MICROWAVE CANDIED PECANS RECIPE
Use a microwave to caramelize whole pecans. They will be shiny, sweet, crunchy, and irresistible.

Steps:
- Pour sugar into a 2-quart microwave-safe Pyrex glass batter bowl. Pour water over the sugar. DO NOT STIR. (I highly recommend you buy an inexpensive glass 2-quart batter bowl if you cook in a microwave very often.)
- Microwave on High for 5-7 minutes or until sugar mixture starts turning golden brown like a piece of butterscotch candy. DO NOT STIR. (Times vary with different MW ovens so watch carefully the first time or two until you figure out the exact time needed in your oven. It's easy to burn.) Use an instant-read thermometer to check the temperature if necessary. It should read 365-375˚F when ready. Tip the bowl to make the hot sugar mixture deep enough for the thermometer to read correctly.
- Add nuts but DO NOT STIR and MW on High for 30 seconds. NOW, Give the nuts a quick stir and finish with another 30 seconds on High.
- Quickly (and I do mean quickly) pour onto parchment paper, a silicone baking mat, or a well-greased cookie sheet. Use two forks to separate the hot nuts. Allow them to cool until you can touch them without burning your fingers.
- Use your fingers to break up the nuts. If caramel pulls in to thin thread-like strands when you try to break up the nuts, let it cool longer.

- Line two baking sheets with waxed paper; set aside. In a microwave-safe 2-qt. bowl, combine the sugars, water, corn syrup and butter. Microwave, uncovered, on high for 4 minutes; stir until sugar is dissolved. Cook 1-2 minutes longer or until a candy thermometer reads 234° (soft-ball stage), stirring after each minute., Add pecans and vanilla; stir just until mixture starts to thicken, about 1 minute. Working quickly, drop by rounded tablespoonfuls onto prepared pans. Flatten slightly. Let stand until set. Store in an airtight container.

- Line a cooking sheet with parchment paper.
- Place the butter in a large pot over low heat until melted.
- Increase your heat to medium-low and add the sugars, salt, and vanilla.
- Stir briskly until the mixture thickens.
- Add the pecans and stir constantly so the nuts are coated evenly. Continue to stir until the sugar begins to caramelize and turns brown (approximately 5-7 minutes).
- Pour the pecan mixture onto the cookie sheet and separate the nuts with two forks.
- When the nuts have cooled completely, place them in an airtight container. They will stay good for 3-5 days.
DARK CHOCOLATE PECAN TOFFEE BARK

- Line a cookie sheet with parchment paper. Set aside.
- In a glass bowl, microwave melting wafers in 30 second increments, stirring until melted. Alternatively, melt using a double boiler on the stove top.
- Add pecans and toffee to melted chocolate. Stir to coat.
- Pour mixture onto parchment paper. Using a spatula, spread chocolate into a thin, even layer. Your bark should be about 1/4" thick and make about a 10 to 12 inch circle with no holes.
- Place cookie sheet into refrigerator to harden, about 10-15 minutes. Break into pieces and store in a sealed container for up to 2 weeks.

MICROWAVE TOFFEE
Steps:
- Sprinkle your chopped nuts over either a silicone pad or a 12 inch piece of Release aluminum foil. (This foil is great to use!) Sprinkle the nuts in a circle about 10 inches length, keeping the nut pieces close together. You can also use a 9 inch pan, well-buttered! In a microwave-proof glass bowl, add the water, butter and sugar. Cook on high for seven minutes. Do not stop and stir your mixture. Just let it cook! If the mixture in the bowl is not a caramel'ish, lightly brown color, cook for one minute more. Remove bowl from microwave and pour the sugar mixture directly over the nuts. Using a rubber spatula, push the nuts on the sides into the edges of the mixture before it cools so that you don't waste nuts that are not attached to the candy. Quickly sprinkle your chocolate chips over the top of the candy and let it melt there for about 2 minutes. Spread the melting chips over the top of your toffee. I like to sprinkle this with extra nuts. Let the toffee cool completely. Break into pieces and serve!
MICROWAVE PECAN TOFFEE
Very easy, every day ingredients and quick. I believe the recipe said you could use pecans or almonds, but there are plenty of almond toffe recipes and besides, I like pecan toffee! I got this recipe from a cookbook, but can't remember the one. I have made this many times for work parties, christmas presents, bake sales and family. Everyone loves it!

- Butter a square 9x9 or 8x8 pan.
- Spread pecans in bottom of pan.
- Microwave brown sugar and butter in a 1 quart microwavable bowl, uncovered, 5 minutes, stirring every minute.
- Immediately pour over pecans, spreading evenly.
- Sprinkle with chips.
- When melted,(about 1-2 minutes) spread evenly.
- For more even cutting, cut lightly into 1-1 1/2 inch squares in the pan while still soft, right after spreading the chocolate.
- Refrigerate until hard, cut into squares along marks.
