Microwave Baked Apples image

This is an easy and fast baked apple recipe. Great for brunch or snack. Stuff the apples with any additional fruits that you wish -- cranberries stuffed into apples are especially delicious.

2 apples
2 tablespoons brown sugar
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 teaspoons butter

Steps:

  • Core the apples, leaving the bottom intact.
  • In a bowl, mix the brown sugar, cinnamon and nutmeg. Spoon the sugar mixture into the apples and set a teaspoon (or more to your taste) of butter on top of each apple. Place the apples in a deep casserole dish and cover.
  • Microwave for 3 1/2 to 4 minutes or until tender. Let the apples sit for a couple minutes before serving.

1 large apple, cored (whatever type you like, peel if desired)
1 1/2 tablespoons brown sugar (or white sugar, or splenda i suppose)
2 pinches cinnamon

Steps:

  • prep your apple and place in a small bowl so the hole through the core is up.
  • fill hole with sugar and cinnamon, can also add or substitute pumpkin/apple pie spice or cloves. add raisins if you like, drizzle of maple syrup, whatever.
  • wrap tightly over the bowl with good quality plastic wrap. it must be air tight or this wont work. microwave on high for 5 min.
  • the plastic wrap will have made a big bubble as it cooks, this is normal. it works like a steamer to cook the apple fast. when taken from the microwave (WITH POT HOLDERS) it will shrink wrap your apple, it's kinda fun to watch. now keeping those pot holder on, carefully pull off the plastic wrap with a fork, mind the live steam.
  • let it cool for five min, serve alone or with ice cream, crumbled cookies, or a bit of evaporated milk.
  • repeat until you have no apples or your stomach explodes.

0.25 cup granulated sugar
0.25 cup water
2 fresh rosemary plus 1 tsp. finely snipped fresh rosemary
0.5 cup packed brown sugar
0.25 cup all-purpose flour
0.25 teaspoon salt
6 cup cored, peeled and sliced Granny Smith apples
1 tablespoon lemon juice
3 tablespoon whipping cream
1 teaspoon vanilla
0.25 cup butter
1 Rosemary Pastry, see recipe
1 egg white, beaten
2 teaspoon granulated sugar
3 cup all-purpose flour
1 teaspoon salt
1 teaspoon sugar
0.5 teaspoon finely snipped fresh rosemary leaves
1 cup shortening, chilled
0.333 cup ice water
1 egg yolk, beaten
1 tablespoon vinegar

Steps:

  • For rosemary syrup, in small microwave-safe bowl combine 1/4 cup granulated sugar, the water, and 2 sprigs rosemary. Microcook, uncovered, on 100% power (high) for 2 minutes. Let stand 30 minutes; remove rosemary sprigs and discard.
  • In small bowl combine brown sugar, flour, salt and 1 teaspoon finely snipped rosemary; set aside. In very large bowl toss apples with lemon juice. Add brown sugar mixture; toss to coat. Add whipping cream, vanilla, and rosemary syrup.
  • In large skillet melt butter over medium heat; add apple mixture. Cook over medium heat for 8 minutes, stirring occasionally. Remove from heat and set aside.
  • Preheat oven to 375 degrees F. On lightly floured surface, slightly flatten one Rosemary Pastry ball. Roll it from center to edges into a circle 12 inches in diameter. Wrap pastry circle around the rolling pin. Unroll pastry into a 9-inch pie pan or plate. Trim pastry even with rim of pie pan; spoon in apple mixture.
  • Roll remaining ball of pastry into a circle 12 inches in diameter. Cut large slits in pastry. Place pastry circle on apple filling; trim to 1/2 inch beyond edge of pan. Fold top pastry under bottom pastry. Crimp edge as desired. Brush with egg white and sprinkle with 2 teaspoons sugar. To prevent overbrowning, cover edge of pie with foil. Place on a foil-lined baking sheet. Bake 35 minutes. Remove foil. Bake 20 to 25 minutes more or until fruit is tender and filling is bubbly. Cool on wire rack; serve slightly warm. Makes 10 servings. Rosemary PastryRosemary Pastry:
  • In a food processor combine all-purpose flour, salt, sugar and fresh rosemary leaves. Add shortening. Pulse until mixture resembles cornmeal. In a small bowl combin ice water, egg yolk, and vinegar. Add liquid mixture, 1 tablespoon at a time, to flour mixture and pulse until a soft dough forms. Divide in half; form into balls. Wrap in plastic wrap and chill 30 minutes.

1/4 cup KRAFT Balsamic Vinaigrette Dressing
2 Tbsp. brown sugar
1/2 tsp. dried rosemary leaves
2 apples, cut into 8 wedges each
1 red onion, cut into 8 wedges

Steps:

  • Heat oven to 400ºF.
  • Pierce squash with sharp knife; place on microwaveable plate. Microwave on HIGH 2 min.; cool 2 min. Meanwhile, mix dressing, sugar and rosemary until blended.
  • Cut squash lengthwise in half; remove and discard seeds. Cut each half into 4 wedges; place in large bowl. Add apples and onions; mix lightly. Add dressing mixture; toss to evenly coat. Spread onto foil-covered rimmed baking sheet.
  • Bake 30 min. or until squash is tender, turning after 15 min.
