COLUMBIA'S ORIGINAL "1905" SALAD



Columbia's Original

1905 is the year that the Columbia Restaurant was founded in the Ybor City section of Tampa, Florida. At this legendary restaurant, this wonderful salad is tossed at your table. Don't forget to have some warm Cuban bread and sweet cream butter to serve along with this delicious salad.

1/2 head iceberg lettuce, shredded
2 ripe tomatoes, cut into eighths
1/2 cup sliced swiss cheese, cut into julienne strips
1/2 cup sliced baked ham, cut into julienne strips (or turkey or shrimp)
1/4 cup green Spanish olives, pitted
2 teaspoons freshly grated romano cheese
1/8 cup white wine vinegar
1/2 cup extra-virgin Spanish olive oil
4 garlic cloves, minced
1 teaspoon Worcestershire sauce
salt & freshly ground black pepper, to taste
1 teaspoon dried oregano
2 teaspoons fresh lemon juice

Steps:

  • Toss together all salad ingredients in a large bowl, except Romano cheese.
  • Mix garlic, oregano, and Worcestershire sauce in a bowl. Beat until smooth with a wire whisk. Add olive oil, gradually beating to form an emulsion. Stir in vinegar and lemon juice and season with salt and pepper.
  • Add dressing to salad and toss well. Add Romano cheese and toss one more time.

1 coconut
3 white pink grapefruits
3 navel oranges
1 pineapple, peeled, cored, and cut into 1/2-inch chunks
1 pint kumquats, cut on a diagonal into 1/4-inch-thick slices
1/2 cup pomegranate seeds
1/2 cup unsweetened apple juice

Steps:

  • Preheat the oven to 400°F.
  • Pierce the softest eye of the coconut with a metal skewer or small screwdriver and drain any liquid into a small bowl to sample-you should have about 1/2 cup liquid. (If the liquid tastes sweet, the coconut is fresh; if it tastes oily, the coconut is rancid and should be discarded.)
  • Bake the coconut for 15 minutes then transfer to a folded towel on a work surface. Using the back of a knife or a cleaver, crack the shell open. Break the shell into large pieces and use a strong knife to carefully remove the flesh from the shell. Using a vegetable peeler, remove the brown skin then shave the coconut into thin strips-you should have about 4 cups shaved coconut. Reserve 2 cups for the ambrosia salad; wrap and freeze the remainder for another use. DO AHEAD: Coconut shavings can stored, in an airtight container, in the refrigerator up to 1 week or frozen up to 3 months.
  • Using a serrated knife, cut the peel off the grapefruits and oranges. Cut the fruit crosswise into 1/2-inch-thick rounds then cut the rounds into bite-size pieces. Transfer to a large bowl; add the pineapple, kumquats, pomegranate seeds, 2 cups coconut shavings, 1/2 cup coconut juice, and the apple juice, and toss gently to combine. Serve at room temperature or chilled. DO AHEAD: Florida Ambrosia Salad can be prepared ahead and stored, covered, in the refrigerator up to 8 hours.

1 teaspoon Dijon mustard
½ teaspoon molasses
Juice and zest of 3 fresh limes (about 5 tablespoons juice, 1½ teaspoons zest)
1 teaspoon white wine vinegar
2 cloves garlic, grated
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ cup plus 2 tablespoons olive oil
Salad:
4 cups baby romaine lettuce
3 cups baby spinach
3 ears corn, kernels removed
1 red bell pepper, cut into 1-by-½-inch pieces,stems, ribs and seeds discarded
3 scallions, trimmed and cut into 1-by-½-inch pieces, root ends discarded
½ cup sliced black olives
1 (14-ounce) can hearts of palm, drained and rinsed
1 (9-ounce) jar artichoke hearts (not marinated) or frozen artichokes
2 microwaved, baked, or boiled sweet potatoes, at room temperature, peeled and cut into 2-inch cubes
2 medium dill pickles, cut into ½-inch dice
3 avocados

Steps:

  • Prepare the dressing by combining the Dijon mustard, molasses, lime juice and zest, vinegar, garlic, salt, and pepper in a mixing bowl and whisk to blend thoroughly. While whisking, drizzle in the oil until the mixture is thoroughly blended and emulsified. Set aside. Combine the romaine lettuce, spinach, corn kernels, red pepper, scallions, olives, hearts of palm, artichokes, sweet potatoes, pickles into a large serving bowl. Cut the avocados into 2-inch cubes. Whisk the dressing once more to blend and pour it over the salad. Toss gently to coat and serve.
