PLUM ORANGE JAM
We put our homegrown plums to delicious use in this quick and easy jam. It's my favorite thing to serve with buttermilk biscuits. -Kathy Rairigh, Milford, Indiana

Steps:
- In a Dutch oven, combine plums and orange juice; bring to a boil. Reduce heat; simmer, covered, 5-7 minutes or until softened, stirring occasionally. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar, orange zest and cinnamon; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into 10 hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

3-MINUTE MICROWAVE JAM
3-Minute Microwave Jam is an amazingly fresh and vibrant jam is made in just minutes in the microwave, without any of the muss and fuss associated with traditional jam making ~ score!

Steps:
- Put the berries in a large glass bowl. If you are using blackberries and they are large, cut them in half. Toss the berries with the cornstarch and sugar if you are using.
- Cover the bowl with a microwave safe dinner plate, and microwave for 3 minutes. Give it a stir. If your jam is still very runny, pop it back into the microwave for 30 second intervals. Note: Be careful, it will get quite hot so use caution, and oven mitts.
- Spoon the jam into a clean jar and let cool Store in the refrigerator, the jam will firm up as it cools.
- Use or freeze the jam within one week.

- Combine peaches, plums, and water in a microwave-safe glass or ceramic bowl. Heat in the microwave on high in 3 minute intervals, stirring between heating, until mixture is very thick, about 15 minutes. Stir in the cinnamon, ginger, and sweetener. Pour fruit butter into a jar. Cover and refrigerate until ready to use.

Steps:
- Place sugar, lemon juice and plums in a deep 8 cup microwavable container (I use a pyrex measure).
- Microwave, uncovered on High for 2 1/2 minutes, stir. REPEAT twice more.
- Microwave, uncovered, on High 15 - 18 minutes, STIRRING every 4 minutes until it will form a gel.
- Ladle into hot sterilized jars. Wipe rims, remove any air bubbles, add hot lids and rings.
- Process 5 minutes in boiling water bath.
MICROWAVE BERRY JAM
When you've been berry picking and have a surfeit of fresh berries on hand, refrigerator jam is a great option! All of the jam flavor but no fuss!

Steps:
- 1) Combine all of the ingredients in a large microwave-safe bowl. Make sure the bowl is large enough; the berries/sugar shouldn't fill more than 1/3 of the bowl, as they'll bubble up quite a bit as they cook.
- 2) Cook the berries for 5 minutes in the microwave.
- 3) Remove the bowl from the microwave, stir the berries, and cook for another 5 minutes.
- 4) Remove the bowl from the microwave, and stir thoroughly. If the mixture hasn't become sauce-like and slightly syrupy, cook for an additional 5 minutes.
- 5) Stir to combine any liquid, and refrigerate. The jam will thicken as it cools.
