For tasty make-ahead dip try this recipe. It goes fast at office parties or any gathering. Mildly spicy, it's easy to alter if you want it to have more of a kick. Make sure your corn chips are large enough to scoop up a hearty helping.

2 cups shredded cheddar cheese
1 can (11 ounces) yellow and white whole kernel corn, drained
1 can (11 ounces) Mexicorn, drained
4 ounces pepper Jack cheese, shredded
1/4 cup chopped green onions
1 can (4 ounces) chopped green chilies
1 jalapeno pepper, seeded and chopped
3/4 cup mayonnaise
3/4 cup sour cream
1/8 teaspoon sugar
Additional chopped green onions, optional
Tortilla or corn chips

Steps:

  • In a large bowl, combine the first seven ingredients. In a small bowl, combine the mayonnaise, sour cream and sugar; stir into corn mixture. Cover and refrigerate overnight. Sprinkle with additional green onions. Serve with chips.

1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)

  • Combine the corn, tomatoes, mayonnaise, and Cheddar cheese in a bowl until well blended. Cover and refrigerate until chilled.

This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.

2 pounds lean ground beef
1 (16 ounce) jar taco sauce
1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1 (1 ounce) package taco seasoning mix
1 (16 ounce) package shredded Cheddar cheese
1 cup shredded lettuce
1 tomato, cubed
2 green onions, sliced
1 (2 ounce) can sliced black olives, drained

Steps:

  • Crumble ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, mix in the taco sauce and set aside.
  • In a large bowl, mix the sour cream, cream cheese and taco seasoning mix. Spread the mixture into a medium serving dish.
  • Layer the sour cream mixture with beef mixture, Cheddar cheese and lettuce. Top with tomato, green onions and black olives.

This is so addicting! I got it from a book called Half Baked Gourmet - Party Food. I will have a party just to make this dip. Even my non-cooking sister asked for the recipe and makes it with her friends all the time. The jalapeno sauce is usually with the Tabasco at the grocery store.

1 (11 ounce) can mexicorn, drained
1 cup mayonnaise
1 1/2 cups shredded Mexican blend cheese (Cheddar and Monterey Jack)
1/4 cup chopped green onion
2 tablespoons finely chopped fresh jalapeno peppers
1 teaspoon bottled jalapeno sauce
tortilla chips, for serving

Steps:

  • In a medium bowl, combine Mexicorn and mayo.
  • Stir to combine.
  • Fold in remaining ingredients (except chips).
  • Stir until well mixed.
  • Cover bowl and refrigerate until chilled. (Can be made ahead - cover and refrigerate up to 2 days.)
  • Serve with chips.

12 ounces Mexican blend cheese, shredded 3 cups (such as Sargento brand 4-cheese Mexican blend)
1 cup sour cream
1 cup mayonnaise
1 (4 ounce) can diced green chilies, drained
2 ounces diced jalapenos, drained (half of a 4 oz can, add more if you'd like)
2 -3 green onions, chopped, to taste
1 dash Tabasco sauce
salt and pepper, to taste
garlic powder, to taste

Steps:

  • Mix all ingredients together in a large bowl and serve with tortilla or corn chips.
  • Can be chilled 24 hours before serving.

1 (11 ounce) can Mexican-style corn (Mexicorn)
1 cup mayonnaise (Hellmann's or Best Foods preferred)
1 cup shredded monterey jack cheese
1/2 cup shredded parmesan cheese (not from a can)
4 ounces diced pimentos
2 -4 ounces diced jalapenos (from the pickle area-NOT from the Mexican food area of the grocery store)

Steps:

  • Preheat oven to 350F and lightly spritz a baking dish with cooking spray.
  • Combine all ingredients and place in prepared dish.
  • Cook, uncovered, for about 45 minutes or until golden brown on top and bubbly.
  • Serve with Scoops (Fritos dipping chips).
  • I almost always make a double batch because it's so popular. (I use less Jalapenos...maybe 4 oz for a double batch as I don't care for dishes that are very hot. Cook about 55-60 minutes if doubled).
