Steps:
- Wash apples, then dry completely. (Note: In order for the caramel sauce to stick to the apples, the apples need to be well chilled before washing, drying and dipping in the caramel sauce.)
- Insert wooden pop stick into stem end of each apple. Microwave caramels and water in large glass microwaveable bowl on HIGH 2 to 2-1/2 min. or until caramels are completely melted and mixture is well blended when stirred.
- Cover large plate with parchment; spray with cooking spray. Dip apples, 1 at a time, into caramel sauce, turning to evenly coat each apple. Hold dipped apple over bowl to let excess caramel drip back into bowl.
- Refrigerate 1 hour or until caramel is firm. Remove apples from refrigerator 15 min. before serving. (Note: Caramel apples can be refrigerated up to 2 days before serving.)

- Core the apples, leaving the bottom intact.
- In a bowl, mix the brown sugar, cinnamon and nutmeg. Spoon the sugar mixture into the apples and set a teaspoon (or more to your taste) of butter on top of each apple. Place the apples in a deep casserole dish and cover.
- Microwave for 3 1/2 to 4 minutes or until tender. Let the apples sit for a couple minutes before serving.

- Insert one wooden pop stick (from bag of caramels) into stem end of each apple. Cover large plate with waxed paper; spray with cooking spray. Set aside.
- Place caramel bits in medium saucepan. Add water; cook on medium-low heat 3 min. or until caramel bits are completely melted, stirring constantly.
- Dip apples into melted caramel until evenly coated, spooning caramel over apples if necessary. Allow excess caramel to drip off. Scrape bottoms of apples; place on prepared plate. Refrigerate at least 1 hour. Remove from refrigerator 15 min. before serving. Store any leftover apples in refrigerator.

- Cut the apples in half lengthwise. Using a melon baller, scoop out the inside of the apples, taking care to create a shell of even thickness. Set apple halves into cups of a muffin pan and squeeze or brush lemon juice onto cut apples to reduce browning. Place in fridge until filling is ready. To a medium saucepan, add water and caramels and heat until caramels are melted. Fill each apple cup with caramel mixture. Refrigerate a few hours or overnight. To serve, place apples flesh-down (caramel down) on cutting board. Cut lengthwise in half, then in half again. Trim off any brown parts with a paring knife. Serve immediately. (The lemon juice can only prevent the browning for so long).
MICROWAVED CARAMEL APPLES
I found this to be the quickest and easiest caramel apple recipe I have tried. I started out using 5 bags of caramels, and then added more as I needed. It really does make the operation much easier using lots of caramel, especially when you can cool and store the rest of the caramel to use in other things, or cut up with scissors and eat as a candy.

- Wash apples, and allow to completely dry and come to room temperature.
- Place buttered wax paper or release foil on a cookie sheet.
- Push sticks into the top of the apples.
- Have toppings in a small bowl nearby.
- Place caramels into a microwave safe or heat safe deep bowl and microwave for two minutes on high.
- Stir caramels if you are able. Be careful as the bowl will be really hot.
- Continue heating caramels on high in 1-minute intervals, always stirring, until mixture becomes very smooth and fluid.
- Quickly dip a couple of apples, swirling them to coat everywhere.
- Hold apples over the bowl and allow to drain, and slide the bottoms of the apples against the top of the bowl to scrape off excess caramel.
- If you like the toppings on the apples, press the apples lightly into the bowl of toppings.
- Place dipped apples on the cookie sheet.
- Check the condition of the caramel and if it is thickening, go ahead and heat it for another minute and stir. Don't worry if you need to reheat often, as it's ok.
- Continue dipping apples and reheating as necessary.
- If you have leftover caramel, pour it onto a heavily buttered cookie sheet and allow to cool and set, then roll it up and place in a ziplock bag to use later.
- You can chill apples to get them to set, or just let them sit in the pan to cool off.
- Place in cupcake liners before serving, and use within 1-2 days.
CLASSIC CARAMEL APPLES

- Insert sticks into tops of apples. Prepare an ice-water bath.
- Bring cream, sugar, corn syrup, and butter to a boil in a saucepan over medium-high heat. Clip a candy thermometer to pan, and continue to cook until mixture reaches 245 degrees, 10 to 12 minutes.
- Place pan in ice-water bath to stop the cooking. Dip bottom of each apple in caramel. Using a spoon, coat apple halfway to three-quarters of the way up sides. Transfer to a parchment-lined baking sheet, and refrigerate until set, about 15 minutes (or overnight).

The caramel coating is very gooey, so refrigerate the apples for about 15 minutes, or until the caramel has firmed up. (You will need 6 wooden craft sticks for this recipe.)
