This easy breakfast casserole recipe for one is made with eggs, ham, and cheddar cheese, and is cooked in the microwave.

Steps:
- Combine all ingredients in a 6-inch microwave-safe serving bowl. Blend well. Cover tightly with plastic wrap, then poke a few small holes in the top to vent.
- Cook on MEDIUM-HIGH, or 80 percent power, for 4 1/2 to 5 1/2 minutes. Halfway through cooking time, turn dish a half-turn. Let stand, covered, for 30 seconds to finish cooking.

- Crumble beef into a microwave-safe 3-qt. dish; add onion. Loosely cover and microwave on high for 3-5 minutes or until meat is no longer pink, stirring twice; drain. Stir in rice and 1/2 cup water. Cover and cook for 2 minutes. Stir in soup, almonds and mushrooms., In a large bowl, combine the stuffing mix, butter and remaining water; spoon over beef mixture. Microwave, uncovered, for 1-3 minutes or until heated through.

- In a 2-qt. casserole dish, microwave the ground beef for 2 minutes; stir and microwave another 1-1/2 minutes or until done. Drain thoroughly. Add remaining ingredients except cheese; mix well. Cook for 10-1/2 minutes on HIGH, stirring twice during cooking. Sprinkle cheese over casserole; cook 30 seconds on HIGH until cheese is melted.

This is a wonderful recipe I learned to do at a special needs workshop at my daughter's school. It's super easy to make and kids love it.

Steps:
- Lay one soft tortilla shell on a paper towel (or microwave safe plate)and spoon on desired amount of pizza sauce.
- Add desired amount of cheese and then add your desired toppings.
- Place another soft tortilla on top and place in microwave.
- Cook for approximately one minute (more if you use a large tortilla shell or a lot of toppings)- take out when cheese is melted.
- Cut in 1/2 or into quarters if desired (will help it to cool down faster) and enjoy.

- Place chicken, sour cream, half of cheese, half of onions, chopped green chilies, taco seasoning, and chopped cilantro in a large mixing bowl. Stir well to combine. Tear one tortilla into small pieces and add to bowl, stirring again until well incorporated.
- Line a pie plate with remaining tortilla and spoon mixture into it. Place in microwave for five minutes.* Remove and top with remaining onions and cheese. Microwave for one minute more, or until cheese is melted. Enjoy!
- *Note: Microwave ovens vary widely in temperature so you may need to alter the cooking time to suit your microwave.
