Copy Cat Recipe. I wanted a quick recipe to copy the sweet corn cakes that are served at Mexican restaurants like El Torito and Chi Chi's. This is ready to eat in about 15 minutes. If you don't have masa harina flour on hand, you can add an additional 1/4 cup of yellow cornmeal, but the masa harina flour adds the authentic taste to this dish. For a less sweet dish, reduce granulated sugar to 1/3 cup. For a firmer sweet corn cake, microwave an additional 3-minutes.

2 cups milk
2 cups water
1 cup yellow cornmeal
1/4 cup masa harina flour
1/2 cup granulated sugar
1 (15 ounce) can creamed corn
4 tablespoons butter, melted
1 egg, beaten
1 tablespoon baking powder
1/4 teaspoon salt

Steps:

  • Mix all ingredients well, stir out any dry lumps in batter and pour into a 3-quart covered, microwaveable casserole dish.
  • Cover and microwave on high for 6-minutes.
  • Stir well. Stir bottom and sides of dish well to remove any dry lumps.
  • Cover and microwave on high for another 6-minutes.
  • Stir well. Stir bottom and sides of dish well to remove any large lumps.
  • Serve warm using an ice cream scoop or disher.

I loved the sweet corn cake that was always served as a side dish with my favorite Tex Mex dishes when visiting the Southwest so... I have looked around, modified it, tweeked here and there to come up with this recipe. I make this disha nd serve with my Sour Cream Chicken Enchildadas, refried beans, guacamole, and pico de gallo. So incredibly YUMMY! I almost always DOUBLE this recipe, and cook for about 55 minutes

Number Of Ingredients 10

1/4 cup butter
2 tablespoons shortening
1/2 cup masa harina
3 tablespoons cold water
10 ounces corn kernels
3 tablespoons cornmeal
1/4 cup sugar
2 tablespoons whipping cream
1/4 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Place butter and shortening in mixer bowl and whip until soft. Continue whipping until fluffy and creamy. Add masa gradually while mixing, add water gradually and mix thoroughly.
  • Place corn kernels in blender or food processor fitted with metal blade coarsely chop. Stir into the masa harina mixture. Place (regular) cornmeal, sugar, whipping cream, baking powder and salt in large mixing bowl and mix quickly. Add masa mixture and mix lightly, just until blended. Pour into greased, 8-inch-square baking pan, and cover with foil.
  • Method 1: Bake in 350-degree oven 40 to 50 minutes or until corn cake has a firm texture.
  • Method 2: Place corn cake pan in a larger pan and pour boiling water half way up corn cake pan. Bake at 350 degrees 40 to 50 minutes, checking water level and adding more boiling water, if necessary. When cooked through, remove corn cake pan from water.
  • Let cooked cake stand at room temperature for few minutes before cutting into squares or using a small ice cream scoop to serve.
  • Store any leftovers in refrigerator.

This is a recipe I submitted in response to a request. I have not tried it. "This dish is really more like a pudding than a cake. Serve a scoop of it freshly steamed as it loses its light, fluffy consistency when reheated in the oven. The secret to making great corn cake is in the steaming. You can try and bake the cake in a pan in the oven (inserted in a pan of water to create steam), or you can steam them on the stove in a steamer basket." I found this recipe through Recipe Goldmine. It comes from The Blue Mesa Grill in Dallas, TX.

corn husk (enough to line and cover a 3 quart steamer basket in a double layer)
1/4 cup vegetable shortening (like Crisco)
1/2 cup unsalted butter, softened
1 cup masa dough
1 cup cold water
1 lb corn, fresh and cut off the cob (or frozen and thawed)
1/2 cup yellow cornmeal
3/4 cup sugar
1/4 cup heavy cream
1/2 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • *Noteon Masa: You can buy prepared masa dough at most Mexican and specialty food markets.
  • Or you can readily purchase Masa Harina (made by Quaker Oats) which is dried corn that has been ground and treated.
  • It is the basic ingredient used in making tamale dough (also called masa).
  • Soak corn husks in hot water for 30 minutes until pliable.
  • Drain.
  • Place vegetable shortening and butter in a mixing bowl and beat on medium speed until mixture becomes fluffy and creamy.
  • Add masa and mix on low speed for about 2 minutes.
  • Add water and mix well on medium speed.
  • Grind the corn coarsely in a food processor.
  • In a large mixing bowl combine the corn meal, sugar, whipping cream, baking powder and salt.
  • Add the masa mixture and the ground corn and mix well.
  • To steam the corn cake, line the steamer basket with the softened corn husks.
  • Fill with corn cake batter.
  • Cover with more corn husks and a tea towel to absorb moisture.
  • Steam on the stove for about 2 1/2 hours.
  • Batter should not stick to husks when corn cake is done.
  • If it does, it needs to steam longer.
  • **Noteon steamers: You can also improvise a steamer by placing a rack on cans in a large stockpot or Dutch oven with a tight-fitting lid.

I love Mexican Food! This is a tasty little side dish served at restaurants such as Chi Chi's, El Torito, and Chevy's Fresh Mex. This is more like a corn pudding, but I have known others to fry the dough into a pancake. Masa Harina, one of the ingredients, means corn flour. I have found it at major grocery chains or you can find it at a store that specializes in Hispanic foods. I could eat this for breakfast, lunch , and dinner.

  • Cover pan with foil and bake.
  • Bake 40-50 minutes at 350 until it is consistency of custard.
  • Allow to stand at room temperature for 15 minutes.
  • May serve with an ice cream scoop or cut into squares.
  • You may use a food processor and add ingredients as specified above.
