MEXICAN FIESTA FISH

Steps:
- Lay the fish fillets in a single layer in a greased 8"x12" baking dish.
- Pour the salsa over the top, and then sprinkle evenly with the shredded cheese.
- Top everything with the crushed corn chips.
- Bake, uncovered, at 400°F for 15 minutes, or until fish is opaque and flakes with a fork.
- Serve with choice of garnish: sliced avocado, green chiles, olives and sour cream.

Steps:
- Sprinkle the lime zest over the pieces of fish, then season. Dip the fish into the egg whites, then coat with breadcrumbs and place on a baking sheet. Spray the fish with 2 squirts oil, then grill for 2 mins. Flip them over, spray with more oil, then grill for a further 2 mins until the fish is cooked and the breadcrumbs are golden and crispy.
- Squeeze the lime juice into the tzatziki and stir. Warm the tortillas according to pack instructions. To assemble the wraps, place a handful of cabbage or lettuce onto the top two-thirds of a tortilla, then rest 3 fish fingers on top with a good dollop of the lime tzatziki. Bring the bottom third of the tortilla up and fold the sides over to envelop the filling.

- Fish ... Add the salsa, olives, and white wine to the bottom of a 9x9 square or similar size baking dish (use one that best accommodates the 4 fillets) and mix well. Top with the 4 fillets (room temp - not ice cold) and brush with olive oil, then squeeze the lime juice over the fish and the salsa, and season with salt and pepper. Add 1-2 lime slices on each fillet and cover with foil.
- Bake ... Preheat the oven to 400 degrees and bake on the middle shelf until tender and flaky. All fish will take different baking times; thin fish, such as tilapia, flounder, snapper will take about 15-20 minutes; whereas grouper and thicker cuts will take longer - Anywhere from 20-30 minutes. You just need to check on them.
- Serve ... I like to serve this over plain white recipe, but a yellow rice would be a nice alternative or even polenta. Simply spoon some of the sauce over the fish and garnish with fresh cilantro. ENJOY!

- In a large skillet heat olive oil over medium high heat. Add peppers, onions and sauté until soft, about 5 minutes. Add garlic and sauté 30 seconds more.
- Reduce heat to medium low, add salsa, tomatoes, chili powder, cumin, coriander, and salt. Simmer, uncovered, for 5 minutes or until slightly thickened. Add beans and corn, stir, and bring back to a simmer.
- Add fish, pushing down slightly so it sits mostly in the sauce. Cover and simmer for about 10-15 minutes. Cooking time will depend on thickness of fish. For more reliability use an instant read thermometer to make sure it's at 145ºF in the thickness part of the filet. Also look for color inside changing from translucent to opaque. TIP: If the sauce needs to thicken slightly, remove fish, cover loosely with foil, and simmer sauce UNCOVERED 5 minutes or until it's reduced and thickened.
- Squeeze lime juice over fish. Serve over rice. Top fish with tortilla chips, cheese, cilantro, sour cream, and additional lime wedges.
