This is the best chocolate pie I've ever had. It's cool and rich, and it melts in your mouth. Best of all, it takes just 10 minutes to whip up and pop into the freezer. -Kathy Crow, Payson, Arizona

1 cup milk chocolate chips
1/2 cup milk, divided
3 ounces cream cheese, softened
1 carton (8 ounces) frozen whipped topping, thawed
1 chocolate crumb crust (9 inches)
Milk chocolate kisses and additional whipped topping, optional

Steps:

  • In a microwave or double boiler, combine chocolate chips and 1/4 cup milk. Cook until chips are melted; stir until smooth. , In a bowl, beat cream cheese and remaining milk until smooth. gradually beat in the chocolate mixture. Fold in whipped topping. Pour into crust. , Freeze for 4-6 hours or overnight. May be frozen for up to 3 months. Remove from the freezer 5-10 minutes before serving. Garnish with kisses and whipped topping if desired.

6 ounces vanilla wafers, such as Nilla Wafers (about 46)
5 tablespoons unsalted butter, melted
2 tablespoons granulated sugar
1/4 teaspoon kosher salt
1/3 cup granulated sugar
1/4 cup cornstarch
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 large egg yolks
2 1/2 cups whole milk
4 ounces milk chocolate, coarsely chopped (2/3 cup)
2 ounces semisweet chocolate, coarsely chopped (1/3 cup)
2 tablespoons unsalted butter, room temperature
1 cup heavy cream
2 tablespoons confectioners' sugar
1 vanilla bean, split and seeds scraped

Steps:

  • Crust: Preheat oven to 375 degrees. In a food processor, pulse wafers until finely ground (you should have 1 1/2 cups). Add butter, granulated sugar, and salt; pulse to combine. Firmly press mixture into bottom and up sides of a 9-inch pie dish. Freeze 15 minutes. Bake until dry, about 12 minutes. Let cool completely.
  • Filling: In a medium saucepan, whisk together granulated sugar, cornstarch, cinnamon, and salt. Whisk in egg yolks, then milk. Bring to a boil over medium-high heat, whisking constantly, then cook 2 minutes more. Remove from heat and whisk in both chocolates until melted, then butter. Pour filling into crust; let stand 30 minutes. Refrigerate 1 hour. Press plastic wrap directly onto surface; refrigerate until set, at least 2 hours more and up to 2 days.
  • Topping: Whisk cream with confectioners' sugar and vanilla to medium peaks. Dollop on top of pie. Serve immediately. (For cleanest cuts, wipe knife between slices.)

You can change this to suit your tastes, like using semisweet chocolate chips if you prefer a not-so-sweet dessert, or using graham cracker crust instead of chocolate crust. You can also garnish this with chocolate kisses, chocolate shavings, more whipped cream, etc.

½ cup milk
1 (7 ounce) bar milk chocolate candy (such as Hershey's®), broken into pieces
2 cups whipping cream
1 (9 inch) prepared graham cracker crust

Steps:

  • Melt marshmallows with milk in a microwave-safe container in a microwave in 30-second increments, stirring between each, until smooth. Slowly add chocolate and stir until completely melted.
  • Beat whipping cream in a separate bowl using a mixer until thick. Stir into chocolate mixture. Pour into pie crust.
  • Cover and refrigerate for 4 hours.

1 frozen pie shell
3 tablespoons cocoa powder
1 cup sugar
2 cups milk
6 tablespoons flour
3 egg yolks
2 tablespoons butter
1 teaspoon vanilla
3 egg whites
6 tablespoons sugar
1 dash cream of tartar
1 dash salt

Steps:

  • Put pie shell in the oven to pre-cook for a couple of minutes, until lightly browned.
  • Mix and cook filling ingredients in the top half of a double boiler.
  • Stir constantly until mixture begins to thicken. This will take about 20 minutes. The texture should resemble a pudding.
  • Put on lid and let cook for 10 minutes.
  • Remove from heat and stir in butter and vanilla.
  • Pour into baked pie shell.
  • Beat egg whites and salt until almost stiff.
  • Add a large dash of cream of tartar.
  • Add sugar one tablespoon at a time.
  • Beat until stiff peaks form.
  • Top chocolate with stiff egg whites.
  • Bake at 375 degrees until meringue is lightly golden.

¼ cup unsweetened cocoa powder
¼ cup all-purpose flour
3 egg yolks
1 ⅓ cups white sugar
1 (12 fluid ounce) can evaporated milk
3 tablespoons butter
1 (9 inch) pie shell, baked
3 egg whites
⅛ teaspoon cream of tartar
6 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift together the cocoa powder and the flour and pour them into a saucepan. Whisk the egg yolks and 1 1/3 cups sugar. Gradually add the evaporated milk, whisking constantly; slowly pour the milk mixture into the saucepan, whisking until combined.
  • Cook over medium heat, stirring constantly with a flat-bottomed wooden spoon or spatula, until the mixture begins to thicken and coats the back of the spoon, about 15 minutes. Remove the custard from the heat and stir in the butter until melted. Pour the filling into the baked pie crust.
  • To make the meringue topping: Combine the egg whites and cream of tartar in a clean glass or metal bowl; beat with an electric mixer until foamy. Gradually add sugar, a tablespoon at a time, continuing to beat until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks. Spread the meringue over the chocolate filling.
  • Bake in the preheated oven for 10 minutes, or until the tips of the meringue peaks are golden brown.
