MICROWAVE COFFEE CAKE
Microwave Coffee Cake is a rich cake made with butter, sour cream and egg, topped with a crumbly butter, cinnamon and brown sugar topping in just 5 minutes!

Steps:
- Mash together butter, sugar and egg until well mixed.
- Add in sour cream and vanilla until smooth.
- Add in flour and baking powder until just combined.
- In a second bowl, mash together butter, flour, sugar and cinnamon with a fork.
- Sprinkle crumble over the cake batter
- Microwave for 90 seconds or until the top of the cake is no longer wet.

- In a medium bowl, cream butter and sugar. Add eggs and vanilla, then mix well. Sift together flour, soda and baking powder. Add to creamed mixture, along with sour cream. Set aside. Mix topping ingredients until crumbly. Spread half the batter in an 8 inch microwave proof cake dish Sprinkle half the topping mix over the batter. Carefully spread the remaining batter on top next, and then sprinkle the remaining topping over it. Cook on medium for 4 minutes or until toothpick inserted in center comes out clean. Let stand 3 minutes before serving. Serve warm.
SOUR CREAM COFFEE CAKE
This is the BEST coffee cake ever. It has been around as long as I can remember. My Mom says back in 1966, my father used to go have coffee with his boss in a little coffee shop that served a coffee cake much like this one - he wanted her to figure out how to make it and this is what she came up with. Christmas is not christmas without it. My daughter makes it and takes it camping, it has gone fishing, we give it as gifts ... its just a family favorite. Its moist and easy to make.

- Preheat oven to 350 degrees.
- Spray bundt pan with cooking spray.
- Mix filling ingredients together in a small bowl and set aside.
- Cream butter and sugar.
- Add eggs and vanilla.
- Sift dry ingredients.
- Add dry ingredients alternately with sour cream, beginning and ending with the flour.
- Spread 1/3 of batter in prepared bundt pan. Top with 1/3 filling. Repeat and end with filling (I only save about 2 T to go on the top because the top will actually be the bottom after it is cooked).
- Bake at 350 degrees for 50-60 minutes or until toothpick inserted in the middle comes out clean. Cool in the pan.

Steps:
- Preheat oven to 350°F.
- Generously butter bundt pan and dust with flour, knocking out excess.
- Whisk together flour, baking soda, salt, and baking powder in a bowl.
- Pulse walnuts, cinnamon, 1/4 cup sugar, and a pinch of salt in a food processor until nuts are chopped.
- Add melted butter and pulse once to combine.
- Beat together remaining 1 1/2 sticks butter and remaining cup sugar in a large bowl with an electric mixer at high speed until pale and fluffy, about 3 minutes in a standing mixer or 5 minutes with a handheld.
- Reduce speed to medium and add eggs 1 at a time, beating well after each addition, then beat in sour cream and vanilla until smooth and fluffy, about 2 minutes more in a standing mixer or 4 minutes more with a handheld.
- Reduce speed to low and add flour mixture, scraping down side of bowl occasionally and mixing until just combined.
- Sprinkle half of nut mixture evenly in bottom of bundt pan.
- Spoon half of batter over nuts and smooth with a rubber spatula.
- Sprinkle batter in pan with remaining nut mixture and top with remaining batter, smoothing top.
- Bake in middle of oven until cake begins to pull away from side of pan and a tester comes out clean, 45 to 50 minutes.
- Cool cake in pan on a rack 1 hour, then run a thin knife around outer and inner edges.
- Place rack on top of pan, then flip to invert cake onto rack.
- Cool completely.

- In a mug, place a tablespoon of butter and soften it in the microwave for 10-15 seconds. Then, go ahead and add 2 tablespoons of sugar and whisk until light and fluffy. Add 2 tablespoons of whisked egg and mix it up until well blended. Then, take 2 tablespoons of cream cheese and mix them until most of the cream cheese has been mixed in (its okay if theres some chunks). Finally, add 1/4 cup of flour and 1/8 teaspoon of baking soda and mix it all up until you get a cake batter consistency.
- For the crumb topping in another bowl, take a tablespoon of butter, 2 tablespoons flour. 1 tablespoon brown sugar and a teaspoon of cinnamon and mix it all up until you get crumbs. If its not completely crumbed place a splash of cinnamon.
- Then pop it in the microwave for 1 minute, allow it to cool for another minute and enjoy.
