Microwave Bread-and-Butter Pickles image

Like a bread and butter pickle and really super easy. You can even play with the proportions a bit. I like to increase the vinegar, salt and spices a bit but you could make it sweeter too. Be prepared to make this one over and over if you have any pickle lovers in the house.

1 cup white sugar
½ cup white vinegar
1 teaspoon salt
½ teaspoon mustard seed
¼ teaspoon celery seed
¼ teaspoon ground turmeric
2 large English cucumbers, thinly sliced
1 large onion, diced

Steps:

  • Stir sugar and vinegar in a large microwave-safe bowl until sugar has dissolved; mix in salt, mustard seed, celery seed, and turmeric. Stir cucumbers and onion into the pickling mixture.
  • Microwave on high, stirring twice, until cucumber slices are tender and onion is translucent, 7 to 8 minutes. Chill before serving.

⅔ cup brown sugar (142 grams)
¼ cup butter (57 grams (½ stick))
⅓ cup granulated sugar (67 grams)
2 teaspoons ground cinnamon (6 grams)
16 ounces flaky or buttermilk biscuits (453 grams, cut into bite-sized pieces (1 can))
½ cup chopped pecans (57 grams, optional)

Steps:

  • Lightly butter a microwave-safe pie pan with a ramekin in the center or spray with nonstick spray. Set aside.
  • In a medium microwave-safe bowl, combine the brown sugar and the butter. Melt them in the microwave for about 45-60 seconds. Remove from the microwave and stir together. Set aside.
  • In a medium bowl, whisk together the sugar and cinnamon. Roll each piece of the biscuit in the sugar mixture, making sure it is completely covered. You may coat 2 or 3 pieces at a time.
  • Place each dipped piece into the prepared pie pan. Surround the ramekin with the coated biscuits. Continue coating pieces until all of them are covered.
  • Drizzle the melted butter mixture over the pieces of dough, trying to cover as much of the bread as possible. Sprinkle with chopped pecans, reserving 1 tablespoon of the pecans to top the bread before pulling them apart.
  • Place the pie pan in the microwave and cook on high for 5-6 minutes. The bread will rise just a little bit while cooking. Remove from the microwave oven and allow the bread to cool for about two minutes.
  • Before serving, place a plate over the pie pan and then flip it over onto the plate. Sprinkle the reserved pecans over the top of the bread and then use a large fork to spread the bites around the plate for easier serving.

¼ cup warm water (110 degrees F/45 degrees C)
1 (.25 ounce) package active dry yeast
1 cup lukewarm milk
2 teaspoons white sugar
1 teaspoon salt
⅛ teaspoon baking soda
1 cup whole wheat flour
2 cups all-purpose flour

Steps:

  • Lightly grease a microwave-safe 9x5 inch loaf pan; sprinkle pan with cornmeal.
  • In a large bowl, dissolve yeast in water. Add milk, sugar, salt, soda and whole wheat flour; beat well. Beat in all-purpose flour, 1/2 cup at a time, until a soft dough is formed. Turn dough out onto a lightly floured surface, and knead for about 5 minutes, or until smooth. Form into a loaf, and place into the prepared pan.
  • Place in microwave oven uncovered, at 50 percent power, for 1 minute. Let rest for 10 minutes. Repeat 1 or 2 times until loaf has doubled in size.
  • Microwave on high for 4 to 6 minutes, until top is no longer moist. Let stand for 5 minutes in pan. Remove and cool on a rack.

Although it has no crust or color, this loaf of bread is light and airy, with surprisingly great texture reminiscent of Chinese steamed buns. Equally amazing -- it takes only about 4 minutes to bake.

2 tablespoons unsalted butter, melted, plus more for the dish
1 1/2 teaspoons active dry yeast
1 1/2 teaspoons sugar
1 1/2 teaspoons kosher salt
2 2/3 cups all-purpose flour (see Cook's Note)

Steps:

  • Butter a 1.5-quart microwave-safe glass loaf dish and set aside.
  • Combine the butter, yeast, sugar, salt and 1 cup warm water in a stand mixer fitted with the dough hook attachment. With the mixer on low speed, add 1/2 cup of the flour at a time, waiting for each addition to be fully incorporated before adding more. Once all of the flour is added, knead on medium speed for 8 minutes.
  • Transfer the dough to the prepared dish, cover and let rise until doubled in size, about 1 hour.
  • Microwave on high until the internal temperature of the bread registers 200 degrees F, about 4 minutes. Check for doneness starting at 3 minutes, as microwave power levels may vary. Let cool in the dish for 5 minutes, then turn out onto a rack and let cool completely.

  • Stir together the dry ingredients. Place the coconut flour, ground cinnamon, and baking powder into the mug. Add a pinch of salt, then stir everything together with a fork or mini whisk.
  • Pour in the wet ingredients. Measure out the milk, and pour it into the mug. Add in some maple syrup for extra sweetness. If you don't have any maple syrup, or if you just don't like it, you can use honey or agave nectar instead.
  • Add the rest of the ingredients. Peel and mash a ripe banana, and add it into the mug. Lightly beat an egg, and add in that as well. For extra crunch, add in some chopped walnuts.
  • Mix the batter together once more. Use a fork or spoon to stir everything together. Be sure to scrape the bottom and sides of the mug often so that everything gets evenly mixed together.
  • Cook the bread on high for 3 to 3½ minutes. Place the mug into the microwave. Cook it on high for 3 minutes. If you used almond flour, cook it for 3½ minutes instead.
  • Let the bread cool before serving it. Once the bread has cooled to room temperature, you can dig in with a fork or spoon. If you'd like, you can turn it out of the mug onto a plate instead, and eat it that way.
