CHICKEN SHAWARMA (MIDDLE EASTERN)
Recipe video above. The smell when this is cooking is outrageous! The marinade is very quick to prepare and the chicken can be frozen in the marinade, then defrosted prior to cooking. Best cooked on the outdoor grill / BBQ, but I usually make it on the stove. Serve with Yogurt Sauce (provided) or the Tahini sauce in this recipe. Add a simple salad and flatbread laid out on a large platter, then let everyone make their own wraps!

MIDDLE EASTERN CHICKEN BURGERS
These flavorful burgers get rave reviews and are remarkably easy to put together. Sauteed onion and yogurt keep the lean chicken patties super moist while a blend of pantry spices makes them taste extra special.

- Place ground beef in a medium mixing bowl. Add the parsley or cilantro, onion, egg, cumin, garlic powder, cayenne pepper, smoked paprika and turmeric. Cayenne is very spicy - the amount here will give the burgers a slight kick, but won't add a lot of heat. If spice sensitive, adjust to taste. Add salt and pepper to taste - I usually add about 1/2 tsp each of salt and black pepper.
- Mix mayonnaise together with sriracha sauce in a small bowl until well blended, adding more sriracha for spice if desired. Serve as a sauce alongside the burgers.

- In a large bowl whisk together the spices, lemon juice, olive oil and garlic. Add in the chicken and onions and give everything a good mix, making sure the chicken is well coated.
- If you have time to leave the chicken to marinade then awesome, do that. I never do so I always cook it straight away and it is still fantastic.
- Add everything to a baking dish and pop into the preheated oven for 40-45 mins, or until the chicken is brown and crispy on the edges.
