Steps:
- In a microwavable baking dish, arrange tilapia fillets in a single layer. Dot with pieces of butter, and minced garlic. Sprinkle over fresh tarragon. Cover with waxed paper and microwave on high for 2 minutes.
- Turn fillets over, recover, and continue to microwave on high for a further 2 minutes. Remove immediately, sprinkle with apple cider vinegar, and serve.

EASY, EASY ASIAN TILAPIA IN MICROWAVE
My friend Pan Hui who has a couple of Chinese Restaurants passed this easy way of cooking Tilapia to me. It is more of a technique than a recipe, you adjust for amount you are cooking. I serve with rice, vegetable and a nice salad.

- 1. Lay Tilapia fillets on a plate. Sprinkle with green onion and ginger. Drizzle soy, sesame oil and canola over top.
- 2. Cover plate with plastic wrap, leaving a small area unsealed. Microwave in 1 minute increments until fish is white all the way through.
- 3. Serve and congratulate yourself on the easiest fish dish you have ever prepared and it didn't stink up the house because of the ginger.
- 4. Garnish with more green onion if desired.
CRUNCHY, BUTTERY, TEN-MINUTE TILAPIA
Fast and so easy to make in the microwave. Tilapia is a mild white fresh water fish that lends itself to lots of flavor profiles. The thin fillets usually are packed individually and thaw out quickly under cold tap water!

- I make these in a greased glass pie dish, works great in the microwave. Arrange fillets in single layer. Sprinkle liberally with lemon pepper. Squeeze juice from a medium lemon evenly over fish. In a pinch, use bottled lemon juice, about a tablespoon or a little more. Smoosh a part sleeve of saltines right in the wrapper with your hands- leave fairly coarse. Put layer of crumbs on the fillets and dot with butter, sprinkle with parsley. Cover lightly with a napkin or wax paper so butter doesn't splatter all over! (I warned you!) Cook 3 minutes on high. Take out and redistribute butter a little so most of all the crumbs get some, then return to microwave for another 2-3 minutes. Don't over cook! Fish should flake easily with fork and will cook a little more as it sits.

- Place your tilapia fillets on the plate in a single layer, with the thickest parts of the fish facing the edges of the plate because they will cook more quickly there.
- Place some fresh herbs, like tarragon and dill, over the fish, if desired. In addition, you can sprinkle some chopped aromatics like onions, carrots and celery over the fish to add additional moisture and flavor.
- Squeeze a lemon and pour the juice all over the tilapia fillets. The acidic juice will keep the delicate fish tender while adding some zing to its flavor.
- Pour a small amount of olive oil over the seasoned tilapia fillets to keep them moist during the cooking process.
- Cover the plate with a sheet of wax paper, and place it in your microwave. Cook the fish on high for approximately 4 minutes. Allow the fish to sit for a minute before testing it with a fork.
- Remove the tilapia, herbs and veggies from the plate to serve. Microwave the remaining fish juice, oil and citrus juice for 1 to 2 minutes, uncovered, to reduce and soften them.
