Chicken bites wrapped in bacon get a kick from Montreal seasoning and sweetness from barbecue sauce. We love the mix of textures. -Kathryn Dampier, Quail Valley, California

6 bacon strips
3/4 pound boneless skinless chicken breasts, cut into 1-inch cubes (about 18)
3 teaspoons Montreal steak seasoning
1 teaspoon prepared horseradish, optional
1/2 cup barbecue sauce

Steps:

  • Preheat oven to 400°. Cut bacon crosswise into thirds. Place bacon on a microwave-safe plate lined with paper towels. Cover with additional paper towels; microwave on high 3-4 minutes or until partially cooked but not crisp., Place chicken in a small bowl; sprinkle with steak seasoning and toss to coat. Wrap a bacon piece around each chicken cube; secure with a toothpick. Place on a parchment-lined baking sheet., Bake 10 minutes. If desired, add horseradish to barbecue sauce; brush over wrapped chicken. Bake until chicken is no longer pink and bacon is crisp, 5-10 minutes longer.

Pork chops baked over a creamy vegetable bed of potatoes, carrots, kohlrabi and seasonings. A tasty tummy warmer for a cold night. You may substitute onion for kohlrabi if it's not available.

Number Of Ingredients 10

1 teaspoon vegetable oil
6 (3/4 inch) thick pork chops
salt and pepper to taste
4 cups sliced peeled potatoes
2 cups sliced carrots
2 cups sliced kohlrabi
1 ½ teaspoons salt
½ teaspoon dried marjoram
¼ teaspoon ground black pepper
2 cups milk

Steps:

  • Heat oil in a large skillet over medium high heat. Season pork chops with salt and pepper. Working in batches, sear the pork chops until they're browned on each side.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the potatoes, carrots, kohlrabi, salt, marjoram and pepper. Mix lightly and place mixture into a 9x13-inch baking dish. Pour milk over potato mixture and top with browned pork chops.
  • Cover baking dish with aluminum foil and bake in the preheated oven for 1 1/2 hours, or until pork chops and vegetables are very tender and internal temperature of pork has reached 145 degrees F (63 degrees C).

1 egg
1 Tbl. milk
1 Tbl. barbeque sauce, i always use sweet baby ray's
4 cups barbequed potato chips, crushed (choose a well-coated good brand that you like)
1/2 lb. boneless skinless chicken breasts and/or thighs, cut into 1 1/2
*additional sweet babay ray's bbq sauce for dipping

Steps:

  • 1. In shallow dish or pie pan, whisk egg, then whisk in milk and 1 Tbl. bbq sauce. Place crushed chips in another bowl. Dip chicken into egg mixture, then roll in crush chips til nicely coated. Arrange on a greased cookie/baking sheet, and bake at 400 for 10-15 minutes or til juices run clear. Serve with extra bbq sauce for dipping! Makes a nice snack for watching football, too!!

A very impressive cold appetizer. The color of the oranges and spinach really brighten up a buffet table. My guests loved this appetizer and devoured them all. Adapted slightly from a Creme de Colorado cookbook.

2 boneless skinless chicken breasts
1 3/4 cups chicken broth
1/4 cup soy sauce
1 tablespoon Lea & Perrins Worcestershire Sauce
1 lb fresh spinach leaves, rinsed and stemmed
8 cups boiling water
2 (16 ounce) cans mandarin oranges, drained
1/4 cup mayonnaise
1/4 cup sour cream
2 teaspoons curry powder
3 tablespoons apricot preserves

Steps:

  • Cut chicken into 1-inch cubes.
  • In a 10-inch skillet, combine chicken cubes, broth, soy sauce and Worcestershire.
  • Heat to boiling over medium heat; cover, reduce heat, and simmer until chicken is fork-tender (about 10-15 minutes).
  • With a slotted spoon, remove chicken from broth and let cool slightly.
  • Place spinach leaves in a colander.
  • Pour boiling water over leaves.
  • Drain and set aside to cool.
  • Place a cube of chicken at stem end of a spinach leaf and wrap leaf around chicken so that chicken still shows on sides.
  • Secure end of leaf with a wooden pick.
  • Refrigerate at least 1 hour.
  • (Recipe can be prepared up to this point one day ahead.) To serve, place one mandarin orange at the end of each wooden pick.
  • Serve with Curry Mayonnaise Dip (recipe follows).
  • Curry Mayonnaise Dip: Blend all ingredients and refrigerate to allow flavors to mature.
