This dressing was so very tasty at a Provident Living expo. The person who made this was hosting a booth featuring several different grains one could make use of when storing food for emergency preparedness.

1 cup millet
2 cups water
1 onion, chopped
1/4 cup butter
2 eggs
1 (14 1/2 ounce) can whole kernel corn, undrained
1 1/2 teaspoons salt
1 tablespoon parsley
1 tablespoon poultry seasoning
3/4 teaspoon pepper

Steps:

  • Microwave millet and water in a microwave-proof bowl for 15 minutes; set aside.
  • Sauté onion in butter over medium high heat until onion is very tender.
  • Mix onion with millet.
  • Beat together eggs, corn with juice, and remaining 4 ingredients.
  • Combine egg mixture with millet.
  • Place all in a 9x13-inch pan.
  • Bake, covered, at 325°F for 40 minutes.

1/2 cup millet
1 1/2 cups hot water
1/8 teaspoon salt
1/4 cup canned chick-peas, drained and rinsed
1/4 cup carrot, finely chopped
1/2 medium red bell pepper, chopped
2 tablespoons raisins
5 -6 tablespoons curry, ginger dressing
3 cups lettuce
1 1/2 tablespoons fresh cilantro or 1 1/2 tablespoons fresh parsley, chopped
3 tablespoons unsalted dry roasted peanuts, chopped
curry, ginger dressing
2 tablespoons rice vinegar
1/4 cup canola oil
1 tablespoon brown rice miso
1/2-3/4 teaspoon curry powder
1/4-1/2 teaspoon minced ginger
1 small garlic clove, minced
1 teaspoon brown sugar
1 tablespoon warm water

Steps:

  • In a dry, 4 quart saucepan, toast the millet on medium hear for 3 to 5 minutes, stirring constantly, until it becomes fragrant.
  • Carefully pour the water into the pot in a steady stream. Add the salt and bring to a boil. Reduce the heat to low and stir. cover and cook for 25 to 30 minutes. Set aside to cool for a few minutes.
  • Fluff the millet with a fork. Add the garbanzo beans, carrot, red pepper, and raisins. Drizzle with Curry-Ginger Dressing and toss to coat the grain. Taste, add more dressing if necessary.
  • Tear the lettuce into bite sized pieces. Arrange the lettuce on plates and add the millet. Garnish with cilantro and peanuts and serve.
  • Dressing: combine ingredients in a small bowl and stir to dissolve the miso and sugar. The dressing with keep in the fridge, covered, for a week.

I needed to recreate a family favorite to work with my allergies. This is a perfect basic stuffing recipe. Delicious as is, or ripe for your favorite add-ins! No need to exclude anyone THIS holiday season!

1 (1 pound) loaf gluten-free bread (such as Udi's® Millet-Chia bread)
3 tablespoons olive oil
2 onions, diced
3 stalks celery, diced
1 teaspoon chopped fresh sage
1 teaspoon dried thyme leaves
¾ teaspoon salt
ground black pepper to taste
2 cups gluten-free chicken broth
2 large eggs

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 3-quart baking dish.
  • Cut bread into cubes about 3/4-inch square and spread onto a baking sheet.
  • Bake in the preheated oven until crisp, 12 to 17 minutes.
  • Heat olive oil in a large skillet over medium heat. Cook and stir onions and celery in the hot oil until soft, 8 to 10 minutes. Stir sage, thyme, salt, and black pepper into the vegetables. Mix toasted bread crumbs, chicken broth, and eggs into vegetables. Spoon dressing into the prepared baking dish and cover dish.
  • Bake in the preheated oven for 30 minutes, uncover, and bake until top of dressing is crisp and lightly browned, about 10 more minutes.

  • Add the millet and water to a medium saucepan. Bring to a boil over high heat, reduce the heat to low, cover, and simmer for 10 minutes, or until most of the water is absorbed and the millet has puffed up a bit. Remove from the heat and let stand, covered, for 5 minutes, or until the remaining water is absorbed. Remove the lid and fluff with a fork.
  • Meanwhile, prepare the vinaigrette. In a small spouted mixing bowl, whisk together the olive oil, lemon juice, red onion, sea salt, and black pepper until emulsified.
  • In a large mixing bowl, combine the millet, tomatoes, scallions, parsley, mint, and hemp seeds (if using). Pour the vinaigrette over top and toss to coat. Taste and season with more sea salt and black pepper, if desired.
  • You can enjoy it as is, but I recommend refrigerating it for at least 30 minutes to marinate and allow the flavors to meld. Keep chilled until serving.
