ITALIAN MEAT SAUCE
The most delicious Italian Meat Sauce that's so incredible, it can be eaten right out of the pan. Use it on top of your favorite pasta, in lasagna, or spaghetti squash or zoodles. It's thick, rich, flavorful and it's made from scratch. You're gonna love this meat sauce.

- In a large heavy bottomed pot, heat the olive oil and sauté the onion until translucent. This should take 5 - 8 minutes. The longer you cook the onions, the sweeter they become.
- Add garlic and cook just until fragrant.
- Add the beef and veal (if using) and cook until it's browned. I use lean meat which means there's little fat left in the pan. I don't bother draining it. If you find a lot of fat you can remove it using a turkey baster or skim it off the top later. Don't mistake water for fat. I've found lesser grades of meat release more liquid than say Angus. If that's the case, cook and stir a few minutes and it will evaporate.
- Sprinkle in the granulated garlic, salt and pepper and stir.
- Stir in the tomato paste and cook until it loses its bright red color.
- Add the ground peeled tomatoes and the tomato puree, sugar and basil.
- Bring to a boil then lower to a simmer, stirring occasionally, until thickened about 1 hour. Taste and adjust for more salt and pepper.

- Place ground beef in a non-stick wok, or large deep skillet. Cook over medium heat until evenly brown. Drain excess fat. Add onion, and cook until soft and translucent. Season with salt and pepper. Stir in garlic, tomato paste, tomato sauce and diced tomatoes. Season with thyme, basil, rosemary, marjoram and bay leaf. Cover, and simmer on low heat for 30 minutes.

- Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
- In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.
- Pour in tomatoes and tomato sauce; mix in salt, ground black pepper, basil, oregano, bay leaf and cooked sausage. Simmer uncovered for 1 hour, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Mix cooked sauce with hot pasta and remove bay leaf from sauce before serving.

VIRGINIA'S EASY & MILD SPAGHETTI SAUCE
Sick of Serving Sour Spaghetti Sauce? If so here is a sauce that is mild yet tasty. If I hadn't eaten this sauce before requesting the recipe, I doubt I would have tried it since the ingredients seem unlikely. This is an accomodating sauce; add your favorite sauteed veggies or use Italian sausage and they will work well since the base is so nice. Add more or less tomato juice to obtain desired consistency. If putting this into a crockpot, add more juice for cooking down. I serve this with angelhair pasta and shredded mozarella cheese as my friend, Virginia, did when we first ate this. This recipe makes "comfort food" out of spaghetti sauce!

PASTA WITH SAUSAGE & EGGPLANT SAUCE
Steps:
- Toss the eggplant with the 2 teaspoons of salt and place in a colander.
- Let sit 20 minutes, then squeeze dry.
- Heat the olive oil in a heavy bottomed saucepan over medium heat and add the onion and sausage meat.
- Cook, using two forks to break up the meat as it cooks until it is no longer pink.
- Add the eggplant, and continue to cook until the eggplant has softened, about 8 minutes.
- Add the garlic and cook an additional minute or two.
- Add the tomatoes, paste, oregano, salt, pepper, and red pepper flakes if using and bring to a boil.
- Reduce the heat to a simmer, then cook for 20 minutes, stirring occasionally. (Add a small cup of water if sauce thickens too much).
- Stir in the parsley and basil.
- Taste, and adjust salt and pepper as needed.
- While the sauce is finishing cooking, cook the pasta in a large pot of lightly salted water until it is "al dente", following manufacturers instructions.
- Drain, and return the pasta to the pot.
- Add a large scoop or two of sauce to the pasta and toss to coat.
- Serve the pasta in individual bowls with an additional spoonful or two of sauce on top.
- Pass the grated cheese at the table, and enjoy!
TRADITIONAL WHITE BOLOGNESE SAUCE

- To a high-sided sauté, pan add the oil over medium heat. When the oil is hot, add the onion, carrot and celery and a little of the salt. Cook for 5 minutes until they start to soften.
- Turn up the heat to medium-high, add the beef and sausage and rest of the salt. Cook, breaking up the meat until lightly browned. Add the garlic, rosemary and sage, cook for 1 minute. Sprinkle in the flour and stir to mix well. Cook for a minute.
- Add the wine and cook until it starts to evaporate. Add the beef broth and bring to a simmer. Cook for 30 minutes until thickened but still a little saucy. Taste for seasoning and add more salt if needed (this will depend on how salty your stock/broth is).

- In a large, heavy-bottomed pot (such as a Dutch oven), heat 1 Tbsp olive oil over medium heat. Add the ground beef and cook over medium heat, stirring as necessary, until cooked through. Using a spoon, spoon of most of the fat/liquid in the pot and then continue cooking the ground beef to brown nicely. Remove ground beef to a bowl and set aside.
- Add the remaining 1 Tbsp olive oil to the same pot and heat over medium heat. Add the onion, carrot and celery to the pot and cook, stirring, until the onion is softened, 4-5 minutes. Add the red pepper flakes (if using) and the garlic and cook, stirring, about 1 minute more (don't let the garlic scorch). Add the tomato paste to the pot and cook, stirring, for another 1 minute. Add the red wine, stir, then allow to cook/simmer for about 2 minutes, or until reduced by about half. Add the canned tomatoes, water, basil leaves, oregano, brown sugar and salt. Stir well to combine. Return the cooked ground beef to the pot.
- Bring the mixture to a boil, then reduce the heat to medium low and simmer for about 2 hours, stirring regularly and more frequently as the mixture starts to thicken. (*Important to watch closely and stir often as sauce thickens, as the sauce/meat can scorch if is sits on the bottom of the pan in the thicker sauce.) Cook sauce until desired thickness reached. For pasta, I like to leave it a touch thinner. For lasagna or other baked pasta, you can cook until most of the liquid has cooked off.
- Add the heavy cream and butter to the sauce and cook, stirring until combined and warmed through. Taste the sauce and add additional salt and/or freshly ground pepper, as needed.
