Steps:
- Place lemons and vodka in the jar; seal. Place in a dark, cool place.
- Test for flavor after one week. Continue to taste until vodka has taken on the depth of flavor you prefer; remove and discard lemons, seal jar and enjoy!
- Fill a tall glass with desired amount of crushed ice. Add lemon-infused vodka and fill with tonic water.

MEYER LEMON MARTINI
Meyer lemons, a cross between a lemon and an orange, have a sweeter, less acidic flavor than the more common lemon. If you have to use a regular lemon, add a little extra sugar to taste. For the ultimate martini, use good quality vodka and orange liqueur. I should have named this the 'come to mama' martini!

- Combine 2 teaspoons sugar and warm water in a cocktail shaker; stir to dissolve sugar. Pour Meyer lemon juice, lemon peels, vodka, and orange liqueur into the shaker; add ice. Cover and shake vigorously.
- Remove a lemon peel from the shaker and wipe the rim of a martini glass with the peel. Dip the rim of the glass in 1 teaspoon sugar, or as needed. Strain martini into prepared glass.

HOMEMADE LIMONCELLO USING MEYER LEMONS
Homemade limoncello made with Meyer lemons is truly the best recipe for making limoncello liqueur. This sweet, yet tart, alcoholic beverage is an excellent mixer to accompany any, and many, cocktails.

- Remove the stem and blossom end of the lemons. Quarter the lemons, removing as many of the seeds as possible.
- Place lemon into half-gallon mason jar, making sure the alcohol covers the lemons. Added additional Everclear if needed.
- Add a lid to the jar and allow the mixture to infuse at room temperature until yellowish in color, about 14 days or longer. The longer the mixture sits, the better the flavor.
- Bring water to boil in a saucepan. Add sugar and stir until the sugar dissolves. Remove syrup from heat and allow the simple syrup to cool to room temperature.
- Pour infused alcohol into the syrup through a fine-mesh strainer, discard lemons, stir the mixture well.
- Using a jar funnel pour limoncello into thick, freezer-safe glass bottles. Store in the freezer for at least 2 weeks before serving.

- Peel all the lemons into strips with as little of the white part as possible and put them in sealable infusion jar. They should go halfway to the top of the limoncello jar. A few more or less is not terribly important.
- Add the cup of sugar first and then the liquor to within 1 inch of the top. Latch the lid of the jar tightly and shake the mixture vigorously.
- At the end of 2 weeks, strain the mixture into another container (a liquor bottle is a good choice) and place in the freezer.

- Be sure to give the citron a good rinse, wiping away any grit between the fingers (these guys can be quite dirty). Cut the fingers from the core of the hand and carve away any excess white pith. No need to get all crazy cutting away the pith - it's not really bitter like regular lemon pith, so it's fine if you have some remaining.
