MINCEMEAT

Mincemeat image

Mincemeat is a traditional English treat that is usually used as filling for mince pies during Christmas, but it tastes great mixed with vanilla ice cream, as well. This recipe uses butter instead of the traditional suet, which makes this mincemeat suitable for vegetarians. Store in the refrigerator for up to 6 weeks.

Categories     World Cuisine Recipes     European     UK and Ireland     English

Time 50m

Yield 24

Number Of Ingredients 15

1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 large green apple, peeled and finely chopped
1 ¼ cups sultana raisins
1 ⅛ cups white sugar
½ cup dried currants
½ cup raisins
½ cup butter
½ cup chopped almonds
1 ½ tablespoons grated orange zest
½ teaspoon ground cinnamon
1 cup brandy

Steps:

  • Combine cinnamon, cloves, ginger, nutmeg, and allspice in a bowl. Reserve 1 heaped teaspoon for the mincemeat. Store the rest in a small jar for a later use.
  • Inspect two 12-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until mincemeat is ready. Wash new, unused lids and rings in warm soapy water.
  • Combine apple, sultanas, sugar, currants, raisins, and butter in a saucepan. Cook over low heat and stir gently until butter has melted. Stir in chopped almonds, orange zest, 1 teaspoon of mixed spice, and cinnamon. Bring mixture to a simmer and cook, stirring occasionally, 5 to 10 minutes.
  • Remove from heat and set mincemeat aside to cool down for 30 minutes. Stir in brandy. Spoon into sterilized jars.

Categories     Desserts     Chocolate Dessert Recipes     Milk Chocolate

Time 1h15m

Yield 20

Number Of Ingredients 5

8 ounces chocolate confectioners' coating
20 red maraschino cherries with stems
3 tablespoons blanched slivered almonds
20 milk chocolate candy kisses, unwrapped
40 small red decorating candies (dragees)

Steps:

  • Line a baking sheet with parchment paper.
  • Chop the confectioners' coating into chunks, and place into a microwave-safe bowl. Heat the coating in the microwave oven on High for 30 seconds; then heat again 4 or 5 more times for 10 to 15 seconds each time until the coating is warm (not hot) and melted. Stir well until the chocolate coating is smooth and free of lumps. The coating should be about 95 degrees F (35 degrees C).
  • Dry the cherries well with paper towels. Holding each cherry by the stem, dip it into the chocolate coating to just reach the bottom of the stem. Carefully lay the cherry on its side, so the stem sticks out the side. This will be the tail. Before the coating sets up, stick the flat side of an unwrapped chocolate kiss opposite the tail, to make a pointy-nosed face. Pick out two nicely shaped slivers of almond, and insert them between the chocolate kiss and the dipped cherry to make little ears. Use a toothpick to make two small dots of melted coating on the face for eyes; stick two little red candies to the coating dots. Repeat with the rest of the cherries. Allow the coating to set until firm and cool, about 30 minutes.

Categories     Desserts

Time 40m

Number Of Ingredients 19

1/4 cup Butter
1 cup Water (or Unsweetened Apple Juice)
3 medium Granny Smith Apples (peeled, cored, and chopped)
1/2 cup Dark Raisins
1/2 cup Golden Raisins
1/2 cup Dried Currants
1/2 cup Dried Cranberries
1/2 cup Dried Dates (or Figs)
1/2 cup Dried Apricots
Zest of one lemon (you can use an orange instead)
2/3 cups Brown Sugar
1/3 cup Light or Dark Rum
1/3 cup Brandy
1 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/4 teaspoon Ground Cloves
1/8 teaspoon Ground Ginger
1/4 teaspoon Allspice
1/4 teaspoon Salt

Steps:

  • In a large pan, melt butter.
  • Add water, fruits, sugar, spices, and alcohol.
  • Bring to boil over medium-high heat, stirring often. Once it boils reduce the heat to low and cook for approximately 30 mins. Continue to stir often.
  • The mince is ready when the majority of the liquid has boiled out.
  • Let the mince cool completely and then transfer and store in an airtight container.
  • The mince should be kept in the refrigerator. The longer you store it the more the flavors will develop.
  • The mince will keep for a month if you take some steps. Check on it every week or so and add a tablespoon of rum or brandy and give it a good stir. If you don't take this step the mince will only last a week.

BEST TRADITIONAL MINCEMEAT

BEST Traditional Mincemeat image

Few people today know what REAL mincemeat should taste like, today's version paling in comparison to the mincemeat that has been a household tradition for centuries. Give this traditional version a try and even if you've always hated mincemeat this may just be the one to convert you!

Provided by Kimberly Killebrew

Categories     condiment     Dessert     Ingredient

Time 2h15m

Number Of Ingredients 23

1 pound (450 grams) finely chopped beef steak
Note: Traditionally made with beef or lamb and can also be made with wild game
1 1/4 cups (190 grams) raisins
1 1/4 cups (190 grams) currants
1/2 cup (80 grams) golden raisins
2 cups finely chopped tart apple
7 ounces (200 grams) shredded beef suet ((you can also ask your local butcher for fresh beef suet ground through a fine meat grinder))
2 cups (450 grams) packed dark brown sugar
2 tablespoons candied lemon peel
2 tablespoons candied orange peel
STRONGLY recommend using Homemade Candied Citrus Peel ((click link for recipe))
1 1/2 tablespoons (25 grams) finely chopped blanched almonds
1 lemon, its zest and juice
2 tablespoons apple cider vinegar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/4 teaspoon ground mace
1/4 teaspoon ground ginger
1/4 teaspoon ground coriander
2 tablespoons brandy
2 tablespoons dark rum

Steps:

  • Combine all ingredients except for the brandy and rum in a medium-sized pot and slowly bring to a simmer to prevent scorching. Reduce the heat to LOW and simmer uncovered for about 2 hours, stirring occasionally, more towards the end to prevent burning. (If the liquid reduces too soon and the mincemeat starts to stick/scorch on the bottom, add a little bit of apple juice or water.) Stir in the brandy and rum. (Note: If you prefer to have the alcohol cooked out, add them at the same time as the other ingredients.)
  • Spoon the hot mincemeat into sterilized jars (spooning it in the jar while hot will ensure the suet rises to the top to create a layer of fat). As the mixture cools the suet will harden, creating a seal to help preserve the mincemeat. *If you're including the beef be sure to refrigerate the mincemeat. If you're storing it for more than a couple of weeks follow the directions in the blog post for pressure canning the mincemeat for longer-term storage.See blog post for additional ways of storing your mincemeat.
  • Makes about 1 quart. Feel free to double, triple, etc, as needed.
  • Use this mincemeat to make Homemade Mince Pies! (click link for recipe)
  • Note: Mincemeat is traditionally stored for several months before using to allow time for the flavors to deepen, however this mincemeat is also delicious eaten within just a few days.

20 CHEAP AND CHEERFUL MINCE RECIPES THAT WILL SAVE YOU ...

From stayathomemum.com.au
  • Porcupine Mince Balls. If you love meatballs, you will love this recipe – and it is so easy. The meatballs contain uncooked rice, and when you bake them in the tomato sauce mixture, they ‘suck up the flavour’ and expand.
  • Cheesy Beef and Macaroni Bake. This is another ‘variation’ of spaghetti that doesn’t get boring. The key is those cherry tomatoes you put on top – they just explore with flavour!
  • Grilled Gooey Cheesy Rissoles. Is there better food in the entire world than cheese? I really don’t think so! Make sure you choose a really sharp tangy cheese to place in the middle of these rissoles!
  • Cheesy Beef Puffs. My boys adore these Cheesy Beef Puffs in their lunchbox, cold the next day at school! In fact, I prefer them cold as well! This is a great way to use up any leftover mince you may have from the night before!
  • Mince Scrolls. This is the ‘souped up’ version of the traditional scroll. The mince keeps its shape and turns a scroll into a meal. They freeze well too so make them in bulk and pop them in the lunch box the next morning!
  • Chicken and Vegetable Sausage Rolls. Personally, I think chicken mince makes the BEST sausage rolls – and this recipe hasn’t been one of the most popular on the website for years for nothing!
  • Chicken Pot Pie. Chicken Mince or finely diced chicken breast cooked in a delicious sauce with vegetables and a sheet of puff pastry on top – the perfect Winter Warmer!
  • Corn Chip Casserole. If traditional taco’s are getting a bit boring – this is a nifty variation. Serve over a tray of cooked potato wedges to make it into a meal.
  • Golden Bake. This is a fantastically frugal recipe – like Shepherds Pie but using beef mince (did you know that Shepherds Pie is made on Lamb Mince?).
  • Beef Tortilla Stack. There is no pasta in this recipe. Nope. Instead, we use pita bread or tortillas – and you can’t even taste the difference. Just delicious!
