Steps:
- Whisk olive oil, vinegar, and garlic in small bowl to blend; season dressing to taste with salt and pepper.
- Layer prosciutto, mozzarella, tomatoes, and basil over bottom of bread.
- Drizzle lightly with dressing, then sprinkle with salt and pepper.
- Press top of bread over.
- Cut bread equally into 4 sandwiches.
- Prepare barbecue (medium heat).
- Grill sandwiches until bread is golden brown and cheese melts, pressing occasionally to compact with large spatula, about 5 minutes per side.

Steps:
- Melt the 1 1/2 oz of butter and stir in the flour to make a roux. Stir and brown the flour butter mixture for 3 minutes.
- Gradually add the hot milk, stiring until thick and smooth then simmer for 10 minute.
- Cook the fettuccine in boiling, salted water until al dente.
- Meanwhile melt 3/4 of the 3 1/2 oz of butter remaining and cook the proscutto.
- Drain the pasta and stir in the proscutto and about half of the sauce. Season to taste.
- Transfer to a large shallow ovenproof pan and cover with the remaining sauce. Dot with the remaining butter then cover with the Parmesan Cheese.
- Broil the dish until cheese and sauce turn a golden brown. Serve at once.

CLASSIC ITALIAN PRESSED BAGUETTE
Steps:
- Split the baguette open and lightly brush with oil, then season lightly with salt and pepper. Thinly slice the roasted pepper. Layer on the prosciutto, provolone, basil, red pepper, balsamic glaze and salami. Top with the top half of the baguette. (Layering the meat on the bottom and top of the sandwich prevents the fillings from soaking through and making the bread soggy.)
- Put a bowl or other heavy object (such as a large can or jar) on the sandwich to press it for 1 hour before serving. Or, pack it in the bottom of your lunchbox, under a glass container or drink.
BACON AND HUMMUS BAGUETTE SANDWICHES
I found this in the UK cooking magazine called Olive but I have been making a variation of this on my own for a while now. I love hummus and wondered how it would go with bacon and I ended up being pleased with the results. I have also done this with turkey bacon when I wanted to drop the calories and fat a bit. Also, whenever possible I go for a reduced fat version of the hummus

- Grill the bacon on both sides until crisp.
- Cut the baguette in half lengthways and spread generously with hummus.
- Fill with the bacon and cut into 8 sandwiches.

PROSCIUTTO AND FIG-JAM SANDWICHES

- Cut baguette into four 5- to 6-inch-long pieces; split each piece horizontally, leaving one side intact. Spread all bread halves with fig jam; layer bottom halves with prosciutto, cheese, and arugula. Fold halves together, and serve.
- Fig Jam
- In a medium saucepan, combine figs with sugar and the water. Bring to a boil, stirring to dissolve sugar. Reduce heat. Cover and simmer until almost all liquid has evaporated and figs are very tender, about 20 minutes.
- Transfer mixture to a food processor; add lemon juice. Puree until smooth (if mixture is too thick, add up to 1/4 cup additional water, a little at a time). Jam can be refrigerated up to 1 month in an airtight container.

Steps:
- Cut the baguettes into thirds and then down the middle. I buy baguettes par baked then finish them off at home so they're nice and warm, soft and crisp.
- Brush both sides of the sandwich bread with good olive oil.
- Lay out about 3 slices of prosciutto on bottom side of each sandwich. (or however much meat you'd like).
- Make sure you squeeze out the excess water from the mozzarella balls with a paper towel. Place 3-4 slices of sliced mozzarella on top of the prosciutto.
- Cover the tops of the mozzarella with basil leaves, and place tops of the sandwich bread.
- YUM!
