EASY MEXICAN PIZZA
These Mexican Pizzas are even BETTER (and healthier) than the ones you love from Taco Bell! They're made with ground beef, refried beans, and cheese inside corn tortillas.

Steps:
- Cook ground beef, crumbling it into small pieces with a wooden spoon as it cooks. Remove any grease.
- Add taco seasoning and water and stir to combine.
- Heat oil in a small skillet over medium-high heat. Once hot, cook corn tortillas one at a time until golden and slightly crisp on both sides, flipping half way through. Remove to a paper towel.

- Unroll crescent roll dough and place in an ungreased 15x10x1-in. baking pan. Flatten dough to fit the pan, sealing seams and perforations. Bake at 375° for 8-10 minutes or until light golden brown; cool on a wire rack. , In a small bowl, combine cream cheese and sour cream until blended; spread over crust. Chill 30 minutes. , Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning. Add water according to package directions and simmer for 5 minutes, stirring occasionally. Spread over cream cheese layer. Top with olives, tomato, cheeses and lettuce. Cut into serving-size pieces. Serve immediately or refrigerate.

MEXICAN PIZZA
Steps:
- Gather the ingredients.
- Preheat the oven to 400 F. Arrange the racks in the oven so they evenly divide the oven into thirds. You'll use both racks, rotating and moving the pizzas around as they cook.
- In a large skillet, cook the pork with onion and garlic in olive oil over medium heat until the meat is browned, stirring to break up with a fork. Drain if necessary. If you are using chorizo, cook the onions until they are tender and then add the chorizo, cooking for a few minutes until the fat is rendered and the meat is well browned.
- Add the taco sauce, tomato sauce, chili powder, cayenne pepper, and pepper to the onion mixture. Stir well, and simmer on low heat for 5 minutes to blend flavors.
- Stir in drained green chiles.
- Spray 2 cookie sheets with nonstick cooking spray and then spread the pizza crust dough onto the sheets.
- Bake them for 5 to 8 minutes or until they are just set.
- Spread the sauce evenly over both of the pizza crusts and top evenly with the shredded cheese.
- Bake at 400 F for 20 to 25 minutes until cheese is melted, bubbly, and begins to brown. Halfway through the cooking time, swap the cookie sheets so they each have time on the upper and lower baking racks. This will help ensure an even bake on both pizzas. Make sure that the crusts are browned on the bottom and the pizzas have cooked evenly.
- Slice, serve, and enjoy.

- In a skillet over medium heat, brown chorizo. Add salsa and simmer for 5 minutes. Lay pizza crusts on pizza pan or baking sheet covered in foil. Spread refried black beans over top of pizza crusts. Evenly spread chorizo mixture over beans. Cover in cheese and bake for 10 to 12 minutes. Remove from oven and top with lettuce, followed by tomatoes, and then tortilla chips. Place ranch dressing in a resealable plastic bag and snip corner off of bag; pipe over pizzas. Serve hot.
MEXICAN PIZZA I
Mexican Pizzas are delicious corn tortillas topped with beans, beef and all the delicious taco toppings you can imagine! They can be cut into wedges and served as an appetizer or left whole and served as a main dish.

- Heat the refried beans.
- In a large skillet, brown the ground beef. Stir in the seasoning packet.
- Preheat oven to 350 degrees F (175 degrees C).
- Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
- Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
- Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

JIMMY'S MEXICAN PIZZA
Jimmy's specially seasoned ground beef, refried beans, salsa and cheese layered in a deep dish style. A tasty and easy Mexican-style pizza with a flour tortilla crust I whipped up because I had the stuff to make it!!

- Preheat the oven to 350 degrees F (175 degrees C). Coat 2 pie plates with non-stick cooking spray.
- Place beef, onion and garlic in a skillet over medium heat. Cook until beef is evenly browned. Drain off grease. Season the meat with chili powder, cumin, paprika, salt and pepper.
- Lay one tortilla in each pie plate, and cover with a layer of refried beans. Spread half of the seasoned ground beef over each one, and then cover with a second tortilla. Bake for 10 minutes in the preheated oven.
- Remove the plates from the oven, and let cool slightly. Spread half of the salsa over each top tortilla. Cover each pizza with half of the Cheddar and Monterey Jack cheeses. Place half of the tomatoes, half of the green onions, and half of the jalapeno slices onto each one.
- Return the pizzas to the oven, and bake for 5 to 10 more minutes, until the cheese is melted. Remove from the oven, and let cool slightly before slicing each one into 4 pieces.

MEXICAN PIZZA
I found this recipe online at www.mexicanfoodrecipes.org and posting for ZWT. The recipe says to use seasoned ground beef but doesn't give directions/ingredients for the seasoning. I suggest using Recipe #369923 or using a package of taco seasoning. Please feel free to serve this pizza with salsa, guacamole, lettuce or any topping of your choice. This is a recipe for two servings so feel free to double, triple etc. the amounts. This is also a great recipe to use up left-over taco meat.

- Heat the oil in a skillet and fry the tortillas til crisp, one at a time. Drain them on paper towels then spread the refried beans over each tortilla. Top two tortillas with meat and put the other two on top, bean side down. Spread the taco sauce on top of the filled tortillas and sprinkle the cheese over the top.
- Broil on high,the stuffed tortillas until the cheese melts, but watch carefully not to burn them. Seed and dice the tomatoes. Sprinkle these and the chopped green onions on top of the tortillas and serve with sour cream.
