This amazing salsa recipe is a family favorite, shared by my sister-in-law Rosanna. Great for those summer-fresh veggies! Wear gloves to avoid 'burns' from chopping peppers! ENJOY! Fabulous to add in some fresh cilantro and oregano also!

14 cups roma tomatoes, chopped (you can substitute 'standard' tomatoes, but they will be juicier)
3 cups onions, chopped
1/2 cup jalapeno pepper (chopped or minced)
1 cup green pepper, chopped
1/2 cup vinegar
1/2 cup tomato sauce
3 tablespoons salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 1/2 teaspoons cumin
5 tablespoons Clear Jel, that will not break down in high heat during processing. don't substitute (Clear Jel is a modified food starch (powdered form)
5 garlic cloves, peeled and minced (optional)

Steps:

  • Wash tomatoes and dip in boiling water for 30 to 60 seconds or until skins split.
  • Dip in cold water, slip off skins, and remove cores.
  • Chop all the vegetables and place them into a large saucepan.
  • Stir in next six ingredients.
  • Mix ClearJel with a little water until smooth; add slowly to chopped vegetables.
  • Heat to boil and simmer 10 minutes.
  • Fill jars, leaving 1/2-inch headspace.
  • Place lids, screw on bands fingertip-tight and process in a boiling water bath for 15 minutes at up to 1000 feet in elevation; 20 minutes up to 6000 feet in elevation and 25 minutes over 6000 feet.

Summer heat came late and left a bit early this year...leaving lots of green tomatoes! This "throw together" green tomato salsa was declared "the best salsa I've ever had" by my brother-in-law. Cooking time includes canning process.

5 lbs green tomatoes, chopped small (as you prefer for salsa)
6 yellow onions, chopped (4 cups)
3 jalapenos, chopped with seeds (1/2 cup)
4 large red bell peppers, chopped (2 cups)
6 garlic cloves, minced
1 cup fresh cilantro, chopped
1 cup lime juice
1/2 cup vinegar
1 tablespoon salt
1/2 tablespoon cumin
1 tablespoon dried oregano leaves
2 teaspoons pepper
1/4 teaspoon cayenne (optional, to taste)
1 -2 teaspoon sugar

Steps:

  • Combine everything in a large pot, mixing well. Bring to a boil, reduce heat to simmer, and cook for 30-40 minutes, stirring occasionally.
  • To continue canning, bring salsa to a boil.
  • Ladle salsa into hot sterile jars, leaving 1/2 inch headspace. Wipe lids and jar edges clean before finger tightening lids and placing them back in the boiling canning pot.
  • Process (boil) jars for 15 minutes.
  • Remove carefully and let sit for 24 hours. Check lids for seal, and refrigerate any unsealed jars.

Steps:

  • In a large stockpot over medium heat, cook the tomatoes, uncovered, for 20 minutes. Once cooked, drain out the tomatoes and keep 2 cups of liquid aside.
  • Place the tomatoes back in the pot and add the green peppers, sweet red peppers, onions, celery, garlic, chili, tomato paste, white vinegar, sugar, salt, hot pepper sauce and the 2 cups of reserved tomato cooking liquid.
  • Bring pot to a boil, then reduce the heat and simmer, uncovered, stirring frequently for 1 hour.
  • Using a ladle, portion the hot mixture into canning jars, leaving ½-inch space from the top, removing any air bubbles. Remove excess from the rims and seal tightly.
  • Place cans in the water bath until completely covered and bring to a boil. Complete the simmering process for 20 minutes.
  • Remove from water and cool completely before storing in the refrigerator.

10-1/2 pounds tomatoes (about 35 medium), peeled and quartered
4 medium green peppers, chopped
3 large onions, chopped
2 cans (12 ounces each) tomato paste
1-3/4 cups white vinegar
1/2 cup sugar
1 medium sweet red pepper, chopped
1 celery rib, chopped
15 garlic cloves, minced
4 to 5 jalapeno peppers, seeded and chopped
1/4 cup canning salt
1/4 to 1/2 teaspoon hot pepper sauce

Steps:

  • In a large stockpot, cook tomatoes, uncovered, over medium heat 20 minutes. Drain, reserving 2 cups liquid. Return tomatoes to the pot. , Stir in green peppers, onions, tomato paste, vinegar, sugar, red pepper, celery, garlic, jalapenos, canning salt, hot pepper sauce and reserved tomato liquid. Bring to a boil. Reduce heat; simmer, uncovered, 1 hour, stirring frequently., Ladle hot mixture into 10 hot 1-pint jars, leaving 1/2-in. headspace. 3 pounds tomatoes (peeled and chopped)
3 medium onions (finely chopped)
1 ½ green bell peppers (chopped)
3 medium sized jalapeno peppers (halved, seeded and chopped (may use up to 9 medium sized jalapenos))
9 cloves garlic (minced)
1 ½ cups tomato sauce
1 ½ cups white distilled vinegar (5% acidity)
1 tablespoon granulated sugar ((may use up to 2 tablespoons total))
1 ½ teaspoons pickling salt
1 ½ teaspoons ground cumin
1 ounce Italian parsley (chopped (about 1/2 bunch))
1 ounce cilantro (chopped (about 1/2 bunch))

Steps:

  • Before you start, get everything you need together. All your jars, lids, kitchen towels, produce, knives, canner, funnel.
  • Prepare the jars, lids, and rings.
  • Fill the canner about ⅔ to ¾ with water, bring it to the boil and hold it there until ready to fill the jars. Add your empty clean jars into the canner and let them sterilize while you prepare the salsa.
  • Chop the tomatoes, onions, green pepper, and jalapenos. Finely mince the garlic. Combine all the ingredients in a stainless steel or enamel saucepan.
  • Bring the mixture to a boil over high heat. Reduce the heat and boil gently, uncovered, for 25 minutes or until desired consistency, stirring frequently.
  • Working with one jar at a time, carefully remove a jar from the canner and ladle in the hot salsa to within ½ inch of the rim (headspace). Wipe the jar rim with a moist paper towel and apply a lid and ring (just finger tight).
  • Return the filled jars to the canner and lower them into the boiling water. Begin timing when the water returns to a boil. Process pints for 10 minutes at 1-1,000 ft. (20 minutes at 1,001 to 6,000 ft. and 25 minutes above 6,000 ft).
  • Remove the hot, processed jars from the canner and set them on a kitchen towel. Let them sit until completely cool - at least 8 hours, preferably overnight. Test to make sure you have complete seals and then store the jars in a cool, dry place until ready to use.
  • Allow the salsa to sit for four weeks before using. This will allow the flavors to mellow. Use within one year of canning.
