sugar that hasn't melted.
- Cook until mixture reaches 238 to 241 degrees F on a candy thermometer or soft ball stage. Stir in the pecans. Remove from heat. Stir until the mixture begins to thicken and becomes creamy and cloudy. Drop onto parchment paper, buttered pan or buttered marble slab, using a spoon or ice cream scoop. Let cool.

EASY PECAN PRALINE RECIPE
Pralines are a tantalizing combination of brown sugar and pecans and a classic southern treat. With our easy pecan praline recipe you can make this melt-in-your-mouth candy at home anytime in less than an hour!

Steps:
- Prepare a muffin tin by filling with cupcake liners; set aside.
- Add all ingredients to a large pot over medium-high heat. Stir consistently as you bring to a boil.
- Use a candy thermometer to check the temperature - when it reads 235-240°F remove pan from heat. (This should take about 10 minutes or so).
- Use wooden spoon to vigorously stir the mixture, so that it thickens as it cools and starts to have a cloudier appearance. This should take anywhere from 2-5 minutes.
- While the mixture is still hot, use a cookie scoop to portion out the praline mixture into your muffin tin. You want to make sure to cover the bottom of each cupcake liner.
- Allow to cool completely until firm.
- Remove the cupcake liner before serving.

- Line a baking sheet with parchment.
- Combine the pecans, granulated sugar, brown sugar, cream, butter, corn syrup and vanilla in a large Dutch oven fitted with a candy thermometer. Bring to a boil over medium heat, stirring constantly with a wooden spoon. Cook until the candy thermometer registers 236 degrees F, 6 to 8 minutes.
- Remove from the heat and continue stirring for 1 minute; the mixture will begin to thicken. Working quickly, carefully pour the praline mixture onto the prepared baking sheet and spread thin before it starts to set. Allow to cool and harden for at least 10 minutes.
- Break into serving-size pieces. Store in an airtight container.

- Line a baking sheet with aluminum foil.
- In large saucepan over medium heat, combine pecans, sugar, butter, brown sugar, milk and vanilla. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
- Drop by spoonfuls onto prepared baking sheet. Let cool completely.

MIMI'S PECAN PRALINES
I make these every year for Christmas. They are my favorite and have been since in the late 70s.

- 1. Combine all ingredients except for butter, vanilla and pecans in a heavy saucepan over medium heat. Bring to a boil, stirring until the sugars dissolve. Cook until the soft ball stage. Remove from heat.
- 2. Prepare an area to spoon the candy out onto. I use wax paper but you could also use parchment paper. TIP: I have found that if you let the candy mixture cool some first then you don't have to beat it as long
- 3. Add butter, vanilla and pecans to saucepan. Beat until it starts to thicken and loses some of its gloss. Spoon out quickly onto prepared countertop in the size you prefer. Store in a covered container.
MINI SOUTHERN PECAN PIES
These tasty, pecan-filled mini pies are great for the holidays or an easy, elegant dessert anytime. The use of light corn syrup lets the pecan goodness shine through, rather than overwhelming with sugary sweetness. Be careful when eating these - if you get some of the filling on your face, your tongue may beat you to death trying to get to it! Try serving warm with vanilla ice cream. - Place pecans on a food processor and pulse until coarsely chopped.

- In a heavy saucepan, mix together the brown sugar, 1/2 cup white sugar, evaporated milk and the Karo syrup.
- Bring to a rolling boil, slowly stir in remaining 1/2 cup of white sugar while keeping the mixture boiling; cook to soft ball stage.
- Add the butter and pecans, remove from heat and beat with a spoon until mixture holds its shape.
- Pour onto waxed paper in 2 to 3 inch rounds, allow to cool completely, wrap individual pralines in plastic wrap and store in a cool dry place until eaten.
