QUICK MICROWAVE FRITTATA CASSEROLE
Great for last minute Sunday brunch! Quick and easy. Very nice with a green salad.

- In a non-metallic 2 quart casserole dish, stir together potatoes, carrot, onion, parsley and butter. Cover and microwave on High for 5 minutes, stirring once or twice. Season with salt and pepper.
- In a medium bowl, beat together, eggs, milk, mustard and hot pepper sauce. Stir in cubed ham. Pour egg mixture into casserole, stir to combine.
- Cover dish and microwave on high for 3 minutes. Draw cooked egg toward middle of dish and microwave on medium for 10 to 12 minutes. If you do not have a turntable rotate dish 2 to 3 times. Sprinkle cheese on top, cover and microwave for 30 to 60 seconds until cheese is melted. Let stand 5 minutes before serving.

Microwave carrots are one of the quickest and easiest ways to add some veggies to your plate. The bright and sweet combo of steamed carrots with a tab of butter and sprinkle of salt and fresh ground pepper is total comfort food and absolutely worth the (extremely minimal) prep.

- Place carrots and water in a medium microwave-safe bowl. Top with a microwave-safe plate and microwave for 3 minutes. Allow to sit for 1 minute. Very carefully remove plate (steam will be hot!) check carrots for doneness, and if necessary cook for 1 minute more with 1 minute rest.
- Drain excess water and add butter. Toss until butter is melted and carrots are coated. Sprinkle with salt and pepper to taste. Serve and enjoy!

- 1. Scrape carrots and slice to medium thickness. Put in a deep 1-quart microwaveable casserole dish. Set aside.
- 2. In small mcrowaveable dish, combine remaining ingredients. Microwave for 1 minute on high. Spoon sauce over carrots. Cover and microwave 3 minutes on high. Stir and baste with sauce. Microwave an additional 3 minutes.
- 3. Microwave uncovered for an additional 3 minutes. Serve

I learned to make this yummy cake in a microwave cooking class more than 15 years ago. I keep cans of cream cheese frosting in the cupboard and usually have the rest of the ingredients on hand. - In a large bowl, combine the first eight ingredients. Gradually beat in oil. Add eggs, one at a time, beating well after each. Stir in the carrots, pineapple and pecans. WONDERFUL FLAVOR!! Bake along in oven with a meat or Microwave for a quick and easy casserole. The butter-cinnamon mixture is AWESOME with the carrots and makes a good side dish with any dinner! Great to carry to a potluck because it is great served hot or cold.

- Mix melted butter, brown sugar, cinnamon and salt in a small bowl. Stir in hot water. If microwaving use 1/4 cup hot water.
- Place carrots in baking dish and pour butter mixture over carrots. Stir to coat.
- Spray or grease a 1 1/2 quart baking dish. BAKE 50 to 60 minutes in a 350 degree oven until tender or MICROWAVE for approximately 15 minutes. (Tenderness will depend on size of sliced carrots.).
- Serve hot or cold.

- In a small bowl whip the egg white with a fork until foamy and light (just for a minute or two). In a medium bowl mix flour, sugar, baking soda, spices, milk, egg yolk, egg white, carrots, oil, raisins, pecans, and orange zest together using a spoon or spatula until the mixture is homogeneous.
- Once the batter is made it will be quite thin and can be refrigerated for up to 2 hours before cooking. When ready to make the cakes, stir the batter once again, just to make sure everything is incorporated. Divide the batter equally among 2 coffee mugs (make sure they are not too small, the cake puffs up a lot). Microwave on high for 2-2 ½ minutes (I found 2 ¼ minutes was perfect).
