- Butter a cookie sheet. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes.
- Stir in baking soda until light and foamy. Pour onto cookie sheet and spread thin. Cool completely and break into pieces and serve.

Note your microwave needs to be 750 to 950 watt. If your microwave is higher need to lower your cooking times and if your microwave is less you will need to increase your cooking time. I'm sorry I did not update this sooner.

- Mix sugar and corn syrup together and cook on high for 4 minutes.
- Add peanuts mix well and cook on high for 3 minutes.
- Add butter and vanilla and cook on high for 2 minutes.
- Add baking soda and mix well, mixture will foam.
- Spread on well butter foil.
- when completely cooled break in to pieces.
- Store in air tight container.
- NOTE: Any type of nut can be used in place of the peanuts.

- Grease a baking sheet, and set aside. In a glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer.
- Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool 15 minutes, or until set. Break into pieces, and store in an airtight container.

- Line a quarter or half sheet pan with parchment paper or a silicone baking mat, set aside.
- In a 2 quart or larger microwave-safe glass mixing bowl combine the sugar and corn syrup. Microwave on HIGH for 4 minutes.
- Mix in peanuts, then microwave on HIGH for 3 minutes.
- Mix in butter, vanilla and salt. Microwave on HIGH for 10 minutes. Whisk in baking soda and quickly pour onto the prepared baking sheet. Spread into a thin layer.

MICROWAVE PEANUT BRITTLE
Peanut Brittle, a family favorite at Christmastime, can now be made easily in the microwave in about 7 1/2 minutes.

- Butter/grease a cookie sheet. Alternatively, line a cookie sheet with a Silpat or buttered foil. Set aside.
- In a large glass (no plastic) microwave safe bowl, stir together the raw peanuts, sugar, corn syrup and salt. (If using baked or roasted peanuts do not add add at this time.)
- Cook 3 minutes on high.
- Stir well. If using baked or roasted peanuts, add them now and stir.
- Cook 3 minutes on high.
- Stir in butter and vanilla.
- Cook 1 1/2 minutes longer on high.
- Add baking soda and stir quickly until light and foamy.
- Immediately pour onto lightly greased cookie sheet.
- Cool and break. I 'drop' the pan on the counter top once or twice to break up the brittle. It works great! If there are still large pieces remaining, simply break them by hand. They snap easily.
- Follow the cooking instructions the same as for the 1100-1200 watt microwaves except that the cooking times will be 3 minutes, 3 minutes, 2 minutes.

MICROWAVE PEANUT BRITTLE
Microwave peanut brittle is an easy 15 minute candy perfect for the holidays. It's a family favorite recipe at every Christmas!

- In a glass 1.5 qt casserole or mixing bowl, stir the corn syrup and granulated sugar together and microwave for 3.5 minutes. Stir in the peanuts and microwave for 3 more minutes until light brown. Add the butter and vanilla to the mixture and stir until well combined. Microwave for an additional 1.5 minutes.
- You will need to work quickly for the next step, so be sure to have your buttered cookie sheet ready to go. Add the baking soda to the mixture and gently stir until light and foamy. Quickly pour the foamy mixture onto the greased cookie sheet.
- Do NOT use a spoon to spread the mixture around. Instead, gently rotate the pan to spread the mixture around until it is about 1/2 inch thick. Work quickly, because it will began hardening very fast.
- Let the peanut brittle cool for at least 1/2 hour or until it is hard and smooth to the touch. When it is cooled, break the candy into small pieces and store in an air-tight container.

1200 WATT MICROWAVE PEANUT BRITTLE
Bravo to Love2Eat's Peanut Brittle in a Jiffy #58383 - it got me started, but with the adjustments for my higher powered microwave and some flavor changes I thought I should write my own recipe. I can not say how much Love2Eat's note about having everything measured out and ready to go was a life saver. I use an 8 cup pyrex measuring bowl with a handle as this mixture bubbles up and gets very hot (bowl gets very hot too) - it is MOLTEN SUGAR- if your work area is not right next to your sink - have a bowl of ice water in case of burns. THIS RECIPE IS FOR A 1200 WATT MICROWAVE. Oh yeah, I sorta faked it on how many this will serve - it is habit forming.

- Line a baking/cookie sheet with foil or parchment paper and spray with cooking spray or grease with butter.
- Put 1 tablespoon molasses in a ½ cup measuring cup and then fill with corn syrup (spray cup with cooking spray first, so corn syrup will come out easier).
- Put corn syrup mixture and white sugar in an eight cup bowl and mix well then microwave on high for 2 minutes, remove and stir and then microwave for 1 more minute.
- Remove from microwave and add peanuts, stir into bubbling sugar mixture and microwave for 2 minutes.
- Remove from microwave and then stir in butter and vanilla and microwave for 1 minute.
- Remove from microwave and quickly stir in baking soda - it will get somewhat white and foamy - spread out onto baking sheet - you can let it cool at room temperature or cool in the fridge. Put mixing bowl cup in sink under hot running water to aid in cleanup.
- * I add the molasses because it gives the brittle a beautiful color - it is not required to make the recipe - if you don't want to use it, just use a full ½ cup of corn syrup. Watch out with sampling - this stuff is habit forming - if you want to bump it up a notch - add 1 teaspoon cinnamon to sugars at begining (my daughter and I like) or if you really want to kick up it up - add the cinnamon and 1/3 teaspoon caynne pepper - hot stuff. I love the sweet and spicy.
