HOMEMADE BANANA PUDDING IN THE MICROWAVE
My Mother made her banana pudding (ok, it's really vanilla pudding poured over sliced bananas) in the top of a double boiler on the stove. It was always topped with meringue and baked, then served warm. This is more of a modern version, made quickly in the microwave for convenience. Although this is served cold and topped with whipped topping, you can still reserve the egg whites, beat them with sugar, spread over the top of the pudding and bake until brown to serve it for Southern style warm banana pudding. Cooking time does not include cooling.

Steps:
- In a large microwaveable bowl, Mix sugar, flour, salt, egg yolks and milk.
- Microwave on high power for 2 minutes.
- Beat with electric mixer for 1 minute.
- Microwave on high power 2 more minutes.
- Beat with electric mixer for 1 more minute.
- Add butter and vanilla.
- Microwave on high for 1 minute.
- Beat for for 1 minute more with electric mixer.
- Refrigerate until cool.
- Line a dish with vanilla wafers.
- Top with 1/2 of slice bananas.
- Layer 1/2 of pudding on top.
- Repeat layers.
- Spoon whipped topping over all.
- Store in refrigerator.
- If serving warm, layer wafers, bananas, and warm pudding immediately into casserole dish. Top with meringue made from beating reserved egg whites with sugar. Bake until golden.
MICROWAVE BANANA PUDDING
This is just like the old fashioned banana pudding that my mom made on top of the stove. I've made this with Splenda and fat free wafers, mu husband likes it just as well. I also have made meringue using Splenda and it works well also.

- 1. Place milk, sugar, egg yolks and flour in microwaveable bowl. Mix well. Microwave on high for 2 minutes, stir it well. Microwave for 2 more minutes, stir well. Keep an eye on it or it will boil over and make a mess. (At this point, I like to microwave a minute at the time to avoid this). As it starts to thicken, stir more often. After six minutes, or less, it should be getting thick, not too thick. If it is add milk by the tablespoon and stir to get it to a gravy consistency. It will thicken up as it cools. Add the butter and the vanilla extract. Stir well.
- 2. Put a layer of pudding in the bottom of your dish. Slice up enough bananas to cover. Then add a layer of vanilla wafers. Repeat with pudding; bananas; and wafers. I try to end with pudding on top.
- 3. Put the reserved egg whites in a clean grease-free bowl. Beat with mixer on medium high. When they start to get frothy, add 4 tablespoons of sugar and beat until glossy, stiff peaks form. Spread on top of pudding.
- 4. Broil in the oven until meringue is golden brown - DON'T TAKE YOUR EYES OFF IT WHILE IT IS BROILING, IT TAKES LESS THAN A MINUTE WITH A GAS RANGE!
- 5. Chill for about 4 hours or overnight.
MICROWAVE BANANA PUDDING
This is a great recipe because you don't have to stand over the stove stirring! I clipped it from somewhere years ago.

- In large microwavable bowl, combine sugar, cornstarch and salt. Gradually stir in milk and mix well. Microwave on high for 4 minutes. Remove from microwave.
- Stir in egg yolks.
- Microwave at 3-minute intervals. Stirring well after each until pudding is thick and creamy. (It usually takes me 4 or 5 intervals. Will vay by microwave).
- Stir in butter and vanilla.
- In 9x13-inch glass pan, layer vanilla wafers on bottom, then half bananas, then half of pudding. Repeat layering process. Refrigerate. Top with whipped cream before serving (optional).

Steps:
- 1. Blend sugar, cornstarch and salt. Combine milk and egg yolks and gradually add to sugar mixture. Put in microwave safe dish and cook in 2 minute intervals, stirring "hard" after each with wire whisk.
- 2. Once mixture begins to thicken, then cook in 1 minute intervals until desired consistency; remembering to stir after each minute. Stir in butter and vanilla.
- 3. Layer between bananas and wafers. Great warm or cold.
