ROASTED VEGETABLES FOR MEXICAN NITE
As a vegetarian I always look for new ways to turn the same old dish into something new and tasty. Since I love Mexican food I add these veggies to my burritos, tacos, and tostados. On a recent trip to Washington DC my sister took me to a place that does Mexican food with Californian style. This following recipe is an inspiration from our lunch (and dinner) that day. The vegetables are only limited by your palate.

MEXICAN CAULIFLOWER RICE
Mexican cauliflower rice is easy to make using pre-riced cauliflower, Rotel tomatoes, tomato paste, garlic, onion, and flavorful spices.

Steps:
- Heat oil over medium in a large skillet. Add yellow onion and minced garlic; saute for 7-8 minutes or until the onion begins to soften and become translucent.
- Mix in the tomato paste, cumin, and chili powder - the ingredients will form a thick paste-like consistency while mixing, but will combine and loosen up as they heat.
- Add in the riced cauliflower and tomatoes. (The canned tomatoes do not need to be drained. Add some of the juice right along with the tomatoes. I used about 1⁄2 a can and about 1⁄2 of the juice.)
- Stir and saute the cauliflower mixture over medium heat for approximately 5 minutes longer. At this point, the cauliflower should be tender, but still have a bit of crisp. The rice will have absorbed the colors and flavors of the tomato paste and spices.
- Remove from heat. Squeeze a lime over the cauliflower rice and garnish with chopped cilantro and jalapeno.

- This simple little salad can be quite extraordinary, but you’ve got to season it with that Mexican spirit by being brave with the lime juice, salt and chilli, until it’s singing in your mouth.
- It does a great job of waking up the other things it’s served with – a few spoonfuls of this next to a grilled chicken breast or pork chop would be an absolute celebration.Veg-wise, the onion, coriander and white cabbage are non-negotiable, as they form the base of this salad, but feel free to have a play with the other ingredients and use things like fennel or asparagus.
- Basically whatever’s in season and available should be a nice addition. The easiest and quickest way to make this is to use a food processor with a slicer attachment or a mandolin.
- If you don’t have either of those, use a speed peeler, or simply grate everything finely.Shred your white and red cabbage into two separate piles.

- First, heat 3 tablespoons of oil in a deep skillet set over medium-high heat. Add the rice and stir constantly until the rice begins to turn golden brown. The toastier your rice, the tastier it will be (information gleaned from my friend, via her grandma of course).
- Next, add the chicken stock. The mixture will bubble up, and should be followed immediately by the tomato paste or tomato sauce, onion powder, garlic powder, cumin, chili powder, black pepper, and salt.
- Bring to a boil, stirring the tomato paste to dissolve it if using, and cover with a tight-fitting lid. Immediately turn the heat down to low and set a timer for 20 minutes.
- During or when the rice is done cooking, you may want to check moisture levels. If you smell a hint of a burnt scent, your heat is too high! In this scenario, if the rice is cooked, remove from the heat. If it’s not cooked, lower the heat, and add water ½ cup at a time to continue the cooking process. If it’s too wet, leave the lid slightly ajar or off the pan entirely.
