DAD'S SWEDISH MEATBALLS

My father used to make these tender meatballs every year for Christmas when I was a kid. Now I carry on the tradition, and everyone still loves them.

1 egg, lightly beaten
1/2 cup milk
1 cup soft bread crumbs
1/2 cup finely chopped onion
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1 pound ground beef
1/2 pound ground pork
1/4 cup butter, cubed
DILL CREAM SAUCE:
2 tablespoons all-purpose flour
1 cup heavy whipping cream
1 cup beef broth
1 teaspoon salt
1/2 teaspoon dill seed

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef and pork over mixture and mix well. Shape into 1-1/2-in. balls. In a large skillet, cook meatballs in butter in batches until a thermometer reads 160°. Remove and keep warm., In a small bowl, combine the sauce ingredients until blended. Stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with meatballs.

  • Mix all ingredients together and form balls. Coat a large skillet with non-stick olive oil spray. Fry meatballs for about 10 minutes or until nice and brown. Store in an airtight container andamp; refrigerator until ready to use, or drop immediately into tomato sauce and cook until sauce is heated through.

1-1/2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
2/3 cup water
2 cans (8 oz. each) crushed pineapple in juice, drained
1 bottle (18 oz.) KRAFT Original Barbecue Sauce
1/4 cup packed brown sugar

Steps:

  • Heat oven to 425ºF.
  • Mix meat, stuffing mix and water just until blended. Shape into 1-inch meatballs.
  • Place in 13x9-inch baking dish sprayed with cooking spray.
  • Bake 20 min. or until done (160ºF). Meanwhile, combine remaining ingredients.
  • Pour barbecue sauce mixture over meatballs; stir to evenly coat meatballs. Bake 10 min. or until sauce is heated through.

My Dad's Famous Meatballs image

I grew up on these meatballs. My dad use to make them all the time and now I do for my family and friends and everyone loves them. We make a lot so we can have spaghetti one night and the meatball subs the next! To be honest I made the measurements as best I could but it goes by your own judgment. Once the eggs and bread crumbs are mixed you just shake the spices over the meat to cover evenly.

1 1/2 lbs ground beef
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon crushed red pepper flakes
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon parsley
2 eggs
1 1/2 cups Italian seasoned breadcrumbs, with cheese

Steps:

  • Place the ground beef ( 7% fat is best ) in a large mixing bowl.
  • Preheat oven to 375°F.
  • Then place eggs and bread crumbs in and mix well with your hands.
  • Then put in all spices. The best thing to do is sprinkle them over the mixture evenly. I made the measurements the best I could, but I have never really measured before. I only went by my own judgment.
  • Using a broiling pan so that the grease drips down inside of it, roll your meatballs according to size.
  • Bake for about 20 minutes, turning the meatballs half way through.

I got this recipe at my wedding shower and it is a great hit. DH isn't allowed to bring anything else to his potlucks at work and everyone looks for them at church potlucks too! Really easy, but really good! We prefer all beef meatballs, but that is just personal preference. Pepper jelly is good if you like a bit spicy. I often use all the little bits of jelly left in the fridge to equal 12oz. DH likes to use apricot jelly the best. If you have any leftover, they are great over noodles.

5 pounds frozen cooked meatballs, thawed
1 (28 ounce) bottle ketchup
1 (18 ounce) jar apple jelly
1 (12 ounce) jar red currant jelly
¼ teaspoon hot sauce

Steps:

  • Fill a large pot with lightly salted water; bring to a boil. Cook meatballs, working in batches of necessary, in the boiling water until they begin floating on top and are heated through, about 3 minutes. Remove meatballs with a slotted spoon, drain in a strainer, and transfer to a large saucepan.
  • Combine ketchup, apple jelly, red currant jelly, and hot sauce in a separate large saucepan; cook and stir over low heat until jelly is dissolved and sauce is heated through, 5 to 10 minutes. Pour sauce over meatballs. Simmer, stirring occasionally, over medium heat until meatballs and sauce are thoroughly heated, 15 to 20 minutes.

You know that these will be a hit at your party, because they have the word "party" in the name. Millions of people in the 70s knew it wasn't a good time unless a chafing dish full of these meatballs was making an appearance. How many other dishes do you know that guarantee a good time?

1 medium onion
1 1/2 pounds ground beef
8 ounces ground pork
One 10.75-ounce can condensed cream of tomato soup
1/3 cup panko breadcrumbs
1 teaspoon mustard powder
1/2 teaspoon ground black pepper
1/2 teaspoon kosher salt
3 cloves garlic, finely minced
2 tablespoons unsalted butter
1 medium onion, chopped finely
2 tablespoon all-purpose flour
1 1/2 cups beef stock
1/2 cup grape jelly
1/4 cup finely ground graham crackers
1 1/2 tablespoons ketchup
1 teaspoon red wine vinegar
1/4 cup chopped fresh curly parsley

Steps:

  • For the meatballs: Preheat the oven to 425 degrees F. Line a sheet pan with aluminum foil, then place a wire rack over it.
  • Grate the onion into a large bowl using a box grater. Add the ground beef and pork, tomato soup, panko, mustard powder, pepper, salt and minced garlic and knead together with your hands until thoroughly mixed. Use a tablespoon to help you make small meatballs, placing them close together but not touching on the prepared sheet pan. Bake until well browned, 15 to 20 minutes.
  • For the sauce: Melt the butter a large saute pan over medium heat. Add the onion and cook until soft and translucent, 3 to 4 minutes. Stir in the flour until no raw bits are visible, then continue cooking for another minute. Whisk in the beef stock 1/2 cup at a time, allowing it to thicken between each addition, then whisk in the grape jelly until smooth. Cook until the sauce begins to bubble, then add the graham cracker crumbs, ketchup and vinegar. Reduce the heat to medium-low and continue cooking, stirring occasionally, until it thickens slightly, 3 to 5 minutes.
  • Add the meatballs to the saute pan and gently toss to coat. Cook for another 3 minutes, then transfer to a chafing dish. Sprinkle with chopped parsley and serve warm.
