EASY MILK AND HONEY BREAD (5 INGREDIENTS)
Steps:
- In a large glass bowl, warm milk in the microwave for about 1 minute or until milk is very warm, but not hot to touch. (Between 105˚ and 110˚F is ideal for dissolving and activating yeast)
- Add yeast to milk and whisk until dissolved.
- Stir in honey, salt and flour.
- Using a hand or stand mixer with dough hook(s), knead the dough for 2 minutes until a ball is formed. (If you do not have a mixer with a dough hook, you can knead by hand for 10 minutes.)
- Place ball of dough into a large bowl greased with oil. Cover loosely with a towel. Set in a warm place (80˚ - 90˚F air temp) for 1 hour to let rise.
- After an hour, remove towel and punch down dough. Then gently gather the dough and without pressing into it, place the dough into a greased loaf pan. I place the dough punched side down in the bread pan so that top stays more smooth.
- Bake in a preheated oven at 375˚for 30 minutes.
- Remove loaf from oven and let cool. Slice and serve warm or toast each slice. Best enjoyed buttered. Try adding jelly as well!

DELICIOUS MILK AND HONEY BREAD - 2 LOAVES
Wow - this is delicious bread! I'm always trying new bread recipes and am glad I ran across this one in a recent magazine! It is delicious! Enjoy! This makes two loaves. Updated 2/10/05 - I just wanted to update that I halved this recipe and did the dough in the dough cycle and it turned out wonderfully. I did use a full package of yeast instead of halving that. I took the dough out of the ABM and let it rise one more time in the loaf pan. Then I baked it at 375 degrees for 35 minutes.

- Turn onto a floured board; knead until smooth& elastic, about 6-8 minutes.
- Place in a greased bowl, turning once to grease top.
- Cover& let rise in a warm place until doubled, about 1 hour.
- Punch dough down& shape into two loaves.
- Place in greased 9x5x3" loaf pans.
- Cover& let rise until doubled, about 30 minute Bake at 375º for 30-35 minutes or until golden brown.
- Cover with foil if necessary to prevent overbrowning.
- Remove from pans& cool on wire racks.

- Preheat oven to 350 degrees.
- Butter loaf pan.
- In medium saucepan, combine 1/2 cup honey and milk; Stir over medium heat until honey dissolves.
- Stir in melted butter.
- Set aside to cool.
- Sift flour, sugar, baking powder and salt into large mixer bowl.
- Add pecans and toss to coat.
- Set aside.
- Whisk egg into cooled milk mixture.
- Add to flour mixture.
- Beat at medium speed just until blended.
- Pour into pan and smooth top.
- Bake for 65-75 minutes until toothpick comes clean from center.
- Cool on rack 10 minutes, Remove and cool again on rack.

MILK AND HONEY LOAF
I am not sure why this is called Milk and Honey Loaf. There is no milk in the recipe. I have only recently started making bread, and this is the recipe a friend started me with. It has been passed from person to person for some time, and is very easy.

- In a large bowl, dissolve yeast in warm water. Allow yeast to sit until it begins to form bubbles.
- Add honey, butter, and salt to the yeast mixture. Stir in flours one cup at a time, beginning with the rye. When the dough begins to stiffen, turn it out on to a well floured surface. Knead for 5 minutes, adding flour as needed. Place into a greased bowl, and turn once to oil the surface of the dough. Cover with a damp cloth. Allow to rise in a warm place until doubled, approximately 1 to 2 hours.
- Punch down dough, and knead again until smooth. Split into 3 loaves, and knead for a few more minutes. Place loaves in three oiled pans. Allow to rise until double, 1 to 2 hours.
- Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until golden brown. Cool in pans for 10 minutes, and then turn out onto counter or wire rack to completely cool.

- Combine all ingredients in the bowl of a heavy-duty electric stand mixer fitted with a dough hook. (If using a bread machine, put everything in the bucket and select the dough cycle.). Stir for a minute and evaluate the consistency of the dough. It should form a ball and clear the sides of the bowl. If it is crumbly and not coming together, add a bit more milk. If it is sticking to the bowl, add a bit more flour. (If using a bread machine, skip to step 4.)
- Knead the dough until it is smooth, bouncy, and elastic. To see if the gluten is developed, take a golf ball sized piece of dough and stretch it out to see if if translucent areas form. If these areas are visible, the dough is sufficiently kneaded.
- Shape the dough into a ball and place into a lightly oiled bowl. Cover with a clean damp tea towel and place in a slightly warm place to rise. Allow it to double in bulk, about 45 to 60 minutes.
- Shape the dough into a loaf by spreading it out into a rectangle. The short side of the rectangle should be roughly as long as the loaf pan. Tuck the corners in and roll up into a cylinder, then tuck the ends in. Place into a greased loaf pan and lightly cover with oiled plastic wrap. Place the dough in a warm place and allow to rise until very puffy and the top of the dough has risen 1 inch over the top of the loaf pan. Towards the end of the rising time, preheat the oven 350 degrees.
