Millionaire Pie is a family favorite. A rich creamy base is loaded with pecans, coconut, pineapple and cherries. You'll need just about 5 minutes to prepare this pie and no baking is required!

1 prepared graham cracker crust
1 cup sweetened flaked coconut
1 can (15.25oz crushed pineapple, well drained)
1 cup maraschino cherries (drained & chopped)
½ cup pecans (chopped)
1 can Sweetened Condensed Milk (14 oz)
5 tablespoons lemon juice
1 tablespoon maraschino cherry juice
1 ½ cups whipped topping (plus extra for garnish if desired)

Steps:

  • In a large bowl, combine coconut, crushed pineapple, maraschino cherries, pecans, (Eagle Brand) Sweetened Condensed Milk, lemon juice and maraschino cherry juice.
  • Gently fold in whipped topping. Pour into crust.
  • Top with additional whipped topping and cherries if desired. Refrigerate 3 hours or overnight.

This luscious, silky pie calls for a baked pie shell, and the flaky contrast with the gooey filling is really good. But if you're running short on time, you can substitute a graham cracker crust to eliminate that step. Do remember to chill the pineapple though. Simply put the can in the refrigerator as soon as you bring it home from the grocery store. Taken from the "From Storebought to Homemade" cookbook. Note: cooking time is refrigeration time.

1 pie shell, fully baked (or graham cracker crust)
1 (8 ounce) package cream cheese, softened
2 cups confectioners' sugar
1 cup crushed pineapple, drained and chilled
1 (12 ounce) container Cool Whip, at room temperature
1/2 cup pecans, chopped (optional)

Steps:

  • If using a traditional pastry shell, bake it according to package directions.
  • Combine the cream cheese, sugar, pineapple and Cool Whip; blend well.
  • Transfer the filling to the pie shell and, if you wish, sprinkle the top with chopped pecans.
  • Cover and chill for several hours.

  • Blend together the cream cheese and condensed milk; gently fold in the whipped topping.

1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1 (8 ounce) can crushed pineapple, undrained
1 cup grated coconut
1 cup chopped pecans
1 (8 ounce) carton whipped topping, thawed (OR 2 cups whipping cream, whipped and sweetened with 3 tablespoons of sugar)
prepared 9 inch pie shell or graham cracker crust

Steps:

  • Cream together the softened cream cheese and the sugar with an electric mixer, letting the mixer run for 3 or 4 minutes on high speed.
  • Stir into the cream cheese mixture the crushed pineapple, coconut and pecans, and mix well.
  • Carefully fold in half of the whipped topping until filling is blended well.
  • Reserve remaining half for top (see below).
  • Pour filling into a prepared crust, and chill for several hours.
  • Notes: Millionaire Pie can be garnished with a dollop of the whipped topping when served, or you can spread the remaining half of the topping over the whole pie and garnish with a sprinkling of chopped pecans.

1/2 cup sugar, plus 3 tablespoons
Grated zest of 1 lemon
2 tablespoons fresh lemon juice
1 cup chopped pecans, lightly toasted
1 cup sweetened flaked coconut
1 cup diced fresh strawberries, plus whole ones for garnish
1 cup diced fresh pineapple or canned pineapple chunks, well drained and diced (do not use crushed pineapple)
1 cup heavy cream
1/2 teaspoon vanilla extract
1 9-inch prepared graham-cracker crust

Steps:

  • Beat the cream cheese, 1/2 cup sugar, zest and lemon juice in a large bowl with the mixer at high speed until smooth. Fold in the pecans, coconut, strawberries and pineapple.
  • Beat the heavy cream, 3 tablespoons sugar and vanilla in a chilled bowl until stiff; fold half the mixture into the cream-cheese mixture. Pour into crust; spread rest of whipped cream on top. Garnish with whole berries. Refrigerate at least 4 hours or overnight.
