HOME-STYLE "TATER TOTS" WITH TRUFFLES

Truffle oil and minced black truffles make this appetizer anything but kid food.

Yield Makes about 50

Number Of Ingredients 12

1 cup water
1/2 cup (1 stick) butter, cut into 1-inch pieces
1/2 teaspoon salt
1 cup all purpose flour plus additional for coating
2 large eggs
1 1/4 pounds Yukon Gold potatoes, peeled, cut into 2-inch cubes
2 teaspoons finely chopped black truffle
1 1/2 teaspoons white truffle oil*
1/2 teaspoon salt
1/4 teaspoon ground white pepper
Vegetable oil (for deep-frying)
*Truffle oil is available at some supermarkets, specialty foods stores, and Italian markets.

Steps:

  • Bring first 3 ingredients to boil in heavy medium saucepan. Add 1 cup flour; stir over medium-high heat until mixture pulls away from edges of pan, about 1 minute. Transfer to medium bowl. Using electric mixer, beat dough 3 minutes. Add eggs 1 at a time, beating well between additions. Measure 1 1/2 cups dough and reserve (discard any remaining dough).
  • Place potatoes in medium saucepan. Add enough water to cover by 1 inch. Boil until tender, about 12 minutes. Drain. Press potatoes through ricer or food mill into large bowl. Add 1 1/2 cups reserved dough, chopped truffle, truffle oil, salt, and white pepper. Using electric mixer, beat dough on low speed to blend.
  • Line baking sheet with parchment paper. Transfer dough to pastry bag fitted with 3/4-inch-diameter plain tip. Pipe dough in logs onto prepared sheet. Freeze until firm but not frozen, about 1 hour. Cut logs into 1 1/4-inch-long pieces. Toss in flour, return to sheet, cover, and freeze completely. DO AHEAD Can be made 1 week ahead. Store in airtight container; keep frozen.
  • Pour enough oil into large saucepan to measure depth of 2 inches. Heat oil to 350°F. Working in batches, cook frozen potato pieces until cooked through and golden brown, stirring occasionally, about 3 minutes. Transfer to paper towels to drain. Sprinkle with salt and serve.

1 1/2 lb small red potatoes peeled
vegetable oil for deep frying
salt
1 c freshly parmigiano-reggiano cheese
2 Tbsp black truffle oil

Steps:

  • 1. use a mandolin to slice the potatoes very thin. Soak them in cool water for 30 minutes. Drain and dry completely.
  • 2. Heat the oil to 360 degrees. Deep fry the potatoes for 3 to 5 minutes until golden brown. Drain on paper towels. Season with salt. Transfer the potatoes to a bowl
  • 3. Toss with the truffle oil and cheese. Serve immediately

3 medium red potatoes
1/4 cup olive oil
1 teaspoon salt
Curry powder

Steps:

  • Layer three paper towels on a microwave-safe plate; set aside., Scrub potatoes and cut into 1/16-in.-thick slices. Brush slices on both sides with olive oil and lightly sprinkle with salt and curry. Arrange on prepared plate (do not overlap)., Microwave on high for 3 minutes; turn and microwave 2-3 minutes longer or until chips are dry and brittle. Repeat with remaining potatoes, oil and seasonings. Let chips cool for at least 1 minute before serving. Store in an airtight container.

I'm showing you an amazing, no-deep-fry, no-air-fry, no-oven method for making perfectly crisp potato chips in your microwave. Not only is this method fast and easy, but this produced one of the best tasting potato chips I've ever had. I know it sounds too good to be true, but it is.

parchment paper
1 large russet potato, scrubbed
2 tablespoons canola oil
salt to taste

Steps:

  • Fold a piece of parchment paper into eighths, paper airplane-style. Place the tip of the folded parchment in the center of a microwave-safe plate and measure the radius; cut remaining parchment off and unfold into a circle to fit the plate.
  • Slice potato thinly using a mandolin and transfer to a bowl of cold water; rinse off as much starch as possible. Transfer potato slices to a clean kitchen towel to dry; blot tops as well to ensure they are as dry as possible.
  • Brush some oil over the parchment paper. Working in batches, place as many potato slices on the oiled parchment that will fit; brush tops of slices with more oil.
  • Cook in a microwave for 3 ½ minutes. Flip and continue to cook until browned and stiff, about 4 minutes more, checking the appearance often to make sure they don't burn.
  • Transfer chips to a cold plate and season with salt. Let cool before serving. Continue with remaining potato slices.

1 medium potato sliced very thin-1/16 inch**i used a mandoline**
1 tsp black truffle oill
everglades seasoning, parmesan cheese & parsley to taste**favorite seasoning**

Steps:

  • 1. soak sliced potatoes in cold water. rinse them off. allow potatoes to dry between clean dish towels.
  • 2. lay the potatoes in a single layer on pa rack or paper towels towels. brush potato slices with truffle oil and sprinkle with everglades, cheese and herbs. **you can omit oil and seasoning if you wish**
  • 3. place taters on paper towels. microwave on high at "100%** for about 2 1/2 minutes. flip potato slices over and cook at 50% for 1 1/2 minutes or so. they will begin to brown. keep your eye on them, they brown quickly. repeat in batches. remove from microwave and let cool. plate up and serve!
