MICROWAVE RED CABBAGE WITH BACON AND CARAWAY SEEDS
Braised cabbage is a common German side dish, but can often be overly rich. This lightened-up version could not be simpler, since everything from the bacon to the cabbage is cooked in the microwave. Caraway seeds lend an earthy note to the dish while apple cider vinegar keeps it from becoming too heavy. Pair the cabbage with an oven-roasted pork tenderloin for a hint of Germany at your dinner table.

Steps:
- Line a large heatsafe plate with 4 sheets of paper towels. Lay the bacon slices side-by- side on top of the paper towels, then top with 2 additional sheets of paper towels. Microwave on high for 5 minutes. Check the bacon to see if it is cooked through and crispy. If not, cook in 1-minute intervals until the bacon is crispy. Reserve.
- Put the butter, shallot and caraway seeds into a large heatsafe glass bowl. Microwave on high for 1 minute to melt the butter. Add the cabbage, apple cider vinegar, 1 1/2 teaspoons salt and 1/4 teaspoon pepper to the melted butter and stir to combine. Cover with a vented lid or plastic wrap with 6 small holes poked in it. Microwave on high for 5 minutes. Carefully uncover and stir the cabbage. Cover again and cook, stirring every 5 minutes, until the largest parts of the cabbage are wilted and tender, 10 to 15 additional minutes.
- Use a pair of tongs to transfer the cabbage to a serving platter; discard any extra liquid in the bowl. Roughly chop the bacon and sprinkle over the cabbage. Serve immediately.

STEAMED CABBAGE RECIPE 2 WAYS
Steps:
- Gather the ingredients.
- Place the sliced cabbage in a small microwave-safe casserole dish.
- Add 1/4 inch of water.
- Cover and microwave on high for 8 minutes. (If your microwave doesn't have a turntable, rotate the dish 1/4 turn halfway through cooking.)
- Drain the water from the dish.
- Add the butter and salt. Serve and enjoy.
- Fill a large pot with water and set a steam basket or metal colander on top of the pot. The water in the pot should be just below the basket.
- Bring the water to a boil, then add the sliced cabbage to the basket.
- Cover the basket with a lid and steam until the cabbage is tender and crisp. Most cabbage takes about 5 to 8 minutes. Some varieties like napa, bok choy, and savoy cabbage may only take 3 to 5 minutes. (If using a colander, be sure that you leave a little space so the steam can escape. Tilting the lid works quite well.)
- Remove the cabbage from the basket and add butter and salt.
- Serve and enjoy.

MEAT CABBAGE CASSEROLE (MICROWAVE VERSION)
Microwave setting: HIGH 100% If you like the onions real soft, start by microwaving them in the butter first. Then add the meat and cook again according to the recipe directions. Onions have a tendency to remain hard if not cooked separately.

Steps:
- 1. Break up meat into a microsafe baking dish. Microwave for about 3 minutes at HIGH power until meat loses its pink color. Stir and turn meat once.
- 2. Add onion. Microwave another 3 minutes until onion is soft.
- 3. Add butter. Stir until melted.
- 4. Add carrot. Stir well to blend.
- 5. Microwave for 1 minute at HIGH power until carrots are soft. Sprinkle with salt and pepper.
- 6. Layer cabbage on top of meat mixture.
- 7. Mix spaghetti sauce, Worcestershire sauce and chives. Pour over top. Cover.
- 8. Microwave at HIGH power for 10 minutes. Stir once or twice and press down slightly.
- 9. Microwave another 3 to 4 minutes.
- 10. Add cheese on top. Microwave, uncovered until cheese is melted.
- 11. Serve with a green salad or boiled potatoes for a more substantial meal.
MICROWAVE CABBAGE SOUP
I ate a cabbage soup at a restaurant that was so delicious, I had to seek out the recipe. I was so happy when I found a version of this recipe in one of my older cookbooks. I changed some ingredients to match the taste of what I ate at the restuarant and here is the result. The cook times will vary greatly from microwave to microwave, so you may need to keep checking for doneness the first time. If you like a little more zest, toss in a little garlic or a slice of ginger, or even float some fresh jalapeno slices on top if you like it really spicy. I have posted the family friendly version, but feel free to adjust the seasonings to your liking. Please note: despite the addition of milk in this, the soup is not a creamy soup, but is more brothy.

- You will need a deep, heavy microwave safe cooking dish- such as a round Corningware casserole (no lid).
- Put butter in casserole and heat for 40 seconds on HIGH heat (or until melted).
- Add cabbage, onions, scallions, salt, pepper, and sugar.
- Cook on HIGH 4-6 minutes.
- Add the broth and cook on HIGH another 15 minutes.
- Add the warm milk (I remove the soup from the microwave and heat up the milk for 1 minute or so in a glass measure).
- Stir in the carrots and return to the microwave to heat on HIGH 3-4 minutes.
- Test for seasonings- add more salt, pepper, or sugar if needed to suit your tastes.
- You may need to adjust cooking times for your microwave- if cabbage is not tender enough yet, keep microwaving in 3-4 minute intervals on HIGH,stirring, until veggies are cooked to your liking.

MY MICROWAVED CABBAGE
I never had a recipe for this, but I have made it like this for a very long time. I find it quite tasty.

Steps:
- 1. Rough cut cabbage, however much you want or need, into a microwave safe bowl.
- 2. Salt and pepper to taste. Lightly sprinkle with onion and/or garlic powders (optional), not enough to overtake the flavor of the cabbage.
- 3. Drop teaspoons of butter or margarine on top of cabbage, you judge for your taste.
- 4. Microwave for 2-3 minute intervals until it reaches your desired level of "doneness". I like mine to be firm but not crunchy.
- 5. This gives the cabbage a light, but very flavorful taste. Enjoy!
PICKLED CABBAGE
This is a sort of pickled cabbage that makes a great, sharp, appetizer. Or it can also be added into other recipes. There is no need to cook the cabbage, but instead just place it in the fridge. It will keep in the fridge for a week or so.

- Place cabbage into a large bowl. Sprinkle with salt and mix to distribute. Let stand for 20 minutes, mixing with your hands every few minutes.
