Number Of Ingredients 8

3 envelopes unflavored gelatin
2 cups sugar
1/8 teaspoon salt
1 cup water (add some rose water to make up cup)
1 tablespoon lemons or 1 tablespoon orange juice
1 teaspoon lemons or 1 teaspoon orange rind, grated
food coloring
powdered sugar

Steps:

  • Mix gelatin, sugar and salt in a heavy pot.
  • Add water.
  • Bring to slow boil and simmer without stirring for 10 minutes.
  • Remove from heat and stir in juice and rind.
  • Add a few drops of food coloring.
  • Taste for flavor; may add more juice.
  • Pour into 8 inch square pan which has been rinsed in cold water but not dried.
  • Chill overnight.
  • Cut into squares and roll each in powdered sugar.

3 tablespoons unflavored gelatin
1/2 cup cold water
1/3 cup boiling water
2 cups sugar
4 tablespoons lemon extract or 4 tablespoons raspberry extract
1/4 cup pistachio nut, chopped
1 cup confectioners' sugar
food coloring (Use appropriate color to match flavor.)

Steps:

  • Soften gelatine in cold water.
  • Add sugar to boiling water.
  • Bring to boil.
  • Stir in softened gelatine.
  • Simmer, uncovered, 20 minutes.
  • Add flavoring and coloring.
  • Pour into ungreased, 8-inch square pan.
  • Add nuts.
  • Stir gently.
  • Chill.
  • When firm, invert onto cutting board.
  • Cut into 1 1/2 inch cubes.
  • Roll in confectioners' sugar.
  • Store in a jar at room temperature.

This is delicious and a big hit at potlucks and cook-outs. Very refreshing taste, smooth and light tasting. Prep time approximate and does not include chilling time. I buy my pecans already chopped.

1 cup flour
1/2 cup finely chopped pecans
1 tablespoon sugar
1/2 cup soft margarine
2 1/2 cups milk
1 cup powdered sugar
1 (8 ounce) package cream cheese
1 cup Cool Whip
2 (3 1/2 ounce) packages instant lemon pudding
Cool Whip, for top

Steps:

  • Mix flour, pecans, sugar and margarine and press into a 9x12x2 inch baking dish.
  • Bake 15 minutes at 350 degrees.
  • While crust cools, mix sugar, cream cheese and 1 cup of cool whip.
  • Spread over cooled crust.
  • Beat pudding as directed on package and spread over cream cheese mixture.
  • Spread Cool Whip over pudding mixture and sprinkle with some chopped pecans for garnish, if desired.
  • Refrigerate for at least 4 hours.
  • Cut into squares to serve.

Not as sickly sweet as the traditional candy, but still wonderfully lemony. Use a regular lemon and an orange if Meyer lemons aren't available.

3 (1/4 ounce) envelopes unflavored gelatin
1/2 cup cold water
2 cups sugar
1/8 teaspoon salt
1/2 cup hot water
2 large meyer lemons, juice and grated rind
yellow food coloring (optional)
confectioners' sugar

Steps:

  • Soften the gelatin in the cold water.
  • Combine the sugar, salt and hot water in a saucepan; heat to boiling, stirring constantly.
  • Stir in the softened gelatin; turn the heat down and simmer, without stirring, for 20 minutes.
  • Remove from the heat and stir in the grated rind and lemon juice, and a little yellow food coloring to tint the mixture, if desired.
  • Let stand 3 minutes.
  • Strain the mixture into a 8 x 4-inch loaf pan which has been rinsed with cold water.
  • Let stand without disturbing until slightly jellied (to prevent filming the sides of the pan); then refrigerate overnight. Loosen around the sides of the pan with a wet spatula.
  • Slip the spatula down one end and underneath the jellied mixture, then pull it out of the pan with your hands onto a surface liberally dusted with confectioner's sugar.
  • Cut into 1-inch squares.
  • Roll in confectioners' sugar to coat. Store in one layer in a tightly covered container at room temperature.
  • The candies will stay moist for about 2 weeks.

Number Of Ingredients 8

4 cups granulated sugar
1 1/4 cups cornstarch
1 teaspoon cream of tartar
4 1/4 cups water
1 tablespoon lemon juice
1 1/2 tablespoons rose water
1 cup confectioners' sugar
vegetable oil or shortening

Steps:

  • Grease all of the insides of a 9 inch baking pan,then line with wax paper and grease the wax paper.
  • In a saucepan, combine lemon juice, sugar and 1 1/2 cups water on medium heat.
  • Stir constantly until sugar dissolves.
  • Allow mixture to boil.
  • Reduce heat to low and allow to simmer, when the mixture reaches 240°F on a candy thermometer, take off the heat and set aside.
  • Mix in cream of tartar, 1 cup corn starch and remaining water into saucepan over medium heat.
  • Stir making sure all lumps are gone allow the mixture to begin boiling.
  • Stop stirring when the mixture has a glue like consistency.
  • Mix in the lemon juice, water and sugar mixture.
  • Stir constantly for around 5 minutes.
  • Reduce heat to low. Allow to simmer for 1 hour, stirring frequently.
  • Do Not let it burn or stick to the pan.
  • When the mixture has become a golden color, mix in rosewater.
  • Pour mixture into pan lined with wax paper.
  • Make sure that it is spread out evenly in the pan and allow to cool overnight.
  • When it has cooled overnight, sift together confectioners sugar and remaining cornstarch.
  • Turn over baking pan onto clean counter or table and with a oiled knife cut into one inch pieces.
  • Coat with confectioners sugar mixture.
  • You can serve it immediately or store it in an airtight container in layers separated with wax or parchment paper.
