1 lb uncooked chorizo sausage or 1 lb hot Italian sausage, casings removed
2 garlic cloves, minced
3 (14 ounce) cans low sodium chicken broth or 3 (14 ounce) cans vegetable broth
2 cups bottled salsa
1 -2 chipotle chile in adobo, drained, finely chopped
1 teaspoon dried oregano
1 teaspoon ground cumin
10 ounces dried vermicelli or 10 ounces angel hair pasta
1 zucchini, chopped
2/3 cup shredded mozzarella cheese or 2/3 cup asadero cheese
1/4 cup cilantro or 1/4 cup flat leaf parsley

Steps:

  • Crumble chorizo into a 4-quart Dutch oven over medium heat; add garlic. Cook, stirring, until chorizo is browned, about 5 minutes; drain of fat.
  • Stir the broth, salsa, chipotle, oregano and cumin into Dutch oven. Raise heat to medium-high; heat to a boil. Lower heat to a simmer. Cover; cook 15 minutes. Stir in vermicelli and zucchini; cook, uncovered, until vermicelli is tender but firm, 5-10 minutes. Stir in 1/3 cup of the mozzarella and cilantro. Transfer to a warm serving dish; sprinkle with the remaining 1/3 cup cheese; garnish with additional cilantro.

This is a really tasty noodle bowl that is quick and easy.

1 lb chorizo
4 clove garlic minced
1 Tbsp mccormicks grill mates chipotle and roasted garlic seasoning
32 oz chicken broth
2 c bottled salsa your choice
10 oz angel hair pasta
1 c mozzarella or asadero cheese
1/2 c fresh cilantro chopped

Steps:

  • 1. If there is any casings on the Chorizo remove it. Crumble the Chorizo in a large dutch oven. Add the garlic and seasoning and cook until meat is no longer pink. Add the chicken stock and salsa. Simmer 10 minutes.
  • 2. Add the pasta and cook another 10 to 15 minutes until pasta is done.
  • 3. Serve sprinkled with Mozzarella cheese and cilantro

We like to get burrito bowls from Chipotle, but aren't thrilled with paying for it several times a week. This isn't anything I'd claim as a "clone", but is "inspired" by Chipotle/QDoba's burrito bowls. It's tasty, easy and filling. As a bonus, it's pretty good without any meat, making it a really viable option to serve a mixed group of vegetarian/carnivores for a party.

1 tablespoon unsalted butter
1 1/3 cups basmati rice
2 cups water
2 limes
1 onion
2 garlic cloves
1 (10 ounce) can diced tomatoes with green chilies
1 (14 ounce) can black beans
1/4 cup white wine
2 cups pork or 2 cups steak
fresh cilantro
mexican cheese
salsa
sour cream
tortilla chips

Steps:

  • In a saucepan, combine the water, rice and juice from the 2 limes.
  • Bring rice mixture to a boil.
  • Reduce heat and simmer covered until all of the liquid is absorbed.
  • While the rice is cooking, chop the onion and the garlic.
  • In another saucepan, melt the butter.
  • Saute the onions and garlic until the onions are translucent.
  • Add the canned tomatoes, white wine and beans.
  • Simmer until most of the moisture boils off.
  • If including meat, dice up some grilled chicken or pork or steak.
  • To serve start with rice in bowl.
  • Top with bean/tomato mixture.
  • Top with meat if using and cheese, chopped cilantro, salsa, sour cream, etc.
  • Eat with chips.
