Buttery nut-filled cookies, coated with a layer of powdered sugar, these classic cookies are everyone's favorite holiday treat!

1 cup butter (softened)
1/2 cup powdered sugar (plus more for rolling)
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon kosher salt
3/4 cup finely chopped pecans or walnuts

Steps:

  • Preheat oven to 400 degrees. Cream together the butter, sugar and vanilla. Slowly add the flour and salt and mix just until combined. Stir in the nuts.
  • Scoop into 1-inch balls and round them smooth between your hands. Bake 10-12 minutes, until cookies are set but not browned.
  • Remove from the oven and allow the cookies to cool on the tray for a minute or two and then roll each warm cookie in powdered sugar and set them a cooling rack.
  • Once the cookies have fully cooled, roll them once or twice more in powdered sugar. Store in an airtight container. Enjoy!

Steps:

  • In a medium bowl, cream the butter and sugar. Stir in vanilla and water. Add the flour and almonds, mix until blended. Cover and chill for 3 hours.
  • Preheat oven to 325 degrees.

This recipe was brought to The Times in a 1990 article about traditional Christmas cookies, but we think these butter-rich confections are delicious any time of year. Sometimes called Mexican wedding cakes (or polvorones or Russian tea cakes or snowballs), their provenance is often debated, but this much is true: they are dead-simple to make and addictive to eat. This version is done completely in a food processor, so you can clean-up in minutes, and get to the important business at hand: eating cookies and licking your fingers.

1/2 cup pecan halves
2 1/2 cups confectioners' sugar
pinch of salt
1 cup unsalted butter
1/2 teaspoon vanilla extract
1 3/4 cups all-purpose flour

Steps:

  • Put pecans, 1 cup of the sugar and salt in food processor and blend until nuts are ground fine. Cut the butter into tablespoon-size pieces and add it to nut mixture with processor running. Process until smooth. Add vanilla extract. Add flour and continue blending, using pulse mechanism of processor.
  • Scrape dough into a bowl. Cover tightly and refrigerate one hour. 3. Preheat oven to 350 degrees.
  • Scoop dough with tablespoon and form 1-inch balls by rolling dough between palms (lightly flour hands, if necessary). Place balls 1 1/2 inches apart on ungreased cookie sheets.
  • Bake 15 minutes or until the cookies barely begin to brown. Cool for 2 minutes. Use small spatula to lift cookies from sheets. Roll the cookies in the remaining sugar.

  • Cream together butter and powdered sugar until light and fluffy; stir in vanilla.

1/2 cup plus more for coating baked cookies confectioner's sugar
1 cup at room temperature butter
1 cup chopped into very small pieces pecans

Steps:

  • Preheat the oven to 275 °F.
  • Line cookies sheets with parchment paper. Using an electric mixer at low speed, cream the butter and confectioner's sugar at low speed until smooth. Beat in the vanilla. At low speed gradually add the flour. Mix in the pecans with a spatula. With floured hands, take out about 1 tablespoon of dough and shape into a crescent. Continue to dust hands with flour as you make more cookies. Place onto prepared cookie sheets. Bake for 40 minutes. Roll in additional confectioner's sugar while still warm. Cool completed, on wire racks. Makes about 2 1/2 dozen cookies.

2 cups very soft butter
3 ½ cups chopped pecans
¼ cup confectioners' sugar
1 cup confectioners' sugar for rolling

  • Preheat oven to 375 degrees F (190 degrees C).

1 cup (226g) unsalted butter, (softened slightly but still firm, diced into 5 pieces each*)
1 3/4 cups (210g) powdered sugar, (divided)
1/4 tsp salt
2 tsp vanilla extract
1 3/4 cups (249g) all-purpose flour**
1 cup (110g) pecans, (chopped into small bits)

Steps:

  • Preheat oven to 350 degrees. Line two baking sheets with silicone baking mats or parchment paper.
  • In the bowl of an electric stand mixer fitted with the paddle attachment cream together butter, 1/2 cup (60g) powdered sugar and salt until well combined.
  • Mix in vanilla extract.
  • Blend in flour. It will seem dry and sandy at first but keep mixing and it will come together.
  • Mix in pecans.
  • Scoop dough out 1 even tablespoon at a time and shape into balls. Transfer to baking sheet (keep remaining dough balls chilled until ready to bake unless you have a double oven).
  • Bake in preheated oven until nearly set, about 13 - 14 minutes.
  • Let cool on baking sheet until cool enough to handle, about 5 - 8 minutes.
  • Pour remaining 1 1/4 cups (150g) powdered sugar into a small mixing bowl, roll warm cookies one at a time through sugar to coat with a light layer (this layer will seem to melt and get sticky).
  • Transfer to cooling rack and let cool completely then roll in powdered sugar once more to cover. Store in an airtight container.

  • Preheat oven to 350 degrees. Beat butter and powdered sugar in mixer until light and fluffy, about 10-15 minutes. Add vanilla, salt and pecans. Remove from mixer and stir in pastry flour by hand being careful not to over mix. Form into football shapes about the size of small walnuts and place on a buttered cookie sheet. Bake 10-12 minutes or until just beginning to get the slightest bit colored on the bottom. Remove upon the first sign of color and set on a rack to cool. When cool enough to touch place in a bowl with powdered sugar on top and bottom and toss gently. Occasionally toss with sugar while cooling, trying to get as much sugar as possible to stick.
