Steps:
- The night before you want to serve the baked beans, carefully sort through the pkgs. of dry beans for small stones.
- Soak the beans in a large pot of water overnight. The beans will swell to at least twice their size, so make sure there is enough water in the pot to keep the beans underwater.
- The next day, drain the beans, refill the pot with water, and boil the beans until they are tender and not in the least chewy.
- While the beans are cooking, dice the bacon and place into another pot to cook. Cook until crisp, and drain all but 2T of the fat.
- Dice the onions and add to the pot with the bacon fat. Stir in the crisp bacon and and cook until the onions are carmelized, making sure to stir frequently so the bacon doesn't stick and burn.
- When the beans are tender, drain off all the water, return them to the pot and add the bacon and onions. Stir in the ketchup, mustard, brown sugar, Worcestershire sauce, molasses, hot sauce, salt, and pepper.
- Cut the kielbasa into thin coins and and stir into the beans.
- Spray a large roasting pan with non-stick spray, pour in the beans, and bake at 350 degrees for 45 minute to one hour.

MOM'S BAKED BEANS
Steps:
- Preheat the oven to 350 degrees F.
- Line a plate with a paper towel. In a saute pan over medium heat, add the bacon. Cook until tender and cooked but not crisp, flipping once, about 8 minutes. Remove to the paper-towel lined plate. Let cool and then chop.
- To the pan with the bacon drippings, add the onion and cook until tender, soft and translucent, about 7 minutes. Add the garlic and cook until fragrant, another 1 to 2 minutes. Remove from heat.
- To a large bowl, add the baked beans, molasses, dark brown sugar, barbecue sauce and bacon mixture. Pour the mixture into a 9-by-13-inch baking dish and bake, uncovered, for about 1 hour. Remove from the oven and let cool for at least 10 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon and onions in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
- In a large bowl combine beans, molasses, mustard, salt, tomatoes, brown sugar, dry mustard, ham, onions and crumbed bacon. Mix well and transfer to a 2 quart casserole dish.
- Bake in preheated oven, covered, for 1 hour. Uncover and bake for 1 hour more.

MIKE'S MOM'S BAKED BEANS
I'm not sure who Mike is, much less his mom. But my husband had some of these beans at a pot-luck party and the hostess tracked down Mike for the recipe. Now they've become a top request for our family dinners. I've suggested changing the name, but my husband won't hear of it. To him, these will always be Mike's Mom's Baked Beans. If only I could find Mike and get some more of his mom's recipes!

- Preheat oven to 350°F
- Cook & chop bacon.
- Cook chopped onions & green peppers in leftover grease.
- Combine bacon, onions, peppers, beans (drained--except the pork n beans), & all other ingredients; mix well.
- Por into large or deep baking dish & bake 30 minutes.
- Remove from oven and add cubes of cream cheese to top of mixture.
- Bake for another 10 minutes.
OLD FASHIONED FRENCH CANADIAN BAKED BEANS
This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

- Cover beans with water and soak overnight.
- Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
- Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
- Mix together remaining ingredients (excluding beans and bacon).
- Add beans to bean pot (or any covered dish).
- Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
- Arrange bacon on top.
- Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
- Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

MOM'S BAKED BEANS
My Mom has made these for years. I don't really care for baked beans and I love these as does anyone who has ever eaten them. They are so simple to make and have such a wonderful flavor--even better the next day! I do hope you try them because once you do you will make them again. Enjoy!

- Cut bacon small and chop onion and cook together, drain.
- In casserole mix together everything.
- Cover and bake till bubbly approximately 1 hour.
