1 pound Boneless Skinless Chicken Breast (chopped into large pieces to cook faster)
1 Tbsp Olive Oil
2 Celery Ribs (chopped)
1 medium Sweet Onion (diced)
1 Green Pepper (chopped)
2 medium Carrots (peeled and sliced)
1/2 medium Head Cabbage (chopped)
1 cup Frozen Peas (no need to thaw)
14 oz Marinara Sauce (one can)
6 cups Chicken or Vegetable stock
1/2 tsp. Garlic Salt
1/4 tsp. Garlic Powder
1/4 tsp. Pepper
Minced fresh parsley (optional)

Steps:

  • Heat oil in a Dutch oven or a soup pot over medium-high heat.
  • Add chicken and cook until golden brown and no longer pink in the inside, about 10-12 minutes. Set aside on a chopping board and shred it with 2 forks.
  • To the same pot add celery, carrots, green peppers, onions, and stir fry for about 5 minutes.
  • Stir in shredded chicken, cabbage, marinara sauce, and chicken stock. Stir well and cook for 15-20 minutes, or until cabbage is tender.
  • Add in frozen peas, garlic salt, garlic powder, and pepper, mix until well combined. Allow it to simmer for a few minutes more, just until peas are done.
  • Garnish with fresh parsley, then pour into warm bowls and serve.

1/4 small cabbage (thinly sliced)
2 tablespoons unsalted butter
Salt (to taste)

Steps:

  • Gather the ingredients.
  • Place the sliced cabbage in a small microwave-safe casserole dish.
  • Add 1/4 inch of water.
  • Cover and microwave on high for 8 minutes. (If your microwave doesn't have a turntable, rotate the dish 1/4 turn halfway through cooking.)
  • Drain the water from the dish.
  • Add the butter and salt. Serve and enjoy.
  • Fill a large pot with water and set a steam basket or metal colander on top of the pot. The water in the pot should be just below the basket.
  • Bring the water to a boil, then add the sliced cabbage to the basket.
  • Cover the basket with a lid and steam until the cabbage is tender and crisp. Most cabbage takes about 5 to 8 minutes. Some varieties like napa, bok choy, and savoy cabbage may only take 3 to 5 minutes. (If using a colander, be sure that you leave a little space so the steam can escape. Tilting the lid works quite well.)
  • Remove the cabbage from the basket and add butter and salt.
  • Serve and enjoy.

Microwave Cabbage Soup image

I ate a cabbage soup at a restaurant that was so delicious, I had to seek out the recipe. I was so happy when I found a version of this recipe in one of my older cookbooks. I changed some ingredients to match the taste of what I ate at the restuarant and here is the result. The cook times will vary greatly from microwave to microwave, so you may need to keep checking for doneness the first time. If you like a little more zest, toss in a little garlic or a slice of ginger, or even float some fresh jalapeno slices on top if you like it really spicy. I have posted the family friendly version, but feel free to adjust the seasonings to your liking. Please note: despite the addition of milk in this, the soup is not a creamy soup, but is more brothy.

4 cups green cabbage, chopped or shredded finely
3 tablespoons unsalted butter or 3 tablespoons margarine
2 onions, chopped (I use Vidalia sweet onions)
1 bunch scallion, chopped (green & white parts, reserving some of the green for garnish)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon granulated sugar
2 (16 ounce) cans chicken broth or 2 (16 ounce) cans vegetable broth
1 cup skim milk, warmed
1 cup shredded carrot (approx 2 carrots)

Steps:

  • You will need a deep, heavy microwave safe cooking dish- such as a round Corningware casserole (no lid).
  • Put butter in casserole and heat for 40 seconds on HIGH heat (or until melted).
  • Add cabbage, onions, scallions, salt, pepper, and sugar.
  • Cook on HIGH 4-6 minutes.
  • Add the broth and cook on HIGH another 15 minutes.
  • Add the warm milk (I remove the soup from the microwave and heat up the milk for 1 minute or so in a glass measure).
  • Stir in the carrots and return to the microwave to heat on HIGH 3-4 minutes.
  • Test for seasonings- add more salt, pepper, or sugar if needed to suit your tastes.
  • You may need to adjust cooking times for your microwave- if cabbage is not tender enough yet, keep microwaving in 3-4 minute intervals on HIGH,stirring, until veggies are cooked to your liking.

I'm always looking for a way to recycle leftovers, and this casserole is a great way to do just that. To leftover ham and a bit of cabbage, add some fridge and pantry staples and create a warm, comforting casserole for your family to enjoy. Toss a salad while the casserole is baking, add some biscuits or cornbread, and your meal is complete!

2 cups chopped cooked ham
1 ½ cups frozen Southern-style hash brown potatoes, thawed
5 tablespoons unsalted butter, divided
1 ½ cups chopped onions
5 cups chopped cabbage
½ cup shredded carrots
3 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon dry mustard
¼ teaspoon white pepper
2 cups milk, or more as needed
1 cup grated sharp Cheddar cheese
3 slices bacon strips, cooked and crumbled
¾ cup buttery round crackers, crumbled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Spread out chopped ham on the bottom of the prepared dish.
  • Set hash browns on a microwave-safe plate and microwave on high power for 1 minute and 30 seconds. Potatoes should be thawed and feel slightly warm to the touch, but not be cooked. Set aside.
  • Melt 2 tablespoons butter in a large skillet over medium heat and cook onions until they are just starting to turn clear, 2 to 3 minutes. Add chopped cabbage and continue to cook, stirring often, until cabbage wilts down a little but is still crisp, 3 to 5 minutes. Stir in shredded raw carrots and microwaved hash browns, then add mixture to the baking dish.
  • Wipe out the skillet and melt the remaining 3 tablespoons butter over medium heat. Combine all-purpose flour, salt, dry mustard, and white pepper in a small bowl. Sprinkle flour and seasonings over the melted butter and stir, constantly, until flour and butter are well mixed and the mixture is bubbly, about 3 minutes. Allow to bubble for 1 minute, while stirring.
  • Gradually pour in milk, stirring constantly to avoid lumps. Cook, stirring, until the mixture boils and thickens, 3 to 5 minutes. If the mixture is too thick, stir in an additional 3 to 4 tablespoons milk. Remove from heat.
  • Add half of the grated Cheddar cheese and stir until it is melted, then add the remaining half and repeat.
  • Pour sauce over the casserole and top with crumbled bacon and cracker crumbs.
  • Bake in the preheated oven until the top is bubbly and brown, 30 to 35 minutes. Serve warm.
